1 pound sushi grade tuna, finely diced
3 tablespoons olive oil
¼ teaspoon wasabi powder
1 tablespoon sesame seeds
⅛ teaspoon cracked black pepper
sliced French bread

Steps:

  • In a bowl, stir together olive oil, wasabi powder, sesame seeds, and cracked black pepper. Toss tuna into mixture until evenly coated. Adjust seasoning as desired with additional wasabi powder or black pepper. Serve on sliced French bread.

24 Wonton Cones (instructions below)
Sliced scallions and diced red bell pepper, for garnish

Steps:

  • 1. In a nonreactive bowl, mix tuna with remaining ingredients except wonton cones. Chill for up to 6 hours. 2. Place about one tablespoon of the tuna mixture in each wonton cone. Line a deep serving plate with a thick (about one-inch) layer of black sesame seeds. Arrange the cones, pointy-side-down, in the sesame seeds. Garnish with scallion curls and diced red bell peppers. Wonton Cones Makes 2 dozen cones 12 wonton wrappers (2 x 2 inches each) Oil, for deep frying 1. Cut wonton wrappers in half to form two triangles. Fold each half into a cone shape, brushing edge with water to form a seal. 2. Fry in 350° oil until golden brown. Drain on paper towel until cool.

Here are two versions of tuna tartare, one of them a classic ceviche. Be sure not to marinate the tuna in the lime juice for too long or the meat will turn grey.

1 pound albacore or yellowfin tuna, cut in 1/2 inch dice
1/2 small red onion, cut in small dice
1 garlic clove, minced
1 to 2 serrano or jalapeño chiles, to taste, seeded and minced
1 tablespoon capers, rinsed and drained
1 ripe medium avocado, cut in small dice
Salt, preferably kosher salt
freshly ground pepper to taste
1/3 cup fresh lime juice
1/4 cup extra virgin olive oil
1/4 to 1/2 cup chopped cilantro to taste
Leaf lettuce, baby spinach or arugula, or radicchio leaves for serving

Steps:

  • Prepare the tuna and refrigerate while you prepare the remaining ingredients.
  • Place the onion in a small bowl, and cover with cold water. Let sit five minutes, then drain, rinse and dry on paper towels.
  • In a medium bowl, combine the onion, garlic, chile, capers, avocado, salt, pepper and 2 tablespoons of the lime juice. Toss together gently. Add the tuna to the bowl.
  • Stir together the remaining lime juice and the olive oil. Pour over the tuna, and toss the mixture together. Season to taste with salt and pepper. Cover and refrigerate for 15 minutes, stirring gently from time to time.
  • Just before serving, add the cilantro and toss together. Taste and adjust seasonings. Line plates with salad greens, spoon the ceviche on top, and serve.

Feel free to tweak this any way you want, including adding more coconut milk. My wife is on record as preferring twice as much as I used here, which will give you a looser but much more luxurious mixture. This also needs a good amount of salt to bring the flavors together, so taste and adjust carefully. You could certainly use other salty seasonings like soy and/or fish sauce, but you already knew that. Serve with taro, wonton, or sweet potato chips.

1 teaspoon chopped chives
1/2 teaspoon chopped capers
1 teaspoon chopped shallots
1 lemon, juiced
1-ounce extra-virgin olive oil
Salt
Freshly ground black pepper
3 to 6 cucumbers (to make 6 cucumber "boats")
1-ounce American farmed black caviar
6 parsley sprigs

Steps:

  • With a heavy sharp knife, chop tuna into very small slices. In a mixing bowl, combine tuna, chives, capers, shallots, lemon juice, oil, salt and freshly ground pepper and chill for 1 hour. While tuna is chilling, prepare cucumber boats. Peel cucumber and cut into 2-inch long cylinders. With a teaspoon, scoop out the seeds from inside the cucumber disk without touching the very bottom of the cucumber. (In other words, leave a "bottom" in the hollowed-out center of the cucumber.) Season cucumber with salt and pepper. Fill with 1-ounce of tuna tartare. Top with 1/8 teaspoon of caviar. Finish with a sprig of parsley.

1 teaspoon soy sauce

4 tablespoons currants
1 tablespoon vegetable oil
1 teaspoon minced fresh ginger
1/2 teaspoon minced garlic
1/2 teaspoon sesame oil
2 ripe avocados
1/8 teaspoon cayenne pepper
1/4 teaspoon ground cumin
1/8 teaspoon paprika
1 tablespoon olive oil
Salt and freshly ground black pepper

Steps:

  • In a medium stainless mixing bowl combine the diced tuna, coconut, soy sauce, 1 tablespoon of the lime juice, rice wine vinegar, almonds, currants, vegetable oil, ginger, garlic, and sesame oil. Toss well and season with salt and pepper. Cover and refrigerate until ready to serve.
  • Peel and halve the avocados and remove the pits. Give them a rough chop and place them in a small stainless mixing bowl. Add the remaining lime juice, cayenne, cumin, paprika, and olive oil. Mash the seasoned avocado with a sturdy whisk until creamy in texture and season with salt and pepper.
  • To serve: Divide the avocado mixture equally into the bottom of 8 martini glasses. Separate the tuna into eight equal portions and spoon on top of the avocado.

3/4 teaspoon Asian sesame oil
8 ounces sushi-quality ahi tuna steak, cut into 1/3-inch cubes
1 medium avocado, halved, pitted, peeled, cut into 1/3-inch cubes
1 cup 1/3-inch cubes seeded English hothouse cucumber
1 green onion, finely chopped
Toasted sesame seeds
Chopped fresh chives
California caviar (preferably ginger-flavored whitefish roe)
*Wasabi paste (horseradish paste) can be found in tubes in the Asian foods section or freshly made in the sushi section of most supermarkets.

Steps:

  • For crisps:
  • Preheat oven to 350°F. Line large rimmed baking sheet with parchment paper. Arrange wonton triangles on sheet; brush each with olive oil and sprinkle with sesame seeds. Bake until triangles are golden brown, about 9 minutes. Cool on sheet. Do ahead Can be made 8 hours ahead. Let stand at room temperature.
  • For tartare:
  • Whisk first 5 ingredients in medium bowl to blend. Add tuna, avocado, cucumber, and green onion; stir gently to coat. Spoon tartare into bowl; sprinkle with sesame seeds and chives and place on platter. Spoon caviar into small bowl and place alongside. Surround with crisps.

3 1/2 tablespoons extra virgin olive oil
1 large avocado, peeled, pitted, and diced
1 jalapeno chile, seeded, deveined and minced
1/3 cup fresh cilantro, chopped
1/3 cup red onion, chopped
1/4 cup fresh lime juice
2 teaspoons fresh oregano, chopped (optional)

Steps:

  • Brush the tuna with 1/2 tb. of the oil and sprinkle it with salt and pepper.
  • Put a heavy skillet on high heat for a few minutes, then sear the tuna for about 3 minutes on each side. The tuna should be brown on the outside and nearly opaque on the inside.
  • Let the tuna cool, then chop it into small pieces.
  • Combine all the ingredients, stirring just to blend.
  • Salt and pepper to taste, and chill.
  • Serve with tortilla chips or baguette slices.

2 tablespoons olive oil
3 tablespoons sesame seeds
6 ounces sushi-grade tuna, cut into 1/4-inch dice
2 tablespoons green onions, green parts only, finely chopped
2 tablespoons sesame seeds, toasted
2 tablespoons soy sauce
1 teaspoon sesame oil
1 teaspoon peeled and grated fresh ginger
1 garlic clove, minced
3/4 teaspoon orange zest
2 tablespoons cilantro, finely chopped
1/2 teaspoon kosher salt
1 avocado, cut into 1/4-inch dice
2 teaspoons lime juice
fresh cilantro stem (to garnish)

Steps:

  • Sesame Wonton Crisps: Preheat oven to 350°F Line a baking sheet with parchment paper. Cut the wonton squares on an angle to make two triangles. Arrange the wonton triangles on the baking sheet. Spray with olive oil on one side (or brush lightly). Sprinkle lightly with sesame seeds. Bake until golden, about 6 minutes. (Can burn easily so watch carefully). Let cool. 2 pounds center-cut yellow or blue fin tuna, 3 inches in diameter
1 egg white, beaten until foamy
1/2 cup fresh coarsely ground white pepper
1/2 teaspoon ground coriander seed
3 to 4 tablespoons grape-seed or safflower oil
8 cups mixed greens: combination of bibb, mache, radicchio and chicory, dressed with vinaigrette
Sauce (see recipe)

Steps:

  • Brush egg white on all sides of the tuna with a pastry brush.
  • Mix the ground pepper and coriander and press the tuna into this mixture, using as much of it as necessary to cover each side and the ends.
  • Heat a heavy saute pan and pour about half of the oil into the pan. Bring to the smoking point and carefully place the tuna in the pan. Sear each side until dark brown and crusty, adding more oil if needed to keep the tuna from sticking. Sear the ends as well. Each side should take about one to one and a half minutes. Remove the tuna and let it rest for at least 10 minutes before slicing.
  • Using a very sharp knife, cut the tuna into one-half- to one-third-inch slices, allowing three slices per serving.
  • Arrange the dressed salad greens on each of eight plates at 12 o'clock.
  • In a semicircle, overlap three slices of tuna below the greens, with the top edges of tuna resting on the salad. At the base of each piece of tuna, place a dollop of the sauce.
