5 oz. Slaw Mix
4 oz. Cilantro Sprigs

Steps:

  • Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F 1 Prepare the Ingredients Thoroughly rinse produce and pat dry. Mince garlic. Coarsely chop cilantro. Slice chiles into thin rounds, removing membrane (white spiny innards) and seeds, if averse to spice. Thinly slice green onion on a bias (angle). 2 Prepare the Slaw In a large mixing bowl, add rice vinegar, sesame oil, half of the green onions, garlic, and cilantro. Whisk together to incorporate. Add salt and pepper to taste. Add slaw mix and chiles to taste (reserving some chile slices for garnish). (Chiles can pack a punch, so if you're spice averse, go easy). Let marinate for 10 minutes before serving. 3 Mix the Burger In a large mixing bowl, combine ground pork, soy sauce, and remaining green onions. Mix well with your hands or a spatula to incorporate. With your hands, shape the mixture into two equal-sized patties. 4 Cook the Burger In a large pan, warm 2 tsp. olive oil over medium-high heat. Season both sides of burgers with a pinch of salt and pepper. Cook for 6-8 minutes on each side, or until the burgers are firm to the touch and reach an internal temperature of 160 degrees. 5 Plate the Dish Toast or warm buns in the oven, if desired. Place a bun in the middle of the plate. Top each bun with a burger. Garnish each burger with fresh chile slaw and any remaining slices of chile if desired.

1/2 cup mayonnaise
1 Tbsp. rice or white vinegar
1 Tbsp. Sriracha, hot chili paste (sambal oelek), or sweet Thai chili sauce (optional)
2 tsp. sugar
1 1/2 tsp. kosher salt, divided
4 cups shredded cabbage
4 scallions, thinly sliced
For the Burgers:
1 lb. ground pork
1 garlic clove, finely grated
1 tsp. Sriracha, hot chili paste (sambal oelek), or sweet Thai chili sauce (optional)
1 tsp. toasted sesame oil
1/2 tsp. fish sauce
1/4 cup cilantro leaves, finely chopped, plus more for serving
1/2 tsp. kosher salt, plus more
1 Tbsp. extra-virgin olive oil
4 English muffins, toasted
Freshly ground black pepper
Bread-and-butter pickles or quick-pickled carrots (for serving; optional)

Steps:

  • Make the Slaw:
  • Whisk mayonnaise, vinegar, Sriracha, sugar, and 1 tsp. salt in a large bowl. Transfer about 1/4 cup dressing to a small bowl; set aside.
  • Add cabbage and scallions to remaining dressing and toss to evenly coat. Season with remaining 1/2 tsp. salt. Cover and chill both the salad and dressing until ready to serve.
  • Do Ahead: Dressing and slaw can be made 8 hours ahead. Keep chilled.
  • Make the Burgers:
  • Using your hands or a wooden spoon, mix pork, garlic, Sriracha (if using), sesame oil, fish sauce, 1/4 cup cilantro, and 1/2 tsp. salt in a large bowl until well combined.
  • Shape pork mixture into 4 patties, slightly larger in diameter than English muffins (about 4").
  • Heat olive oil in a large skillet over medium. Working in batches if necessary, fry patties until browned on both sides and cooked through, 6-8 minutes.
  • Spread reserved dressing on muffins. Place a patty on bottom halves. Season with salt and pepper. Pile on some slaw, pickles, and cilantro, then close muffins. Serve with remaining slaw alongside.
  • Do Ahead: Patties can be made 1 day ahead. Separate with parchment if stacking. Cover and chill, or freeze up to 1 month.

1 can (8 ounces) water chestnuts, drained and chopped

2 tablespoons soy sauce

1/8 teaspoon ground ginger
2 pounds ground pork
SAUCE:
1 can (8 ounces) crushed pineapple, drained
2/3 cup ketchup
1/4 cup white vinegar
1/4 cup orange marmalade
2 tablespoons prepared mustard
8 hamburger buns, split and toasted

Steps:

  • In a large bowl, combine the first nine ingredients. Crumble pork over mixture and mix well. Shape into eight patties. Cover and refrigerate for 1 hour. , Meanwhile, in a saucepan, combine the pineapple, ketchup, vinegar, marmalade and mustard. Cook and stir for 5 minutes or until marmalade is melted. Remove from the heat; set aside., Grill patties, covered, over medium heat for 4-5 minutes on each side until a thermometer reads 160°. Spoon 1 tablespoon of sauce onto each burger during the last 2 minutes of grilling. Serve on buns with remaining sauce.

1 pound ground pork or lamb
5 slices bacon, coarsely chopped
0.25 cup reduced-sodium soy sauce
1.5 tablespoon Thai Hot Pepper Spice Mix
1 large shallot, chopped
3 tablespoon chopped fresh cilantro and/or fresh mint
2 tablespoon chopped lemongrass
1 tablespoon grated fresh ginger
3 cloves garlic, chopped
2 tablespoon light mayonnaise
2 teaspoon Asian chili sauce (Sriracha)
1.5 cup shredded cabbage with carrot (coleslaw mix)
4 sesame hamburger buns, split and toasted
10 teaspoon paprika
2 teaspoon ground corriander
2 teaspoon ground cumin
2 teaspoon ground ginger
2 teaspoon onion powder
0.5 teaspoon cayenne pepper

Steps:

  • Finely shred lime peel (reserve lime). In a large bowl combine the lime peel, pork, bacon, soy sauce, 1 tablespoon of the Thai Hot Spice, shallot, cilantro, lemongrass, ginger, and garlic. Mix well to combine. Form into 4 patties, 3/4- to 1-inch thick.
  • For a charcoal or gas grill, place the patties on the grill rack of a covered grill directly over medium heat. Grill for 10 to 12 minutes or until an instant-read thermometer inserted in burgers registers 160°F. (Or, preheat broiler. Place patties on the unheated rack of a broiler pan. Broil 5 inches from the heat for 10 to 12 minutes or until done (160°F.).
  • Squeeze juice of half of a lime into a small bowl. Add mayonnaise, chile sauce, and remaining spice mix. Stir to combine. Add coleslaw. Toss to combine.
  • Serve burgers on buns topped with slaw mixture. Thai Hot Pepper Spice Mix
  • Shake everything together in a small jar, cover and store in a cool, dark place for up to 6 months.

2 tablespoons lemon grass, minced
2 tablespoons chopped fresh basil

Steps:

  • Preheat grill for high heat.
  • In a large bowl, mix together ground round, bread crumbs, lemon grass, shallot, chili peppers, and peanuts. Season with salt and pepper. Form into patties. If you are making these ahead of time, do not add peanuts until you are ready to grill.

Thai basil makes this dish and we happened to have some in the garden that was begging to be turned into something in the Thai food group. Served with a side of steamed dumplings instead of fries and topped with spicy mayo (see basics below preparation instructions), lettuce, onion and tomato - an it's east meets west.... For a real treat make this with ground pork (preferred), ground chicken, or hamburger. Fish sauce, while not normally found in most households is optional, but recommended.

  • In a medium bowl (microwave safe) add the fist 9 ingredients, stir and microwave for 30 seconds, Stir and microwave again until mixtures just starts to bubble. Set aside to cool for 10 minutes.
  • Combine remaining ingredients into sauce that has cooled and mix with hands to incorporate all ingredients.
  • Place meat mixture in fridge for an hour (more or less).
  • Make 4 patties and grill to medium well (no pink) in middle.
  • Serve on a roll with a spicy mayo (mix some mayo with thai green curry paste, ginger garlic paste and a little honey add some shopped cilantro and or basil leaves). Top with favorite burger toppings.
