I found this recipe on the back of a noodle pack while wandering in the grocery store one day. We really enjoyed it, but added more veggies to make it a little healthier. It's a great weeknight meal, as quite quick to prepare.

350 g fresh egg noodles, flat
250 g ground pork
2 cups snow peas, sliced
1 tablespoon minced garlic clove
1 tablespoon red curry paste
1 cup low-fat coconut milk
1 cup chicken stock
1 tablespoon curry powder
1 pinch turmeric powder
1 tablespoon fish sauce
1 tablespoon lime juice or 1 tablespoon lemon juice

Steps:

  • Separate noodles in hot water, as per instructions on the packet. Drain & keep warm.
  • In a medium saucepan, heat the coconut mild on low heat and slowly stir in the curry paste. When it begins to simmer, add in the remaining ingredients, except for the port and snow peas. Stir for around 2 minutes then add the port and heat until the pork is cooked.
  • Stir in the noodles and snow peas and serve.

These are so good- just something I came up with one day. They are quite spicy, so if you don't like a lot of heat, you might lower the spice the first time you try them. You can also adjust to chicken stock in order to have a thick sauce or a more soupy consistency. I like both. The red pepper is a type of spice, not a mashed up pepper as someone once asked me! I am a vegetarian now and this is still fabulous meat free.

1 medium onion (chopped)
3 garlic cloves (minced)
1 teaspoon crushed red pepper flakes
1 -1 1/2 teaspoon ground coriander
2 -2 1/2 teaspoons cumin
3 tablespoons soy sauce
2 (10 ounce) cans coconut milk
4 cups vegetable stock or 4 cups chicken stock
1 (400 g) package rice noodles (flat kind)
2 chicken breasts (cut in strips and cooked)

Steps:

  • Pour a little oil in a large pot.
  • Add onion, garlic, red pepper, coriander and cumin.
  • Saute until onion has become translucent.
  • Add soy sauce, coconut milk and chicken/vegetable stock. Let simmer for 20 minutes to develop flavor.
  • Add cooked chicken and rice noodles.
  • Continue cooking for ten minutes or until the noodles are softened.

½ pound dried rice noodles
1 pound skinless, boneless chicken breast halves
1 dash soy sauce
1 green bell pepper, sliced
1 red bell pepper, sliced
1 cucumber, coarsely chopped
1 carrot, grated
10 mushrooms, halved
1 onion, chopped
2 cloves garlic, minced
1 tablespoon minced fresh ginger root
1 ½ tablespoons red chile sauce
¾ cup peanut sauce
2 tablespoons oyster sauce
1 tablespoon sesame oil
1 tablespoon sesame seeds

Steps:

  • Cook rice noodles according to package directions.
  • Slice chicken breasts into strips. Marinate in soy sauce for about 1/2 hour.
  • In a large saucepan or wok, heat sesame oil over medium heat. Cook chicken until no longer pink. Add garlic, ginger, and onions; cook until onions are tender. Add mushrooms and cucumbers; cook until mushrooms are tender. Add peppers, carrot, peanut sauce, oyster sauce, and hot chili pepper sauce. Heat through.
  • Toss cooked rice noodles with saute. Garnish with sesame seeds.

STIR-FRIED COCONUT NOODLES

Coconut milk brings distinctive flavor and creamy heft to these rice noodles, which are stir-fried with pork or chicken, bell pepper and eggplant. Be generous when you're seasoning the dish with nam pla (fish sauce), which adds umami and some welcome funk. No nam pla? Use soy sauce instead.

3/4 pound linguine-style rice noodles
3 tablespoons canola, corn or other neutral oil
1 pound minced or ground boneless pork or chicken
1 yellow or red bell pepper, seeded and minced
1 eggplant, about 1/2 pound, cut into 1/2-inch cubes
1 tablespoon minced garlic
1 can unsweetened coconut milk (1 1/2 to 2 cups)
Nam pla (fish sauce), soy sauce or salt, to taste
Freshly ground black pepper, to taste
Minced cilantro, for garnish

Steps:

  • If using rice noodles, soak them in very hot water to cover until ready to add to stir-fry in Step 4. If using linguine, bring a large pot of water to a boil, salt it, and cook pasta until it is nearly but not quite done. Drain, and rinse in cold water.
  • Meanwhile, place 1 tablespoon of the oil in a large skillet or wok; turn heat to high. A minute later, add meat, and cook, stirring occasionally, until browned, about 5 minutes. Remove with slotted spoon; set aside.
  • Add another tablespoon of the oil to skillet, followed by bell pepper and eggplant. Cook over medium-high heat, stirring occasionally, until both are browned and tender, about 10 minutes. Remove with slotted spoon; combine with meat.
  • Add remaining tablespoon of oil, followed immediately by the garlic and about 30 seconds later, the coconut milk. Cook over medium-high heat, stirring and scraping with a wooden spoon, for about a minute. Add drained noodles along with meat and vegetables, and cook until noodles absorb most of the coconut milk, about 3 minutes.
  • Season with nam pla to taste, then add plenty of black pepper. Garnish with cilantro, and serve.

1/2 pound chicken, boned, skinned and cut into 3/4-inch cubes
1 teaspoon fish sauce
Sea salt
1/4 cup peanut oil
1/4 teaspoon turmeric
1 small sweet onion, finely chopped
3 cloves garlic, finely chopped
1/2 teaspoon sweet paprika
20 1-inch cubes fish cake, deep-fried
5 cups chicken broth
1/4 cup roasted chickpea flour
2/3 cup coconut milk
13 peeled shallot lobes, one of them finely sliced and soaked in water
3/4 pound boiled spaghetti-size egg noodles
2 hard-boiled eggs, thinly sliced
2 scallions, sliced
Handful of deep-fried rice noodles
1 lime, cut into wedges
Red chilies, roasted in a pan and then coarsely ground

Steps:

  • Knead the chicken with the fish sauce and a pinch of salt and let rest for 10 minutes.
  • Place a medium saucepan over medium-high heat and add the oil and turmeric. Scrape in the onions and sauté for a minute. Add the garlic and cook 1 more minute. Stir in the paprika, then the chicken, cooking until the chicken is blanched on the outside. Fold in the fish cakes and 1/2 cup water and simmer until most of the liquid is absorbed.
  • In a large saucepan, bring the broth to a boil. Dissolve the chickpea flour in 1/2 cup water and pour into the broth, stirring until the mixture thickens slightly. Add the chicken to the broth, and stir in the coconut milk. Bring to a boil, then lower the heat. Add the shallot lobes and simmer until just cooked through. Season to taste.
  • To serve, place a handful of noodles in each of 4 deep bowls and ladle on a generous amount of chicken and broth. Garnish with sliced (drained) shallot, hard-boiled egg, scallions and fried noodles. Serve, passing lime wedges and roasted chilies.

1 can (14 ounces) unsweetened coconut milk
1 3/4 cups homemade or low-sodium store-bought chicken stock
1 cup loosely packed fresh cilantro, plus more for garnish
1/2 cup loosely packed fresh basil, plus more for garnish
4 garlic cloves
1 piece (2 inches) peeled fresh ginger, cut into 1/8-inch-thick rounds
2 small fresh red chiles, halved, stems removed
2 tablespoons Asian fish sauce (optional)
1 fresh lemongrass stalk, bottom 4 inches only, crushed
1 tablespoon sugar
1 to 2 tablespoons fresh lime juice

Steps:

  • Bring a large pot of water to a boil; add salt. Cook noodles until al dente, about 2 minutes. Drain; rinse with cold water. Set aside.
  • Bring coconut milk and chicken stock to a gentle simmer in a medium saucepan over medium-low heat. Meanwhile, process cilantro, basil, garlic, ginger, and 1 chile in a food processor until coarsely chopped, 5 seconds. Add cilantro mixture, fish sauce (if desired), lemongrass, and sugar to broth; simmer 6 minutes. Discard lemongrass.
  • Add noodles; cook until just heated through, about 1 minute. Remove from heat. Stir in lime juice. Finely chop remaining chile. Divide noodles among bowls; top with cilantro, basil, and chile.

1 chicken stock cube
75 g green beans, trimmed and cut into pieces
4 spring onions, sliced
1 red chile, trimmed and sliced
125 g baby corn, halved
1 garlic, minced
salt and pepper
200 g wide rice noodles
75 g Baby Spinach, shredded
1 bunch coriander, coarsely chopped
2 cod fish fillets
flour, for dusting
1 tablespoon vegetable oil
1 lime

Steps:

  • Dissolve the stock cube in 600ml boiling water in a medium sized saucepan.
  • Place the pan over a medium heat and bring to a boil.
  • Add the beans, corn and chilli, return to the boil and cook for one minute.
  • Now add the leeks and garlic.
  • Return to a boil and remove immediately from the heat.
  • Add the noodles, shredded spinach and a couple good tablespoonsful of coriander.
  • Stir until everything is immersed, then cover and leave for five minutes.
  • Meanwhile, cook the fish.
  • Pat it dry to absorb any excess water, then dust both sides with flour and shake to remove any extra.
  • Over a medium heat, warm the oil in a frying pan and fry the fish.
  • Turn after about three minutes, depending on how thick the fillets are, to cook the other side.
  • Turn off the heat and leave the cod in the pan while you scoop the noodles and remaining liquid into two bowls.
  • Top each with a fillet of fish, scatter over the remaining coriander and serve with a lime wedge.
