1-1/2 cups prepared TANG Orange Flavor Drink Mix
1-1/2 qt. (6 cups) cut-up mixed fresh fruit (blueberries, grapes, strawberries, pineapple and cantaloupe)
2 Tbsp. TANG Orange Flavor Drink Mix
1 cup vanilla low-fat yogurt

Steps:

  • Add prepared drink to fruit in large bowl; toss to coat. Cover.
  • Refrigerate several hours or until chilled. Meanwhile, stir dry drink mix into yogurt until well blended; cover. Refrigerate until ready to use.
  • Spoon fruit mixture evenly into 12 dessert dishes; top with the yogurt mixture.

1 package (3 ounces) lemon gelatin
2 cups boiling water
1 can (6 ounces) frozen orange juice concentrate, thawed
1 can (20 ounces) pineapple chunks, undrained
1 can (15-1/4 ounces) sliced peaches, drained
1 can (11 ounces) mandarin orange segments, undrained
1 cup sliced fresh strawberries
1 cup fresh blueberries
1 cup green grapes
1 firm banana, thinly sliced

Steps:

  • In a large bowl, dissolve gelatin in water. Add orange juice concentrate; mix well. Add all of the fruit; mix well. Cover and refrigerate overnight.

2 (20 ounce) cans chunk pineapple, drain liquid, reserve 1-1/2 cups
2 (15 ounce) cans mandarin oranges, drained
1 (10 -12 ounce) jar maraschino cherries, drained
1 (3 1/2 ounce) package vanilla pudding mix (cook style)
2 bananas

Steps:

  • Drain all canned fruits, reserving 1-1/2 cups of pineapple juice.
  • Mix all canned fruits in large bowl.
  • Mix reserved pineapple juice with pudding mix in medium saucepan.
  • Cook over medium heat until boiling, stirring constantly.
  • Let cool, pour over fruit and mix.
  • Refrigerate overnight.
  • Slice bananas and add just before serving.

This is a unique fruit & vegetable cake. It is rather dense and moist - it doesn't rise much at all during baking. It will last a week when stored, covered, in the fridge. Fruit medley is a mixture of chopped dried fruits (usually sultanas, apricot, apples, peach and pear) but you can substitute your favourites. Sourced from Aust. Women's Weekly - Australian measurements used. Needs overnight soaking (NOT included in time to make).

375 g mixed dried fruit (fruit medley, see above)
1 cup orange juice
1/4 cup apple juice
3/4 cup grated apple
3/4 cup grated raw pumpkin
1/4 cup grated raw carrot
2 egg whites, lightly beaten
1 1/4 cups wholemeal self-rising flour
1/4 cup skim milk powder
1 tablespoon cocoa
1 teaspoon mixed spice

Steps:

  • In a saucepan combine the dried fruit and the two juices. Bring to the boil then reduce heat and simmer, uncovered, for 2 minutes. Remove from heat, cover and cool overnight.
  • Next day: Grease a 20cm ring pan, paying particular attention to the centre area. Pre-heat oven to 180 deg Celsius.
  • Sift together all dry ingredients (flour, milk powder, cocoa & mixed spice).
  • Combine fruit mix, apple, pumpkin & carrot in a large bowl then stir in the egg whites.
  • Stir in the dry ingredients.
  • Spread the mixture into the prepared tin. Bake for 1.25 hours checking the cake after about 1 hour. (The cake may require a cover of some aluminium foil during the last stages, to stop the top from getting too brown.) Remove cake from oven, remove foil if used, and cool for 5 minutes. Carefully turn on to wire rack to cool.

8 cups cold water
2 liters ginger ale, chilled
Ice cubes
1 quart orange sherbet

Steps:

  • In a large container, combine concentrates and water. Chill. In a large pitcher or punch bowl, combine the ginger ale and chilled concentrate mixture; add ice cubes. Top with scoops of sherbet. Serve immediately.
