500 grams fully ripe tomatoes
0.5 tsp ground cinnamon
1 Vanilla bean (seeds)
1 organic lemon (zested in strips and juiced)
400 grams jam sugar
2 centiliters gin

Steps:

  • Rinse and trim the tomatoes. Cut into pieces, and puree with an immersion blender. Add the puree to a pot with the cinnamon, vanilla, lemon zest, lemon juice, and the sugar. Set aside and let rest for 30 minutes. Bring to a boil over high hat, stirring constantly. Cook for 4 minutes, then add the gin, if you're using. Remove the lemon zest and fill the prepared jars with the ham. Seal tightly and turn upside down for 10 minutes to cool. Turn right side up and cool completely.

  • Score an X in the bottom of 3 pounds of tomatoes and cook in boiling water for about 30 seconds. Drain, transfer to a bowl of ice water, then peel and dice. Combine the tomatoes with 1 cup granulated sugar, 1/2 cup light brown sugar and 2 tablespoons cider vinegar in a large pot over medium heat. Add 1/2 teaspoon kosher salt, 1/4 teaspoon each ground coriander and cumin and the juice of 1 lemon. Cook, stirring, until thick, about 1 hour; let cool. Serve with cheese and crackers.

3 pounds firm ripe tomatoes, cored and diced (about 8 cups)
1 cup honey
300 grams granulated sugar (1 and 1/2 cups)
1/2 teaspoon lemon zest
2 tablespoons lemon juice
2 vanilla bean pods, split
Pinch fine sea salt

Steps:

  • If you plan to can the jam, prepare the jars according to the instructions here.
  • In a large nonreactive pot, combine ingredients, adding both vanilla seeds and pods to the pot. Simmer over medium-low heat until the mixture is very thick and jammy, about 1 and 1/2 hours. Discard vanilla pods.
  • If canning, spoon into hot sterilized jars and process as directed. Otherwise, let jam cool, then store in refrigerator or freezer.

Good tomatoes and balance are crucial. You need sugar for the kind of gooey, sticky quality we associate with jam; otherwise, all you're producing is a tomato sauce, no matter how different the flavor is from the classic. Once you add that sugar, however, you need acid, because even though tomatoes are plenty acidic, they can't counter all that sugar. I tried lemon juice, vinegar and finally lime, deciding that I liked the last best.

1 1/2 pounds good ripe tomatoes (Roma are best), cored and coarsely chopped
1 cup sugar
2 tablespoons freshly squeezed lime juice
1 tablespoon fresh grated or minced ginger
1 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1 teaspoon salt
1 jalapeño or other peppers, stemmed, seeded and minced, or red pepper flakes or cayenne to taste

Steps:

  • Combine all ingredients in a heavy medium saucepan, Bring to a boil over medium heat, stirring often.
  • Reduce heat and simmer, stirring occasionally, until mixture has consistency of thick jam, about 1 hour 15 minutes. Taste and adjust seasoning, then cool and refrigerate until ready to use; this will keep at least a week.

1 tablespoon extra-virgin olive oil
2 small cloves garlic, minced
1 piece ginger, peeled and minced (1 tablespoon)
1 small red onion, peeled and finely diced
1 can (28 ounces) plum tomatoes
1/2 cup red-wine vinegar
1/4 cup honey
1/4 cup firmly packed brown sugar
1/2 teaspoon ground ginger
Pinch of ground cloves
2 cinnamon sticks
2 star anise

Steps:

  • In a medium saucepot set over medium heat, heat olive oil, add garlic, ginger, and red onion, and saute until translucent. Add tomatoes, breaking them up with a wooden spoon. Add vinegar, honey, brown sugar, ginger, cloves, cinnamon, and star anise.
  • Simmer, stirring occasionally, until tomatoes have dissolved and liquid has evaporated, 60 to 75 minutes. Discard cinnamon sticks and star anise before serving. This jam may be stored in an airtight container in the refigerator for up to 2 weeks.

1 cup water
1/2 vanilla bean, split
4 cups cherry tomatoes, cut in half

Steps:

  • In a small pot, combine the sugar, water and vanilla bean and simmer until sugar is melted.
  • Add the tomatoes and simmer for 5 to 10 minutes or until the tomatoes soften.
  • Strain the mixture and reserve the tomatoes in a small bowl.
  • Return the syrup back to the pot. Place pot over medium heat and reduce by half, approximately 10 minutes.
  • Pour over the tomatoes and chill completely until ready to serve.

3 lbs fully ripe tomatoes
1 lemon, sliced very thin
1 package powdered fruit pectin
4 cups sugar

Steps:

  • Scald, peel, core and quarter tomatoes-Squeeze out seeds and juice reserving only the pulp.
  • Bring to a boil, reduce and simmer for 10 minutes-stirring frequently-uncovered.
  • Measure-you want 3 cups of pulp.
  • Put pulp, lemons and pectin in a large pot-stainless or enamel.
  • Bring to a full boil stirring constantly.
  • Add sugar and boil rapidly for another 3 min.
  • Cool for 5 min, stirring often.
  • Ladle into clean, hot jars leaving 1/4 inch head space.
  • Process for 10 minutes at altitudes up to 1000 feet.

grated rind of 2 large lemons
juice of 2 large lemons
2 cinnamon sticks

Steps:

  • Remove the stem end of the tomatoes and cut into dice. Mix with the sugar and let stand for 3 hours to draw juices. Combine tomato mixture and remaining ingredients in a large pot and cook over low heat until the tomatoes are translucent and the juices are thickened. Discard cinnamon sticks, ladle the jam into hot, sterilized jelly glasses and cover with a thin layer of paraffin. When the paraffin has hardened, cover the glasses.
