Since a co-worker shared this recipe with me, I seldom make steak any other way. It's an excellent entree for folks like my husband who really savor tasty meat, and it's earned me many compliments on my cooking.

1/2 cup soy sauce
1/4 cup canola oil
1/4 cup packed brown sugar
2 teaspoons ground mustard
2 teaspoons ground ginger
1 teaspoon garlic powder
1 to 1-1/2 pounds beef top sirloin steak (3/4 inch thick)

Steps:

  • In a shallow dish, combine the first six ingredients; add the steak and turn to coat. Cover and refrigerate for 8 hours or overnight., Drain and discard marinade. Grill steak, covered, over medium heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 5-8 minutes on each side.

FOR THE MARINADE:
1/2 cup soy sauce
1/2 cup sake
1/2 cup fresh orange juice
1/4 cup fresh lemon juice
2 tablespoons light brown sugar
1 teaspoon freshly ground black pepper
4 , sirloin lamb steaks, , each about 3/4 inch thick
vegetable oil

Steps:

  • TO MAKE THE MARINADE: In a small saucepan whisk together the marinade ingredients. Bring the mixture to a boil, stirring to dissolve the sugar. Set aside to cool to room temperature.Trim the lamb steaks of nearly all fat. Place the steaks in a large, resealable plastic bag and pour in the cooled marinade. Press the air out of the bag and seal tightly. Turn the bag several times to distribute the marinade, place the bag in a bowl, and refrigerate for 2 to 8 hours, turning occasionally.Remove the steaks from the bag and discard the marinade. Pat the steaks dry with paper towels. Lightly brush or spray both sides of th steaks with the vegetable oil. Grill over Direct Medium heat until the lamb is medium rare, 5 to 7 minutes, turning once halfway through grilling time. Serve hot.From Weber's Big Book of Grilling. 4 cloves garlic, minced
2 cups teriyaki sauce

Steps:

  • Cut the skirt steak into individual strips for serving. Add the garlic to the teriyaki sauce. In a re-sealable plastic bag, combine the steak and the sauce. Seal tightly and refrigerate to marinate overnight.
  • Preheat oven to broil OR preheat a barbecue grill.
  • When oven OR grill is ready, remove meat from bag and discard remaining marinade. Place meat on a broiler pan for the oven OR directly on the grill for the barbecue. Cook for about 5 minutes per side, or to desired doneness.

1 beef flank steak (1-1/2 to 2 pounds)
1/2 cup plus 1/3 cup reduced-sodium soy sauce, divided
1/4 cup balsamic vinegar
1/4 cup honey
1 teaspoon ground ginger
2 garlic cloves, minced
2 tablespoons butter, divided
3 large eggs, beaten
2 cups cold cooked rice
1 package (9 ounces) frozen peas and pearl onions

Steps:

  • Place steak in a shallow dish. In a small bowl, whisk 1/2 cup soy sauce, vinegar, honey, ginger and garlic. Pour half of the marinade over steak; turn to coat. Cover and refrigerate overnight. Cover and refrigerate remaining marinade. , Drain and discard marinade. Grill steak, covered, over medium heat or broil 3-4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10 minutes before slicing., Meanwhile, transfer reserved marinade to a small saucepan. Bring to a boil; cook until liquid is reduced by half. Set aside., In a large skillet, heat 1 tablespoon butter over medium-high heat. Pour eggs into skillet. As eggs set, lift edges, letting uncooked portion flow underneath. When eggs are completely cooked, remove to plate. Chop eggs into small pieces; set aside., In the same skillet, stir-fry rice in remaining butter over medium-high heat. Stir in the peas, onions and remaining soy sauce., Add eggs; cook and stir until heated through. Thinly slice steak across the grain; serve over rice. Drizzle with sauce mixture.

¼ cup olive oil
¼ cup brown sugar
¼ cup grated fresh ginger root

This sweet-and-salty steak comes from the writer Jeff Gordinier's mother, who cooked it on a grill on their patio in California, under the grapefruit tree, after having soaked for hours in her teriyaki marinade. But marinated flank steak is such a foolproof crowd-pleaser that it can translate to any American topography. Serve in high summer as the sun goes down and the temperature drops.

1 cup vegetable oil
1/3 cup soy sauce
1/3 cup brown sugar
1 garlic clove
1 teaspoon minced fresh ginger
1/2 teaspoon pepper
1 flank steak, about 1 1/2 pounds

Steps:

  • Whisk together the oil, soy sauce, brown sugar, garlic, ginger and pepper in a large bowl. With the tip of a knife, lightly score the surface of the steak in a crisscross pattern. Immerse the steak in the marinade and refrigerate for several hours, turning it over now and then.
  • Prepare a grill. When it is hot, place the steak on the grill, shaking off excess marinade first. Cook roughly 4 minutes on each side for medium rare. Let the steak rest for a few minutes, then slice it thinly, on the diagonal.

  • After 15 minutes, remove from heat and add the orange juice and pineapple juice. Stir and allow to cool slightly. Lightly tenderize the lamb chops. Place them in a deep dish and pour the sauce on.
  • Add the grated onions and season with salt , black pepper and coriander. Cover them tightly and store in the refrigerator for 12 hours. Preheat the grill on high and grill the lamb steaks for 1-2 minutes per side.
  • Grill and flip them over 3-4 times, then reduce the grill and finish cooking the meat on medium heat. Place the cooked steaks in a preheated plate, cover with foil and leave to smother for 5-7 minutes. Serve with a garnish of your choice.
