SWISS CHARD AND TOFU STIR-FRY



Swiss Chard and Tofu Stir-Fry image

This Swiss chard and tofu stir-fry is vegetarian, vegan, and gluten-free, making it a healthy dish that can be served to the whole family.

2 tablespoons olive oil
2 cloves garlic, minced
1/2 block (10-ounces) firm or extra firm tofu (drained, pressed , and cut into cubes)
1 teaspoon soy sauce or tamari
6 to 8 button mushrooms (sliced)
1 large bunch Swiss chard ( stemmed and leaves chopped)
1/2 teaspoon sesame oil
1/4 teaspoon sea salt (or to taste)
Optional: Dash of cayenne pepper

Steps:

  • Gather the ingredients.
  • Heat the olive oil in a large skillet over medium heat.
  • Add the garlic and heat for just a minute or two, until lightly browned.
  • Add the cubed tofu and cook until lightly golden brown on all sides, stirring occasionally as needed.
  • Once the tofu is almost cooked, add a splash of soy sauce or tamari, stirring to coat the tofu well.
  • Add the mushrooms and cook with the tofu for another minute.
  • Add the chopped Swiss chard. Drizzle with the sesame oil and stir.
  • Sprinkle with a bit of sea salt and a dash of cayenne pepper.
  • Allow the Swiss chard to cook down just a bit, until slightly wilted but still tender, rather than soft.
  • Serve immediately over brown rice and enjoy.

⅓ pound whole-wheat spaghetti
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1 bunch Swiss chard, chopped
1 teaspoon capers
salt and pepper to taste
1 teaspoon lemon juice, or to taste
¼ cup grated Parmesan cheese, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the spaghetti, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  • Meanwhile, heat the olive oil in a large skillet over medium heat. Stir in the garlic, and cook for 1 minute to soften. Add the Swiss chard. Cook and stir until the stems of the chard are tender. You can use some of the hot pasta water to help steam the chard in the covered pan.
  • Stir the hot spaghetti into the chard mixture along with the capers. Season to taste with salt and black pepper, and drizzle with lemon juice if desired. Sprinkle with Parmesan cheese to serve.

2 tablespoons low sodium soy sauce
1 tablespoon mirin (sweet rice wine)
2 teaspoons rice vinegar
1 teaspoon honey
1 (12 1/3 ounce) package water-packed reduced-fat firm tofu, drained
cooking spray
1 teaspoon dark sesame oil
1 cup thinly sliced shiitake mushroom caps
1 1/2 teaspoons minced peeled fresh ginger
1/4 teaspoon crushed red pepper flakes
2 garlic cloves, minced
4 cups thinly sliced swiss chard
1/2 teaspoon sesame seeds, toasted
2 teaspoons low sodium soy sauce

Steps:

  • To prepare tofu, combine the first 4 ingredients, stirring with a whisk. Cut tofu lengthwise into 4 equal slices.
  • Carefully place tofu in an 11 x 7-inch baking dish. Pour the soy sauce mixture over tofu. Cover and refrigerate 30 minutes, carefully turning once.
  • Preheat broiler.
  • Remove tofu from dish; discard marinade. Place tofu on a baking sheet coated with cooking spray.
  • Broil 10 minutes on each side or until tofu is lightly browned.
  • To prepare greens, heat oil in a large nonstick skillet over medium heat. Add mushrooms, ginger, pepper, and garlic; cook 1 minute, stirring frequently.
  • Add chard and sesame seeds; cook 3 minutes or until chard wilts, stirring frequently. Stir in 2 teaspoons soy sauce.
  • Place 1/4 cup chard mixture on each of 2 plates; top each serving with 1 tofu slice. Repeat layers with remaining chard and tofu.

3 tablespoons extra-virgin olive oil
3 garlic cloves, thinly sliced
1 pound skirt steak, patted dry and cut into 4 pieces
Coarse salt and ground pepper
1 large bunch Swiss chard (1 1/2 pounds), stems cut into 1/2-inch pieces, leaves torn into bite-size pieces and rinsed (with some water still clinging)
1 baguette, split lengthwise

Steps:

  • Heat broiler, with rack in middle position. In a small saucepan, heat oil and garlic over medium-high until oil bubbles at edges. Add 1 teaspoon garlic oil to a large skillet and heat over medium-high. Season steak with salt and pepper and cook, in batches if necessary, until well browned and medium-rare, 5 to 7 minutes, flipping halfway through. Transfer to a cutting board, tent with foil, and let rest while preparing vegetables.
  • Return skillet to medium heat and add garlic slices and 2 teaspoons garlic oil. Add chard stems and cook, stirring occasionally, until crisp-tender, 3 minutes. Add leaves and season with salt and pepper. Cover, reduce heat to medium, and cook until leaves are wilted, 3 minutes. Meanwhile, brush bread with remaining garlic oil, season with salt and pepper, and broil until golden and crisp, 2 minutes. To serve, thinly slice steak against the grain and serve with chard and garlic bread.

1 cup all purpose flour
6 tablespoons sugar
1 teaspoon grated orange peel
1/4 teaspoon salt
1/4 cup (1/2 stick) chilled unsalted butter, cut into pieces
2 tablespoons chilled solid vegetable shortening
1 tablespoon orange juice
Whipping cream
1 1-pint basket strawberries, hulled, quartered
1 tablespoon Grand Marnier or other orange liqueur
1 cup chilled whipping cream
2 teaspoons vanilla extract
4 small strawberries

Steps:

  • Mix flour, 2 tablespoons sugar, orange peel and salt in medium bowl. Add butter and shortening and rub in, using fingertips, until mixture resembles coarse meal. Sprinkle orange juice over. Stir with fork until moist clumps form. Gather dough into ball; flatten into disk. Wrap in plastic and refrigerate at least 30 minutes. (Can be made 2 days ahead. Keep chilled. Soften slightly at room temperature before rolling out.)
  • Preheat oven to 375°F. Butter heavy large baking sheet. Roll out dough on lightly floured surface to scant 1/4-inch-thick round. Using 3-inch round cookie cutter, cut out rounds. Reroll scraps and cut out additional rounds, forming 8 total. Transfer rounds to prepared baking sheet. Brush lightly with cream. Sprinkle with 1 tablespoon sugar, dividing equally. Bake cookies until light golden brown, about 15 minutes. Cool on baking sheet on rack.
  • Combine quartered strawberries, 2 tablespoons sugar and Grand Marnier in medium bowl. Beat 1 cup whipping cream, vanilla and remaining 1 tablespoon sugar in another medium bowl until soft peaks form.
  • Place 1 cookie on each of 4 plates. Top cookie with berry mixture, dividing equally and allowing mixture to spill over sides of cookies. Spoon large dollops of whipping cream over. Top each with second cookie. Garnish tops with small dollops of whipped cream and whole strawberries.

3 tablespoons olive oil
2 tablespoons balsamic vinegar
2 tablespoons lemon juice
1 teaspoon lemon zest
3 tablespoons fresh basil, chopped
1 lb extra firm tofu, in bite sized pieces
3 tablespoons olive oil
6 garlic cloves
1 lb swiss chard
1/4 teaspoon spike seasoning

Steps:

  • Preheat oven to 375 Degrees F.
  • Mix first five ingredients in small bowl.
  • Line baking dish with tofu in one layer. Pour marinade over and bake for 1/2 an hour, or until marinade is absorbed by tofu and appears dry.
  • Remove stems and cut Swiss Chard (or other greens) into bite sized pieces and soak in cold water.
  • In a large saute pan, heat second batch of Olive oil and toast garlic until light brown (4-5 minutes). Add Tofu, reserving any fluid for gravy, to saute pan for one minute. Add greens and turn with tongs until wilted. Simmer for 15-20 minutes until tender.
  • Serve over grain (rice, etc)as you would any stir fry.
