Steps:
- Sprinkle the chicken breast halves with pepper and salt. In a large skillet, bring chicken broth to boiling. Add chicken; reduce heat. Cover and simmer for 12 to 14 minutes or until chicken is tender and no longer pink, turning once halfway through cooking time. Meanwhile, prepare Strawberry Citrus Dressing as directed in step #3.
- Remove chicken from skillet and discard broth. Thinly slice cooked chicken. In a large bowl, toss together watercress, strawberries, and chicken. To serve, drizzle warm dressing over salad and sprinkle with pecans. Serve immediately.
- Strawberry Citrus Dressing: In a blender or food processor, combine strawberries, orange juice, canola oil, lemon peel, lemon juice, sugar, chili powder, ground black pepper and salt. Cover; blend or process until smooth. Transfer mixture to a small saucepan. Bring just to boiling. Simmer, uncovered, 5 minutes, stirring occasionally. Keep warm until needed. Makes 3/4 cup.

- Heat a heavy-bottomed pan over medium heat. Stir the almonds and 3 tablespoons sugar together in the skillet; cook until the sugar has melted and coats the almonds; 15 to 20 minutes. Set aside.
- Whisk the vegetable oil, vinegar, hot sauce, 2 1/2 tablespoons sugar, salt, and pepper together in a bowl. Toss the spring mix, oranges, strawberries, celery, onion, and parsley together in a large mixing bowl; drizzle the vegetable oil mixture over the lettuce mixture and stir gently to coat. Meet the Cook: One reason I particularly like this recipe is that it's so versatile. I've served the salad with poultry, ham and pork all throughout the year and even used it to add color to the table at Christmas. Recently, when I brought this for a dinner at church, one lady asked if she could take home the little that was left for her husband's lunch the next day - and he very rarely eats salad or fruit. - For the pecans, mix the sugar with the pecans in a small skillet. Cook over low heat until te sugar melts, stirring to coat the pecans well.
