Greek Feta Hot Spread (Tyrokafteri) image

This is called tyrokafteri in Greek, a cheesy and spicy spread that is served as an appetizer, similarly to tzatziki. Very easy to make and you can't go wrong. Enjoy on toasted bread.

1 (8 ounce) package feta cheese, crumbled well
3 hot green peppers, stemmed, or more to taste
1 cup full-fat Greek yogurt
⅓ cup olive oil
2 tablespoons sweet red pepper paste
1 tablespoon white vinegar
1 clove garlic, mashed
1 pinch cayenne pepper

Steps:

  • Place feta cheese in a large glass bowl. Place green peppers in a food processor and blend into a paste; transfer to the bowl of feta. Add Greek yogurt, olive oil, red pepper paste, vinegar, garlic, and cayenne pepper to the dip. Stir well.

  • Beat all the ingredients with a mixer until combined and fluffy (adjust heat to personal preference by adding more tabasco).
  • Keeps up to 1 week in refrigerator.

1 lb feta, crumbled
1 cup lemon juice
1/4 teaspoon ground white pepper
1/2 cup olive oil
1 cup half-and-half
4 roasted red peppers, diced
2 teaspoons Tabasco sauce (optional)

Steps:

  • Whip cream cheese in large bowl.
  • Add feta cheese, lemon juice and pepper. Mix thoroughly.
  • Slowly add olive oil, continuing to mix until the oil is absorbed.
  • Mix in half & half until mixture is smooth and creamy. If the mixture seems a little too hard, add a little more half & half until smooth and soft.
  • Add red peppers and tabasco, if using.
  • Mix and serve with a good crusty bread.

Steps:

  • For the preparation: Wash the peppers, remove the stalk and the seeds and dry them with kitchen paper. Slice them in many places and leave in olive oil for 24 hours. This will give you chilli oil, which you can save for other uses too.
  • Blend the cheeses and add oil gradually until you get a creamy texture. Stop when the consistency and the taste is the way you like it. Add lemon to taste.
  • Serve in a ball with warm pitta bread to dip. You can decorate with olives, parsley or any other help you like.
