SUN DRIED TOMATO AND OLIVE BREAD



Sun Dried Tomato and Olive Bread image

This sun-dried tomato and olive bread makes a great side for any weeknight pasta entrée.

1 1/2 teaspoons regular active dry yeast
1/2 teaspoon sugar
1 1/3 cups warm water (105°F to 115°F)
1 1/2 teaspoons salt
1 cup white whole wheat flour
1/2 cup cornmeal
1 1/2 to 1 3/4 cups bread flour or Gold Medal™ all-purpose flour
1/3 cup sun-dried tomatoes in oil, drained, chopped, patted dry
1/3 cup pitted kalamata olives, quartered, patted dry
2 teaspoons extra-virgin olive oil

Steps:

  • In large bowl, combine yeast and sugar; add 1/3 cup of the water. Let stand 10 minutes or until yeast is dissolved and foamy.
  • Add remaining 1 cup water and salt. Stir in white whole wheat flour, cornmeal and 1 1/2 cups of the bread flour, slowly adding additional flour as necessary to make dough easy to handle.
  • Place dough on lightly floured surface. Knead 10 minutes or until dough is smooth and springy. Gently knead in sun-dried tomatoes and olives. Place dough in large bowl greased with oil, turning dough to grease all sides. Cover bowl loosely with plastic wrap sprayed with cooking spray; let rise in warm place about 1 hour or until doubled in size. Dough is ready if indentation remains when touched.
  • Line cookie sheet with cooking parchment paper. Gently push fist into dough to deflate. Place dough on lightly floured surface; press to 10x8-inch oval. Fold 1 long side up to the center; press edge into dough. Fold other long side over to center; press edge into dough (seam will be visible on top). Pinch and press each end to form point. Place dough on cookie sheet. Cover loosely with plastic wrap sprayed with cooking spray; let rise in warm place 45 to 60 minutes or until doubled in size.
  • Heat oven to 400°F. Brush loaf with oil. Bake 30 to 35 minutes or until golden brown and bottom sounds hollow when tapped. Cool completely on cooling rack, about 1 hour.

1/2 cup sun-dried tomato packed in oil (I used dry sun-dried tomatoes that I soaked in oil for ~30 min before putting in the bread, worked w)
1 tablespoon oil, from sun-dried tomato
1 egg
1/2 cup chopped olive (original recipe recommended green, I used kalamata, which was not the best combination of flavors, c)
12 ounces beer (any kind, can be flat or warm or etc...)
3 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon double-acting baking powder

Steps:

  • mix dry ingredients in a large bowl.
  • Whisk beer & egg together and add to dry mix.
  • Fold in tomatoes, olives & oil.
  • Bake at 350F for ~40 minutes. I baked the bread in loaf pans dusted with cornmeal and parmesan cheese for an interesting crust.

3 1/2 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon double-acting baking powder
1 large egg, beaten lightly
a 12-ounce bottle of beer (not dark)
1/2 cup chopped drained sun-dried tomatoes packed in oil, reserving 1 tablespoon of the oil
1/3 cup chopped pimiento-stuffed olives

Steps:

  • Preheat the oven to 350°F. and grease and flour a loaf pan, 9 by 5 by 3 inches. In a large bowl whisk together the flour, the salt, the baking soda, and the baking powder, add the egg, the beer, the tomatoes with the reserved oil, and the olives, and stir the batter until it is just combined. Turn the batter into the pan and bake the bread in the middle of the oven for 40 minutes, or until a tester comes out clean. Turn the bread out onto a rack and let it cool.

Steps:

  • Mix dry ingredients incuding the chopped tomatoes.
  • Stir in the beer and mix to a tacky dough.
  • Turn into a greased and base-lined medium loaf tin,level out the top and sprinkle with the grated parmesan.
  • Bake at 180°C for an hour or until done.
  • Turn out onto a wire rack; remove paper and cool.

Number Of Ingredients 9

1 cup warm tomato juice (70° to 80°)
2 tablespoons olive oil, divided
1/2 teaspoon salt
2 teaspoons brown sugar
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
2-3/4 cups bread flour
1 package (1/4 ounce) quick-rise yeast
1/2 cup chopped oil-packed sun-dried tomatoes, well-drained
1/2 cup chopped pitted Greek olives, well-drained

Steps:

  • In bread machine pan, place tomato juice, 1 tablespoon oil, salt, brown sugar, rosemary, flour and yeast in order suggested by manufacturer. Select dough setting. Check dough after 5 minutes of mixing; add 1-2 tablespoons water or flour if needed. Just before the final kneading (your machine may audibly signal this), add tomatoes and olives., When cycle is completed, turn dough onto a lightly floured surface. Roll into a 15x10-in. oval. Roll up jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under. Place on a greased baking sheet, seam side down. Cover with a kitchen towel; let rise in a warm place until doubled, about 45 minutes. Preheat oven to 400°., Brush loaf with remaining oil. With a sharp knife, make 5 deep slashes across top of loaf. Bake 20-25 minutes or until golden brown. Remove from pan to a wire rack to cool.

2 teaspoons double-acting baking powder
1 teaspoon baking soda
1 teaspoon salt
2 tablespoons sugar
2 garlic cloves, minced
1 teaspoon crumbled dried rosemary
1 teaspoon freshly ground black pepper
1/2 cup drained and chopped sun-dried tomatoes packed in oil (available at specialty foods shops and some supermarkets), reserving 2 tablespoons of the oil
2 large eggs
1 1/2 cups milk
3 tablespoons vegetable shortening, melted and cooled
1/2 cup chopped pitted Kalamata or other brine-cured black olives
2 tablespoons drained bottled capers, minced
1/2 cup minced fresh parsley leaves (preferably flat-leaved)
1 cup freshly grated Parmesan

Steps:

  • Into a bowl sift together the flour, the baking powder, the baking soda, the salt, and the sugar. In a small skillet cook the garlic with the rosemary and the pepper in the reserved oil from the sun-dried tomatoes over moderately low heat, stirring, until it is softened and fragrant but not brown. In a large bowl whisk together the eggs, the milk, the shortening, and the garlic mixture, add the flour mixture, and stir the batter until it is just combined. Stir in the sun-dried tomatoes, the olives, the capers, the parsley, and the Parmesan, divide the batter among 4 buttered and floured loaf pans, each 5 3/4 by 3 1/4 by 2 inches, and bake the breads in the middle of a preheated 350°F. oven for 35 to 40 minutes, or until a tester comes out clean. Remove the breads from the pans and let them cool, right sides up, on a rack. The breads keep, wrapped well in plastic wrap and foil, chilled for 1 week or frozen for 1 month.

6 to 8 cups bread flour
2 tablespoons sugar
2 packages (1/4 ounce each) active dry yeast
4 teaspoons salt
3 cups water
1/3 cup olive oil
1 jar (8 ounces) pitted Greek olives, drained and sliced
1/2 cup oil-packed sun-dried tomatoes, chopped

Steps:

  • In a large bowl, combine 2 cups flour, sugar, yeast and salt. In a large saucepan, heat water and oil to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in olives and tomatoes. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide into thirds. Shape each portion into a loaf. Place in three greased 9x5-in. loaf pans. Cover and let rise until doubled, about 45 minutes., Bake at 375° for 30-35 minutes or until golden brown. Remove from pans to wire racks to cool.
