The Best Vegan Ranch Buttermilk Dressing image

An easy egg-free ranch dressing made with cashews and fresh ingredients.

1 cup raw cashews (soaked or boiled (see note))
2 tablespoon lemon juice
1 tablespoon white wine vinegar
1/2 cup plus 3 tbsp water (see note)
1 clove garlic (see note)
1/2 teaspoon ground sea salt (see note)
1/4 cup flat leaf parsley (finely chopped)
3 tablespoon chives (finely chopped)

Steps:

  • Drain and rinse the softened cashews and put them in a high-powered blender.
  • Add the 2 tbsp lemon juice1 tbsp vinegar, 1/2 cup plus 3 tbsp water (see note), garlic clove (see note), and salt (see note), and blend on a high speed for 1 minute. Scrape the sides and the lid if necessary, and blend for another minute, or until the dressing is smooth and silky. You shouldn't be able to detect any solids from the cashews.
  • Pour into a bowl and stir in the 1/4 cup chopped parsley and 3 tbsp chopped chives and stir until well combined.
  • Taste and adjust add more garlic and/or salt if desired.

1 cup mayonnaise
1 cup buttermilk
1 tablespoon dried parsley
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon onion powder
¼ teaspoon dried dill weed
freshly ground black pepper to taste

Steps:

  • Whisk mayonnaise and buttermilk in a medium mixing bowl until smooth. Add parsley, garlic powder, salt, onion powder, dill, and pepper; whisk until blended together. Place in the refrigerator until flavors have melded, about 20 minutes.

  • Soak cashews in very hot water for 30 minutes -1 hour (or overnight in cool water). While cashews are soaking, measure out almond milk and add lemon juice and set aside to curdle (this makes your vegan “buttermilk”).
  • Drain and rinse cashews several times and drain again. Then transfer to a small blender (a blender is preferred over a food processor for achieving a smooth texture) and add almond buttermilk, garlic, salt, pepper, onion powder, vinegar, and maple syrup. Blend on high for 1-2 minutes or until very creamy and smooth.
  • Taste and adjust flavor, as needed, adding more salt for saltiness, maple syrup for sweetness, lemon juice or vinegar for acidity, garlic for garlic flavor, or herbs for a more herbal flavor.
