SWISS CHARD WITH GARBANZO BEANS AND FRESH TOMATOES
Beans and greens are a perfect combination, earthy and satisfying. This recipe for Swiss chard with garbanzo beans, onion, and fresh tomatoes is brightened with lemon juice and makes a perfect vegetarian main dish or a tantalizing side dish for fish or meat.

Steps:
- Heat olive oil in a large skillet. Stir in shallot and green onions; cook and stir for 3 to 5 minutes, or until soft and fragrant. Stir in garbanzo beans, and season with salt and pepper; heat through. Place chard in pan, and cook until wilted. Add tomato slices, squeeze lemon juice over greens, and heat through. Plate, and season with salt and pepper to taste.

SAUTEED SWISS CHARD WITH BACON
Steps:
- Coat a large saute pan lightly with olive oil and add the diced bacon, garlic, and crushed red pepper. Bring the pan to medium-high heat. When the garlic has turned a lovely golden brown, remove from the pan and discard. At this point the bacon should start to become brown and crispy. Add the Swiss chard stems and the stock and cook until the stock has mostly evaporated. Add the Swiss chard leaves and saute until they are wilted. Season with salt.
BACON AND SWISS CHARD PASTA

- Cook linguine in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup pasta cooking liquid.
- Meanwhile, cook bacon in heavy large pot over medium heat until beginning to crisp, about 10 minutes. Transfer to paper towels to drain. Drain all but 2 tablespoons bacon drippings from skillet. Add onion and saut over medium-high heat until softened, about 7 minutes. Add Swiss chard and sprinkle with salt and pepper. Add pasta cooking liquid to skillet. Toss until chard is wilted and tender, about 4 minutes. Sprinkle vinegar over; cook 1 minute.
- Add linguine and oil to sauce in pot and toss to coat. Transfer to large bowl. Sprinkle with bacon and cheese. Season to taste with salt and pepper.

- Cook pasta according to package directions for al dente. Meanwhile, in a large skillet, heat oil over medium heat. Cook sausage and red onion until no longer pink, 3-4 minutes, breaking into crumbles. Add fennel, mushrooms and garlic; cook until tender, 6-8 minutes. Add Swiss chard; cook and stir until wilted, 4-5 minutes longer., Drain pasta, reserving 1 cup pasta water. In a large bowl, combine pasta, sausage mixture, salt, pepper and 1/2 cup Parmesan cheese, adding enough reserved pasta water to coat pasta and create a creamy texture. - Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the garlic, and cook for 1 minute to soften. Add the Swiss chard. Cook and stir until the stems of the chard are tender. You can use some of the hot pasta water to help steam the chard in the covered pan.
- Stir the hot spaghetti into the chard mixture along with the capers. Season to taste with salt and black pepper, and drizzle with lemon juice if desired. Sprinkle with Parmesan cheese to serve.

- Wash and rinse chard.
- Rough chop chard to 2-3 inches.
- In a large skillet, add olive oil and chopped bacon.
- Cook bacon till fat has rendered and crisp.
- Add chard, onion and garlic. Cover.
- Cook till wilted.
- Add salt and red pepper flakes.
- Uncover and as water steams off, add chicken stock, adding more as needed so pan does not burn.
- Lower heat to medium low. Continue to simmer until chard stalks and onion are tender.
- Add slices of tomato. Cook for another 3-5 minutes.
- Dress with balsamic vinegar to taste.
- Enjoy!

- Preheat oven to 325°F
- Lightly grease a 12 × 8-inch baking pan; set aside.
- Cook pasta according to package directions, omitting salt.
- Drain in colander; set aside.
- Meanwhile, lightly saute the shallots until softened in just enough butter to keep them from sticking to the pan, set aside.
- Whisk together milk, flour, mustard, salt and pepper in large skillet. Cook and stir over medium heat until thickened, about 5 minutes.
- Remove skillet from heat; add shallots, Swiss cheese and whisk until smooth.
- Place the pasta in bottom of prepared pan.
- Pour sauce evenly pasta.
- Bake until almost heated through, about 20 minutes and top with the crumbled bacon.
- Heat for another 2-4 mins and remove from oven, serve hot.
