3 cups all-purpose flour
¼ cup unsweetened cocoa powder
1 tablespoon ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon salt
2 cups white sugar
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
2 cups shredded zucchini
1 cup chopped walnuts
1 cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.
  • In large bowl, combine flour, cocoa, cinnamon, baking soda, baking powder and salt, mix well. In separate bowl, combine sugar and eggs, beat until well blended. Add oil and vanilla; beat until combined. Stir in zucchini. Add flour mixture; stir just until moistened. Stir in nuts and chocolate chips. Spoon evenly into loaf pans.
  • Bake in preheated oven for 55 to 60 minutes, or until toothpick inserted in center comes out clean. Cool in pans for 10 minutes. Remove bread from pans; cool completely on wire rack.

2 cups sugar
1 cup canola oil
3 large eggs, room temperature
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
2 cups shredded peeled zucchini

Steps:

  • In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, cocoa, salt, baking soda, cinnamon and baking powder; gradually beat into sugar mixture until blended. Stir in zucchini. Transfer to 2 greased 8x4-in. loaf pans., Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

3 eggs
2 cups white sugar
1 cup vegetable oil
2 cups grated zucchini
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
¾ cup semisweet chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans. In a microwave-safe bowl, microwave chocolate until melted. Stir occasionally until chocolate is smooth.
  • In a large bowl, combine eggs, sugar, oil, grated zucchini, vanilla and chocolate; beat well. Stir in the flour baking soda, salt and cinnamon. Fold in the chocolate chips. Pour batter into prepared loaf pans.
  • Bake in preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of a loaf comes out clean.

This is a recipe a co-worker of mine brought in as we are all trying to eat healthy, and makes great use of Zucchini. Also helpful in getting the little ones to eat such a vegetable! It is a heavy bread that is surprisingly tasty.

1/4 cup sugar
1/2 cup splenda sugar substitute
1 teaspoon vegetable oil
1/2 cup Egg Beaters egg substitute
1 cup unsweetened applesauce
1 cup whole wheat flour
1 cup all-purpose flour
1 square unsweetened chocolate square
1 1/4 teaspoons baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups zucchini
2 tablespoons unsweetened cocoa
1/3 cup mini chocolate chip

Steps:

  • Pre-heat oven to 350. Place sugars, oil, and egg beaters in a large mixing bowl and mix until blended. Stir in applesauce. 2 medium zucchinis
1 cup light brown sugar
½ cup granulated sugar
4 large eggs
1 cup canola oil
1 tablespoon apple cider vinegar
2 teaspoons McCormick® vanilla extract
2 ½ cups all-purpose flour, divided
½ cup Dutch-process cocoa powder
2 teaspoons baking soda, divided
1 teaspoon kosher salt, divided
½ cup semisweet chocolate chip
1 teaspoon McCormick® Ground Cinnamon
nonstick cooking spray, for greasing

Steps:

  • Preheat the oven to 350˚F (180˚C).
  • Trim the ends of the zucchini, then grate on the large holes of a box grater. You should have about 3 cups (450 G) total.
  • In a large bowl, whisk together the brown and granulated sugars, eggs, canola oil, apple cider vinegar, and vanilla. Fold in the shredded zucchini.
  • Pour half of the wet ingredients, about 2 cups, into a medium bowl.
  • In a medium bowl, whisk together 1 cup (125 G)flour, the cocoa powder, 1 teaspoon baking soda, and ½ teaspoon salt. Add the cocoa mixture the bowl with half of the zucchini mixture and mix well. Fold in the chocolate chips. Set aside.
  • In a separate medium bowl, whisk together the remaining 1½ cups (185 G) flour, 1 teaspoon baking soda, ½ teaspoon salt, and the cinnamon.
  • Fold the dry ingredients into the remaining bowl of wet ingredients.
  • Grease a 9x5-inch (6 x 12 cm) loaf pan with nonstick spray.
  • Using 2 ¼-cup measures, alternate scooping the batters to the prepared pan to create a marbled effect.
  • Bake until a cake tester inserted in the center of the cake comes out clean, 70-80 minutes.
  • Let the bread cool for 15 minutes in the pan, then transfer to a wire rack to cool completely, about 30 minutes. Slice and serve.

My fabulous co-worker Keli recently mentioned how much she loves chocolate zucchini bread. I've always been a fan of zucchini bread but had never tried it with chocolate. So using Keli as my Guinea pig I gave chocolate zucchini bread a try. This triple chocolate recipe is wonderfully decadent but still somewhat 'healthy'. This recipe makes two regular size loaves or 5 mini loaves (use 1 cup for each mini loaf pan).

1 ounce unsweetened baking chocolate (usually one square)
1 1/2 cups granulated sugar
1/2 cup unsweetened applesauce
1/2 vegetable oil
2 large eggs
1 1/2 teaspoons vanilla extract
2 cups zucchini, shredded
2 1/2 cups flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 cup semi-sweet chocolate chips (tossed in a little flour)

Steps:

  • Pre-heat oven to 350 degrees. Prepare two loaf pans with non-stick spray, set aside.
  • Melt chocolate in a microwave safe bowl in the microwave, stir.
  • Sift together, flour, cocoa powder, salt, baking soda, baking powder, and cinnamon. Set aside.
  • In a large bowl whisk, melted chocolate, apple sauce, vegetable oil, sugar, and vanilla. Add eggs, one at a time, whisking well after each egg. Stir in zucchini.
  • Stir flour mixture into zucchini mixture until combined. Stir in chocolate chips. Pour batter into prepared loaf pans.
  • Bake regular loaf pans for 50-70 minutes, mini's bake in 25-30 minutes in my oven.

Then slowly whisk in the cocoa powder, baking soda, cinnamon, salt, and flour until all the flour mixture is well incorporated, about 2 minutes or 25 strokes. Finally, fold in the chocolate chips.
  • Transfer batter to the loaf pan. Bake for 45 to 50 minutes. Bread should be done when a toothpick inserted comes out clean. Allow the bread to slightly cool in the pan for about 5 minutes, transfer to a rack to cool completely.
  • In a small double boiler, heat 1 tablespoon of heavy cream for 1 minute, then add the chocolate chips. Stir the chips until they melt and remove from heat.
