BRAAI-SPICED T-BONE STEAKS

Braai-Spiced T-Bone Steaks image

Grilling meat is practically the South African national sport, crossing lines of wealth, geography and even race. Braai means grill in Afrikaans, and some say it's the only word recognized in all of the country's 11 official languages. There's no reason this braai sout, a fragrant dry rub, can't be used on steaks other than a T-bone. But the T-bone has had special status there since Archbishop Desmond Tutu, as part of a campaign to bring all South Africans together around the braai, pointed out that the shape of that steak mimics the shape of Africa itself. Serve with whole potatoes roasted in the coals, and drink beer or one of South Africa's excellent wines.

Time 4h45m

Yield 4 to 8 servings

Number Of Ingredients 9

4 tablespoons coarse salt
2 tablespoons white or brown sugar (optional)
2 tablespoons coriander seeds
1 tablespoon black peppercorns
1 tablespoon paprika or 2 teaspoons paprika plus 1 teaspoon cayenne
1 tablespoon garlic flakes or powder
1 tablespoon onion powder
1 tablespoon dried thyme
4 to 6 T-bone steaks, about 1 1/2 inches thick

Steps:

  • Make the braai spice: In a grinder or mortar and pestle, grind all the seasonings and herbs until fine.
  • Rub steaks with the braai spice and set aside in refrigerator for 1 to 4 hours. Bring to room temperature before grilling.
  • Heat a grill until screaming hot. Place steaks on the grill and cook, turning every 2 minutes or so, until crusty outside and medium-rare inside, 120 to 125 degrees. Let rest 10 minutes and slice across the grain for serving.

1 teaspoon kosher salt
1 teaspoon smoked paprika

T-BONE STEAKS WITH THREE PEPPER RUB AND BOURBON STEAK SAUCE

T-Bone Steaks With Three Pepper Rub and Bourbon Steak Sauce image

Bourbon has it own characteristic flavor that adds a nice flavor to these T-Bones. Make sure the steaks are at room temperature before grilling. This helps keep them tender. You can make the sauce ahead of time and reheat when it is time to serve. The preparation time includes 2 hours to let the rub set in. I prefer to have it done the night before to save time the next day.

Provided by heather in Ont

Categories     Steak

Time 3h40m

Yield 4 serving(s)

Number Of Ingredients 14

1 tablespoon fresh ground black pepper
1 tablespoon white pepper, freshly ground
1 tablespoon sweet paprika
1 tablespoon garlic powder
2 teaspoons salt (I prefer sea salt)
4 beef t-bone steaks (about 1 1/2)
1 cup beef stock
1 tablespoon cornstarch
2 tablespoons Bourbon
1 tablespoon Dijon mustard
1 tablespoon tomato paste
Tabasco sauce (1 or 2 dashes)
salt
wood chips, soaked for 30 minutes and drained

Steps:

  • "Rub".
  • Mix together the black and white pepper, paprika, garlic powder, and salt in a small bow.
  • Sprinkle the rub generously on both sides of the steaks and press it into the meat.
  • Cover and let sit, turning occasionally for up to 2 hours at room temperature or overnight in the refrigerator.
  • If refrigerated, remove the steaks from the refrigerator 30 minutes before grilling.
  • "Steak Sauce".
  • Put the stock in a small saucepan over high heat and boil until reduced by half.
  • In a small bowl, stir the cornstarch into the bourbon.
  • Remove the stock from the heat and whisk in the mustard, tomato paste, cornstarch mixture, and Tabasco.
  • Taste and season with salt.
  • Set aside.
  • "Wood Chips".
  • Soak wood chips in water for 30 minutes and drain well, (you can add spices or herbs, mesquite, hickory, alder, apple, and pecan. Woody herbs such as rosemary, oregano, thyme, and dried basil stems can be used on their own or blended. Sometimes herbs can be purchased in a bag the size of a tea bag, for a mess free addition to a fire).
  • If using on a charcoal grill, add them directly to the coals while the food cooks, timing the addition so the flavor of the smoke enhances but does not dominate the steak.
  • If using a gas grill use a small, vented metal smoker box into which the soaked chip may be put for placing directly over burners.
  • You can also make a small packet of chips using heavy-duty aluminum foil. Perforate the top of the packet with a fork an place the packet directly on the burners.

T-BONE STEAKS WITH NORTH AFRICAN SPICES

T-Bone Steaks With North African Spices image

A mix of spices -- coriander, cumin, caraway, cinnamon, and turmeric -- complements the caramelized crust that forms from either pan-searing, grilling, or broiling the versatile T-bone steak. Oven directions are given but better on the BBQ or pan grilled

Provided by Annacia

Categories     Steak

Time 30m

Yield 2 serving(s)

Number Of Ingredients 11

2 (1 1/4 lb) t-bone beef steaks, about 1 inch thick
2 teaspoons olive oil
1/2 teaspoon salt
2 teaspoons coriander seeds
1 teaspoon cumin seed
1 teaspoon caraway seed
2 teaspoons dried rosemary
1/2 teaspoon fresh ground black pepper
1/4 teaspoon ground cinnamon
1/4 teaspoon turmeric
1/2 teaspoon canola oil

Steps:

  • Preheat oven to 400 degrees F. Fit a wire rack over a baking pan and set aside. Rub steaks with olive oil, season with salt, and set aside.
  • Coarsely grind the coriander, cumin, caraway, and rosemary using a mortar and pestle or an electric grinder. Transfer ground spices to a bowl and mix in the black pepper, cinnamon, and turmeric.
  • Rub each steak with 1 tablespoon of spice mixture, making sure to cover both sides. Let the steaks sit at room temperature for 20 minutes.
  • Heat a large skillet over high heat until very hot -- about 3 minutes. Add the canola oil and sear the steaks until a brown crust forms. Turn and repeat on the other side.
  • Transfer the steaks to a wire rack set over the prepared baking pan, place in oven, and cook to desired degree of doneness -- about 9 minutes for rare, 11 for medium rare, 15 for medium, and 18 for well done.
