It's everything we love about a BLT minus the L & T. Juicy, ripe tomatoes, dripping mayo on toasted bread-who really needs bacon anyway? Let tomatoes be the star!

Ingredients

2 cloves from Garlic Confit, mashed
1/2 cup mayonnaise
Zest and juice of 1/2 lemon
Kosher salt and freshly ground black pepper
Four thick (about 1/2- to 3/4-inch-thick) slices rustic bread, lightly toasted
3 medium or 4 to 5 small tomatoes, preferably heirloom
2 tablespoons finely chopped fresh chives
2 teaspoons sesame seeds
Flaky sea salt, for garnish (such as Maldon)
Aleppo pepper, for sprinkling
Extra-virgin olive oil, for drizzling

Steps:

Mix the mashed garlic, mayonnaise and juice of 1/2 lemon (remove zest first) in a small mixing bowl. Season to taste with salt and pepper.
Spread a generous layer of the spread evenly on each slice of toasted bread. Lay the tomatoes on in a single layer, overlapping slightly and cutting in half if necessary. Sprinkle with the chopped chives, sesame seeds, flaky sea salt, black pepper and the Aleppo pepper. Sprinkle some of the fresh lemon zest on top and drizzle with a little extra-virgin olive oil.

Extra-virgin olive oil (for drizzling)

Steps:

Mix garlic and mayonnaise in a small bowl. Squeeze about 1 tsp. juice from lemon half into bowl; season with kosher salt. Hang on to lemon.
Spread a generous layer of seasoned mayonnaise over toast; shingle a few tomato slices on top. Sprinkle with chives, sesame seeds, sea salt, black pepper, and Aleppo-style pepper. Finely grate some lemon zest from reserved lemon over and drizzle with some oil.

12 1/2-inch-thick slices baguette
1 clove garlic
3 tablespoons chopped peeled ginger
1/2 pound skinless, boneless chicken breasts, cut into pieces
1 large egg white
1 tablespoon Chinese rice wine or dry sherry
1 tablespoon cornstarch
Kosher salt
2 scallions, white and light-green parts only, thinly sliced
1/4 cup sesame seeds
Peanut oil, for frying

Steps:

Preheat the oven to 200 degrees F. Arrange the bread on a baking sheet and toast in the oven until slightly dry, about 10 minutes; let cool.
Meanwhile, drop the garlic into a food processor through the feed tube with the motor running. Add the ginger, 1 tablespoon at a time, until minced. Scrape down the food processor, then add the chicken, egg white, rice wine, cornstarch and 1 teaspoon salt; pulse into a smooth paste.
Spread 1 tablespoon of the chicken mixture on each piece of toast and sprinkle with the scallions. Put the sesame seeds in a shallow bowl and dip the chicken-covered side of the toasts in the seeds. (The toasts can be covered and refrigerated at this point for up to 3 hours.)
Heat about 1/2 inch of peanut oil in a deep skillet over medium-high heat until a deep-fry thermometer registers 325 degrees F. Working in batches, fry the toasts, chicken-side down, until golden brown and cooked through, about 4 minutes. Flip the toasts and cook 1 more minute. Drain on a paper-towel-lined plate. Season with salt and serve warm.

But even in its simplest form, this rustic toast is always satisfying.

2 slices of bread from a plain rustic loaf, about 1/2-inch thick
1 garlic clove, peeled
1 small ripe red tomato, halved, seeds squeezed out
1 tablespoon extra-virgin olive oil
Flaky sea salt or fleur de sel

Steps:

Toast the bread on both sides under the broiler, on a stovetop grill or over coals, until it is perfectly browned, with a bit of give in the center, about 1 minute per side.
Pressing down firmly, rub the top of each toast with the garlic. Press the tomato, cut side down, against the toast. Rub to moisten the toast and give it a juicy red color.
Drizzle with olive oil and finish with a tiny sprinkle of sea salt. Serve immediately.
