ROASTED SWEET POTATOES AND FRESH FIGS



Roasted Sweet Potatoes and Fresh Figs image

This dish from Yotam Ottolenghi, a chef and an author of "Jerusalem," the beloved Middle Eastern cookbook, takes inspiration from a city where fig trees grow in abundance. Roasted sweet potatoes, along with wedges of fresh figs, are piled onto a plate, drizzled with a green onion-chile sauce and a balsamic reduction then dotted with generous pats of goat cheese. Do plan ahead, as this recipe does require a bit of preparation, but it's easy work that's more than worth it.

4 small sweet potatoes (2 1/4 pounds total)
5 tablespoons olive oil
Scant 3 tablespoons balsamic vinegar (you can use a commercial rather than a premium aged grade)
1 1/2 tablespoons superfine sugar
12 green onions, halved lengthwise and cut into 1 1/2-inch segments
1 red chili, thinly sliced
6 ripe figs (8 1/2 ounces total), quartered
5 ounces soft goat's milk cheese (optional)
Maldon sea salt and freshly ground black pepper

Steps:

  • Preheat oven to 475 degrees. Wash the sweet potatoes, halve them lengthwise, and then cut each half into 3 long wedges. Mix with 3 tablespoons of the olive oil, 2 teaspoons salt and some black pepper.
  • Spread the wedges out, skin side down, on a baking sheet and cook for about 25 minutes, until they are soft but not mushy. Remove from the oven and leave to cool.
  • To make the balsamic reduction, place the balsamic vinegar and sugar in a small saucepan. Bring to a boil, then decrease the heat and simmer for 2 to 4 minutes, until it thickens. Be sure to remove the pan from the heat when the vinegar is still runnier than honey; it will continue to thicken as it cools. Stir in a drop of water before serving if it does become too thick to drizzle
  • Arrange the sweet potatoes on a serving platter. Heat the remaining oil in a medium saucepan over medium heat and add the green onions and chili. Fry for 4 to 5 minutes, stirring often to make sure not to burn the chili. Spoon the oil, onions and chili over the sweet potatoes. Dot the figs among the wedges, and then drizzle over the balsamic reduction. Serve at room temperature. Crumble the cheese over the top, if using.

2 medium pears, peeled and chopped
8 ounces dried figs, quartered
1/4 cup maple syrup
1 teaspoon lemon juice
1/2 teaspoon ground allspice
TOPPING:
1 cup old-fashioned oats
1 cup chopped pecans
1/3 cup all-purpose flour
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon ground allspice
1/8 teaspoon salt
1/3 cup canola oil
1 tablespoon maple syrup
Vanilla ice cream or sweetened whipped cream, optional

Steps:

  • Preheat oven to 350°. Drain sweet potatoes, reserving 3 tablespoons syrup. Place sweet potatoes in a large bowl. Stir in pears, figs, maple syrup, lemon juice, allspice and reserved sweet potato syrup. Transfer to a greased 8-in. square baking dish., In a small bowl, mix the first seven topping ingredients. Stir in oil and maple syrup; sprinkle over filling., Bake, uncovered, 35-40 minutes or until fruit is tender. If desired, serve warm with ice cream.

1 1/2 tbsp / 20 g superfine sugar
12 green onions, halved lengthwise and cut into 1 1/2-in / 4cm segments
1 red chile, thinly sliced
6 ripe figs (8 1/2 oz / 240 g in total), quartered
5 oz / 150 g soft goat's milk cheese (optional)
Maldon sea salt and freshly ground black pepper

Steps:

  • Preheat the oven to 475°F / 240°C.
  • Wash the sweet potatoes, halve them lengthwise, and then cut each half again similarly into 3 long wedges. Mix with 3 tablespoons of the olive oil, 2 teaspoons salt, and some black pepper. 3 tablespoons olive oil
1 teaspoon dry mustard
1/2 teaspoon ground ginger
1/4 teaspoon cayenne
Coarse salt
2 Bartlett pears, cored, quartered, and halved

Steps:

  • Preheat oven to 400 degrees. Scrub potatoes. Quarter lengthwise; slice diagonally 1 1/2 inches thick. On a rimmed baking sheet, toss slices with olive oil, dry mustard, ground ginger, and cayenne; season with coarse salt. Roast, tossing occasionally, until crisp-tender, 20 to 25 minutes.
  • Core and quarter 2 Bartlett pears; halve crosswise. Add to the potatoes; toss all with another tablespoon oil. Continue roasting until potatoes are fork-tender, about 10 minutes more.

3 cups mashed cooked sweet potatoes
1 cup white sugar
2 eggs
2 ½ tablespoons butter, melted
½ cup milk
½ teaspoon salt
1 teaspoon vanilla extract
1 cup packed light brown sugar
1 cup coarsely chopped pecans
½ cup all-purpose flour
2 ½ tablespoons melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter a 9 inch square baking dish.
  • In a medium bowl, mix together the sweet potatoes, white sugar, eggs, 2 1/2 tablespoons melted butter, milk, salt and vanilla until well blended. Spread evenly in the prepared baking dish.
  • In a separate bowl, stir together the light brown sugar, pecans and flour. Stir in remaining 2 1/2 tablespoons of butter to make the crumb topping. Spread topping over the sweet potatoes.
  • Bake for 25 to 30 minutes in the preheated oven, until topping is browned and crispy.

2 pears, peeled and sliced
½ cup dry white wine
¼ cup water
3 sweet potatoes, peeled and cubed
1 cup evaporated milk
¼ teaspoon vanilla extract
¼ cup brown sugar
2 tablespoons butter
½ teaspoon ground cinnamon
½ teaspoon ground nutmeg

Steps:

  • Place the pears, wine, and water in a small saucepan and bring to a boil over high heat. Turn heat to medium-low and simmer until pears are soft, about 5-10 minutes. Remove pears from wine and reserve.
  • Place the sweet potatoes into a large pot and cover with water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to potatoes to steam dry for a minute or two.
  • Stir the reserved pears, evaporated milk, vanilla, brown sugar, butter, cinnamon, and nutmeg into the sweet potatoes and mash until smooth. Transfer to a serving dish and serve hot.

5 pounds red-skinned sweet potatoes (yams)
6 tablespoons unsalted butter, room temperature
4 large firm but ripe Bartlett pears, peeled, cored, cut into 1/3 inch-thick slices
3/4 cup (or more) pear nectar
1/4 cup sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon (generous) ground cardamom

Steps:

  • Preheat oven to 400°F. Butter 13 x 9 x 2 - inch glass baking dish. Pierce potatoes in several places with fork. Place on baking sheet; bake until very tender when pierced with knife, about 1 hour. Remove from oven. Reduce temperature to 350°F.
  • Meanwhile, melt 2 tablespoons butter in heavy large nonstick skillet over medium-high heat. Add pears; sautée until beginning to soften, about 5 minutes. Add 3/4 cup nectar; bring to simmer. Reduce heat to medium-low; cover and simmer until pears are very tender, adding more nectar if mixture sticks to skillet and stirring often, about 4 minutes. Transfer to processor and puree.
  • Peel sweet potatoes; place in large bowl of electric mixer. Add 4 tablespoons butter; beat until smooth. Mix in pear puree, sugar, cinnamon and cardamom. Season with salt and pepper. Transfer to prepared dish (Can be prepared 1 day ahead. Cover and chill.)
  • Bake potatoes uncovered until just heated through, about 20 minutes.

2 large sweet potatoes
1 tablespoon extra virgin olive oil
salt
8 slices sourdough bread
3 tablespoons fig preserves
1/2 lb brie cheese, cut into 8 long even slices
4 ounces prosciutto
2 tablespoons unsalted butter, softened

Steps:

  • Preheat oven to 500 degrees. Line a large baking sheet with foil. Scrub the sweet potatoes and cut into fries 1/2-inch thick. Toss on the baking sheet with the olive oil and season lightly with salt. Spread in a single layer and bake for 10 minutes; flip with a spatula, then bake until the ends start to crisp about 8 to 10 minutes.
  • Heat a nonstick griddle or large skillet over medium heat.
  • Lay the bread slices in pairs on a work surface. Spread the fig preserves equally onto 4 slices of bread.
  • Lay 2 slices of cheese over the preserves.
  • Arrange the prosciutto on top, folding evenly with the edges of the bread.
  • Cover the remaining bread slices and spread half the butter on top. Invert the sandwiches and spread the remaining butter on the other side.
  • Put sandwiches in hot pan, cook turning once or twice until both sides are golden and crisp and the cheese is melted.
  • Cut the sandwiches in half and serve with sweet potato fries.
