1 cup fresh lemon juice, chilled
1 cup fresh lime juice, chilled
2/3 cup light agave syrup
lemon and lime slice (for serving)

Steps:

  • Stir tequila, lemon juice, lime juice and syrup in a large pitcher until completely combined. Chill until ready to serve. For serving, stir ice, lemon and lime slices into pitcher. Pour over ice-filled rocks glasses and top with lemon and lime slices.
  • Do ahead: Cocktail can be made 8 hours ahead. Cover pitcher and chill. Add ice, lemon and lime slices just before serving.

6 ounces (3/4 cup) homemade lemonade or purchased lemonade*
2 ounces (1/4 cup) tequila
Ice, for serving (try clear ice)
Fresh mint, for garnish

Steps:

  • In a glass, pour in the lemonade and tequila. Add ice and garnish with fresh mint.
  • Mix 6 cups lemonade with 2 cups tequila. Add ice and serve.

10 ounces vanilla wafers
1/3 cup pine nuts
1/2 cup butter, melted
2 egg whites
1 tablespoon sugar
1/4 cup tequila
1/2 cup fresh lime juice
4 egg yolks
1 (14-ounce) can sweetened condensed milk
Fresh whipped cream, for serving

Steps:

  • For the crust:
  • Preheat oven to 350 degrees F
  • Add wafers and pine nuts to food processor, pulse until well ground up. Pour into bowl and add melted butter. Mix by hand, with a wooden spoon, and press into 10-inch tart pan. (reserve 4 tablespoons of crumbs to sprinkle on top when done baking.)
  • Place tart pan in the oven and bake for 8 minutes.
  • For the filling:
  • In a mixing bowl add egg whites and sugar, beat until there are soft peaks.
  • In another mixing bowl, add remaining ingredients and mix thoroughly. Fold in the egg whites. Pour into tart shell and bake for 25 minutes. Remove from oven and sprinkle with reserved crumbs. Let cool before cutting and serve with fresh whipped cream.

10 lemons
Olive oil
Salt and pepper
10 boneless chicken breasts
Dried tarragon
Dried rosemary
1 or 2 large plastic containers (recommended: Tupperware)

Steps:

  • Pour tequila into the plastic containers. Squeeze juice from 10 or more lemons into the containers. Add some olive oil, and salt and pepper. Place the chicken breasts in the marinade and let marinate overnight in the refrigerator. The next day, preheat grill to high and place chicken breasts on grill. Prepare bowl of olive oil mixed with tarragon and rosemary, to taste, and brush onto chicken while grilling. Cook each side for about 10 to 15 minutes each.

8 Meyer lemons
Dash sugar cane syrup or simple syrup
4 sprigs fresh peppermint, leaves torn
1 lemon, sliced into wheels
4 ounces Tequila
Dash of soda water or seltzer
2 vanilla beans, for garnish

Steps:

  • Into a pitcher, put about 2 scoops of ice cubes. Squeeze in the juice of 8 Meyer lemons or 8 regular lemons in a pinch! Add several dashes of sugar cane syrup. Add the leaves of 2 fresh mint sprigs, torn into pieces. Add a few lemon wheels for garnish. Add 4 ounces of Tequila and give it a stir. Place in the refrigerator to chill.
  • When serving, put the ice in tall glasses, and pour the Tequila Lemonade over the top. Top up with a splash of fizzy soda water. Garnish each glass with a wheel of lemon, a vanilla bean, a sprig of mint, and a paper umbrella.

  • In a large saucepan, heat the sugar and 2 cups water until the sugar is dissolved and the mixture is hot. Allow to cool, and then place into a large drink dispenser or jug. Add the lemon juice and lime juice and stir. Fill with ice and top with 1 gallon (16 cups) cold water. Add the lemon and lime slices.

1 1/2 tablespoons cornstarch
4 large egg yolks
2 teaspoons grated lime zest, plus 6 tablespoons fresh juice (from 8 limes)
3 tablespoons unsalted butter, room temperature
1/2 teaspoons coarse salt
1 tablespoon tequila (optional)
1 1/2 teaspoons Cointreau (optional)

Steps:

  • Whisk together sugar and cornstarch in a medium saucepan; add egg yolks, lime zest and juice, butter and salt and whisk to combine. Bring to a simmer over medium heat, whisking constantly, until thickened, about 5 minutes. Strain curd through a fine mesh sieve into a bowl. Stir in tequila and Cointreau, if using. Press plastic wrap directly onto surface to keep a skin from forming. Refrigerate 1 hour.

1/4 cup fresh lime juice
1 lime, zest of
1 fresh ripe jalapeno chile, minced (the red one)
2 stalks green onions, minced
1/4 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1 teaspoon sugar
1/2 teaspoon salt
1/3 cup corn oil

Steps:

  • Mix all the ingredients together.
  • Let the mixture sit, preferably overnight, but at least for 2 to 3 hours.
  • Shake the mixture well, then reserve 1/2 cup to use as a baste.
  • Marinate white meats such as chicken or pork for up to 2 hours. Fish and shellfish should marinate for 45 minutes. Shake the food often while it marinates.
  • When grilling marinated food, use reserved marinade as a baste during the second half of cooking.
  • Discard used marinade when you start cooking.
