STIR-FRIED BABY TURNIPS WITH SPRING ONIONS, GREEN GARLIC AND TOFU

Stir-Fried Baby Turnips With Spring Onions, Green Garlic and Tofu image

The fresh ginger I'm finding at springtime farmers' markets is new and juicy, like the spring garlic and onions. I'm sure this is going to be just one of many springtime stir-fries, but right now it's a favorite. It's inspired by an irresistible bunch of baby turnips I bought at a Sunday farmers' market. The turnips were no bigger than a small round radish, but their greens were lush - I had about 6 cups of leaves after I'd stripped them from the stems. Sweet spring onions and green garlic contrast beautifully with the bitter flavor of the turnip greens.

Time 20m

Yield Serves 3 (4 if there are other dishes)

Number Of Ingredients 12

7 ounces firm tofu (1/2 of a14-ounce box), drained and cut in dominoes (about 1/4-inch thick by 2 inches long)
1 bunch baby turnips, with greens (about 1 pound total)
1 to 2 tablespoons soy sauce (to taste)
1 tablespoon Chinese cooking sherry (Shaoxing rice wine) or dry sherry
1/4 cup chicken stock, vegetable stock or water
1 teaspoon honey or agave nectar
2 tablespoons peanut, canola, rice bran, sunflower or grape seed oil
Salt and freshly ground pepper to taste
1 bulb green garlic, papery shells removed, minced
1 tablespoon minced ginger
1 bunch spring onions or 2 to 3 bunches scallions, sliced, white and light green parts only, sliced (about 1 1/4 cups)
1/2 cup coarsely chopped cilantro

Steps:

  • Drain and dry tofu slices on paper towels. In a small bowl or measuring cup combine soy sauce, rice wine or sherry, stock or water, and honey or agave nectar. Have all ingredients within arm's length of your wok.
  • Cut away greens from baby turnips. Scrub turnips and if very small, cut in half; if larger than a Ping-Pong ball, quarter. Stem greens, wash leaves in 2 changes of water and chop coarsely. Set aside near your wok.
  • Heat a 14-inch flat-bottomed wok over high heat until a drop of water evaporates within a second or two when added to the pan. Swirl in 1 tablespoon of the oil by adding it to the sides of the pan and swirling the pan, then add tofu and stir-fry until lightly colored, 1 to 2 minutes. Remove to a plate.
  • Swirl in remaining oil, add garlic and ginger and stir-fry for no more than 10 seconds. Add onions and stir-fry for 1 minute. Add turnips and stir-fry for another minute or 2, then add salt and pepper, toss together and add soy sauce mixture. Add greens and stir-fry for 1 to 2 minutes, until vegetables are crisp-tender.
  • Return tofu to the wok along with the cilantro. Stir-fry for 1 minute and remove from heat. Serve with hot grains or noodles.

Sesame & spring onion stir-fried udon with crispy tofu image

Do something different for dinner, with our vegan noodle, tofu, green bean and spring onion stir-fry. It's quick and healthy, plus it's budget-friendly too

Provided by Anna Glover

Categories     Dinner

Time 20m

Number Of Ingredients 12

400g block firm tofu
1 tbsp cornflour
½ -1 tsp chilli flakes, to taste
¼-½ tsp Szechuan peppercorns, ground, to taste
1 tbsp vegetable oil
bunch of spring onions, trimmed and cut into lengths
200g green beans, trimmed and cut into lengths
400g ready-to-use thick udon noodles
½ tbsp sesame oil
2 tsp sesame seeds, plus a pinch to serve
1 tbsp low-salt soy sauce, plus extra to serve
1 tbsp rice vinegar

Steps:

  • Drain and pat the tofu dry with kitchen paper. Cut into cubes, wrap in more kitchen paper, and place a heavy board over the top. Leave to drain for 15 mins.
  • Mix the cornflour, chilli flakes and ground peppercorns together in a bowl with a pinch of salt, then add the drained tofu. Toss well to coat.
  • Heat half the vegetable oil in a large non-stick frying pan over a high heat, and fry the tofu pieces for 5-6 mins until golden all over. Scoop out of the pan, and leave to drain on kitchen paper.
  • Add the remaining oil to the pan and stir-fry the spring onions and beans for 3-4 mins until tender and lightly golden. Pour a kettle of boiling water over the noodles in a sieve to loosen. Drain well, then tip into the pan. Fry for a few minutes until piping hot. Add the sesame oil and sesame seeds, and sizzle for a few seconds. Splash in the soy sauce, rice vinegar, then add the tofu. Toss well, then serve in bowls with a pinch of sesame seeds on top and more soy sauce on the side.

STIR-FRIED ASIAN GREENS WITH CHILES AND GARLIC

Stir-Fried Asian Greens with Chiles and Garlic image

Provided by James Oseland

Categories     Garlic     Leafy Green     Side     Stir-Fry     Vegetarian     Dinner     Lunch     Hot Pepper     Bok Choy     Sugar Conscious     Vegan     Pescatarian     Dairy Free     Wheat/Gluten-Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes 4 servings

Number Of Ingredients 5

1 medium-size bunch (about 13 ounces) tender Asian greens, such as bok choi, baby bok choi, baby Shanghai choi, choi sum, baby kai lan, or water spinach
3 tablespoons peanut oil
4 cloves garlic, peeled, bruised until juicy with a flat side of knife, and coarsely chopped into 3 or 4 chunks
1/4 teaspoon salt
1 to 2 fresh red Holland chiles or other hot fresh red long chiles, such as Fresno or cayenne, stemmed and sliced on the diagonal into thin pieces (optional, but the chiles add appealing color and gentle heat; see Cook's Note, below)

Steps:

  • 1. Carefully inspect the greens, discarding or trimming off any spoiled stems or leaves. Trim the bottom ends off and discard. Wash the greens in several changes of the coldest possible water; tepid water might cause them to wilt, and you want them to stay as alert and perky as possible before being cooked. (Note: Because bok choi and baby bok choi tend to have pockets full of sand in the nooks where the leaves meet the center stem, be certain to pull the leaves back slightly away from the stem when you're cleaning them. There are few things worse than a mouthful of sand when you want a mouthful of greens.)
  • 2. Cut the cleaned greens into pieces 2-1/2 to 3 inches long. If any of the stems are particularly wide - say, more than 1 inch - or are tough or sinewy-looking, cut them in half lengthwise. If you're using baby bok choi or baby Shanghai choi, you can either leave the heads whole or cut them in half lengthwise - it's up to you. Spin the greens dry in a salad dryer or set them aside to air-dry on a kitchen towel or paper towels; they needn't be bone dry - a little dampness won't matter.
  • 3. In a wok, 12-inch skillet, Dutch oven, or soup pot (any pot large and wide enough to comfortably hold the greens will do), heat the oil over medium-high heat. When it's hot but not smoking - it should appear shimmery - add the garlic, the salt, and, if using, the chiles. Sauté, stirring until the garlic just begins to lose its rawness, about 1 minute. (Try not to let the garlic turn golden or golden brown, which would give this dish an inappropriate roasted taste.)
  • 4. Add the greens. Raise the heat slightly and immediately begin to vigorously stir-fry the greens around the pot. Continue to vigorously stir-fry the greens until they just begin to go limp but the leaves remain a spring-green color and the stems are still crunchy-crisp, 3 to 4 minutes, depending on the type of greens. Taste for salt, adding only a pinch more if necessary (a little salt goes a long way with greens).
  • 5. Transfer the cooked greens to a large serving platter and serve promptly. Be careful not to pile the greens in a small bowl; since the greens will continue to cook for a minute or two after they're removed from the heat, a serving bowl that crowds them may cause them to overcook and become mushy.

TOFU & GREEN ONION STIR-FRY

Tofu & Green Onion Stir-fry image

Lovely way to serve tofu. I like to use both the garlic and the peppers to spice up the dish. Tofu really has no flavor on it's own but it picks up any flavor that it is mixed with. I also often use a spicy Szechuan sauce instead of the soy..This is great served with brown or white rice and other stir fried veggies, you may even add some additional veggies to the tofu pan for last minute cooking - the veggies must be left crisp. The time noted does not include the hour needed to drain the tofu

Provided by Bergy

Categories     Soy/Tofu

Time 25m

Yield 3-4 serving(s)

Number Of Ingredients 8

1 (1 lb) package extra firm tofu, cut into 3/4 inch squares
2 tablespoons peanut oil or 2 tablespoons olive oil
1 cup green onion, slice into 1 inch pieces using only a little of the green part, chop some of the green tops for garni
1/2 cup vegetable stock
2 tablespoons soy sauce
3 cloves garlic, chopped (optional)
2 jalapeno peppers, finely chopped (optional)
salt and pepper

Steps:

  • Unwrap the tofu and place chopped tofu on paper towels to help it drain more, leave it for apprx 1 hour When the tofu has drained heat the oil in a wok or skillet and over medium heat stir fry the tofu and garlic (if using) until heated through and lightly browned Add the green onions and peppers (if using).
  • stir fry for 3 minutes.
  • Add veggie stock and continue cooking until it is reduced by half only takes a minute.
  • Add soy sauce, turn off heat and mix well.
  • Season to taste.
  • Garnish with green onion tops& serve.
