3 chicken breasts, chopped
Broccoli
onion
mushrooms
salt & pepper
1 T lemon juice
2 Can Cream Chicken Soup
1 C sour cream
1 C Mayo
1 C Cheddar cheese
1 tsp. curry pwd

Steps:

  • Steam broccoli. Place chicken on bottom of greased casserole. Place steamed broccoli on top of chicken. Add mushrooms and onions. Mix remaining ingred. and spread over top of chicken/broccoli. Bake at 350 for 40 min. Serve over rice

This tastes just like chicken pot pie, but has way fewer carbohydrates, for those of us who watch those. For those of us who don't, you could eat it with biscuits or homemade bread. I got this concept from an episode of Rachel Ray, but the recipe is mine. I really like the new Campbell's Cream of Chicken with Herbs soup. And I've fallen in love with my "Herbs de Provence" blend. I found this at Earth Fare. It's salt-free, and the brand is The Spice Hunter. It's just a blend of thyme, marjoram, rosemary, basil, fennel, sage, and French lavender. Just a pinch really kicks up an omelet!

1 1/2 pound(s) chicken breasts, thighs, legs (boneless). may use bone-in, but should be 2+ pounds
3 medium red potatoes
1/2 medium onion
2 stick(s) celery
4 medium carrots
3 - 4 cup(s) chicken stock
2 can(s) cream of chicken herb seasoned soup
1 tablespoon(s) herbs de provence seasoning
1 cup(s) frozen peas
- salt and pepper to taste

Steps:

  • Cut chicken into bite-sized pieces. Peel and cube potatoes. Chop onion. Trim and slice celery and carrots.
  • Place chicken, vegetables (except peas), and chicken stock into a LARGE slow cooker. Stir in the soup and the Herbs de Provence seasoning.
  • Cover and cook on low at least 6 hours.
  • One hour before done, stir in the green peas. Cover and continue to cook. Taste for seasoning and add salt and pepper before serving.
  • CALORIES: 305. FAT: 7 G. CARBOHYDRATE: 22 G. PROTEIN: 37 G. VITAMIN A: 140%. VITAMIN C: 19%. CALCIUM: 6%. IRON: 14%.

This dish is simple, but delicious! My mom made this for us when we were kids, and now I make it for my kids. Perfect for an asian-themed dinner. I serve it with pineapple, chow mein noodles, and broccoli. My kids LOVE to eat it with chopsticks!

3 tablespoons oil, divided
5 teaspoons soy sauce, divided
3 teaspoons cornstarch, divided
2 chicken breasts
1/2 cup chicken broth
1/2 teaspoon ground ginger
1/2 teaspoon ground red pepper
1/4 cup diced onion
1 minced garlic clove
1/4 green pepper, julienne
1 (8 ounce) can water chestnuts
1/2 cup walnut pieces
rice

Steps:

  • Mix 1 Tbl. oil, 2 teaspoons soy sauce, 1 teaspoons corn starch in bowl. Stir in chicken (cut in 1 inch pieces). Cover and refrigerate 30 minute.
  • Mix chicken broth, ginger, 3 teaspoons soy sauce, 2 teaspoons corn starch. Set aside.
  • Heat 1-2 Tbl. oil in skillet. Stir-fry chicken and dried red pepper. Remove chicken.
  • Stir-fry onion, green pepper, and garlic until onion is clear. Add chicken and broth mixture. Cook until thickened. Stir in walnuts and water chestnuts.
  • Serve over white rice.

I don't know Susan but I like the way her chicken sounds with OJ, soy sauce, ketchup, honey, basil, you get the idea. From a community cookbook. Just mix up the sauce and pour it on chicken pieces and bake. I don't want to lose this since it utilizes ingredients I keep on hand.

1/2 cup orange juice
1/4 cup soy sauce
1/4 cup ketchup
1/4 cup honey
1/2 teaspoon salt

1/4 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Place chicken in a large baking pan.
  • Whisk remaining ingredients and pour over the chicken.
  • Bake, uncovered, for 1 hour.
