Chips and Veggies with Sun-Dried Tomato Dip image

3/4 pound feta cheese, crumbled
1/2 cup sun dried tomatoes in oil, drained and coarsely chopped
1 clove garlic or 1/2 teaspoon granulated garlic
1 teaspoon dried thyme leaves
1/2 teaspoon dried oregano leaves
3/4 cup milk
1 teaspoon black pepper
1 sack chips (recommended: Onion and Garlic Yukon Gold Chips, Terra Brand, or other Mediterranean flavored gourmet chip), available on snacks aisle of market
1 pound baby cut carrots
1 green bell pepper, cut in strips
4 stalks celery, cut into sticks

Steps:

  • Combine cheese, sun-dried tomatoes, garlic, herbs, milk, black pepper in food processor and process until smooth. Transfer to a small bowl. Serve with chips and veggies.

600g frozen French fries
2 tbsp olive oil
1 tsp dried oregano
1 tsp dried thyme
½ tsp garlic granules
large pinch cayenne pepper (optional)

Steps:

  • Heat the oven to 240C/220C fan/ gas 7 with a sturdy baking tray in it. Toss the frozen fries in a bowl with all the other ingredients and a large pinch of salt until evenly coated.
  • Spread the fries over the baking tray and cook for 15 mins until starting to turn golden, then use a spatula to turn them and bake for 15-20 mins more until golden and crisp - watch them for the last few minutes to ensure they don't burn.

8 ounces freshly grated Parmesan cheese
4 teaspoons fresh thyme leaves

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line 2 baking sheets with parchment paper.
  • Combine Parmesan cheese and thyme leaves in a bowl. Drop heaping teaspoonfuls of the mixture onto the lined baking sheets, spacing them 2 inches apart. Lightly press with your fingers to flatten them into circles 2 inches in diameter.
  • Bake in the preheated oven until slightly browned and crisp, 8 to 10 minutes. Cool slightly on the baking sheets, about 2 minutes. Loosen edges with a spatula and lift off the parchment paper. Transfer to wire racks and let cool completely until firm, about 10 minutes.

3 small zucchini, sliced into 1/4-inch rounds
2 tablespoons olive oil
½ cup Italian-seasoned bread crumbs
2 tablespoons grated Parmesan cheese
2 teaspoons fresh oregano

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place zucchini in a bowl. Drizzle olive oil over zucchini and stir to coat; add bread crumbs and toss to coat. Spread coated zucchini onto a baking sheet. Sprinkle Parmesan cheese and oregano over coated zucchini.
  • Bake in the preheated oven until zucchini are tender and cheese is browned, about 15 minutes.

2 tablespoons butter, melted

6 tablespoons vegetable oil
3 russet (baking) potatoes (about 1 1/2 pounds)
1 1/2 teaspoons dried thyme, crumbled

Steps:

  • Preheat oven to 400°F.
  • Brush 2 large baking sheets well with some oil.
  • Peel potatoes and with a mandoline or other hand-held slicing device cut length-wise into 1/8-inch-thick slices. Immediately arrange potatoes in one layer on baking sheets and brush with remaining oil.
  • Bake potatoes in middle of oven until golden, 12 to 15 minutes, and while still warm transfer with a metal spatula to racks. Sprinkle with thyme and salt to taste. Chips may be made 3 days ahead. Cool chips completely and keep in an airtight container at room temperature.
