MOM'S BEST EVER TURKEY MEATLOAF

This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

1 lb ground turkey breast
1/2 cup fat free egg substitute or 2 eggs
1/4 cup bell pepper, finely diced
1/2 cup onion, chopped
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons bottled minced garlic or 6 garlic cloves, minced
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce, divided
1 teaspoon dried basil
1 cup tomato sauce
3/4 cup rolled oats, not instant oatmeal
cooking spray

Steps:

  • Spray 9 x 5 loaf pan with cooking spray.
  • Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
  • Add more egg if too dry, or add more oatmeal crumbs if too wet.
  • Press turkey mixture into pan.
  • Bake at 375°F for 45 minutes.
  • Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
  • Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
  • Return to oven for an additional 15- 20 minutes.
  • If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
  • If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.

1 tablespoon vegatable oil
1 onion, chopped fine
2 garlic cloves, minced
1/2 teaspoon dried thyme
1/2 cup ketchup
1/4 cup packed light brown sugar
4 teaspoons cider vinegar
2 large eggs
1/2 cup milk
2 teaspoons worchestershire sauce
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon Tabasco sauce
2 lbs ground turkey
1 1/3 cups breadcrumbs
1/3 cup parsley

Steps:

  • 1. Heat oven to 350.
  • 2. Heat oil in skillet over medium heat. Add onion and cook until softened 5-10 minutes. Add garlic and thyme and cook until fragrant, about 15 seconds. Set aside and cool.
  • 3. Meanwhile, mix together ketchup, brown sugar, and vinegar. Set aside.
  • 4. In seperate bowl, mix the eggs, milk, Worcestershire, salt, pepper, and Tabasco.
  • 5. Mix in meat, breadcrumbs, parsley, onion mixture, half of ketchup mixture with egg mixture until mixture doesn't stick to bowl. Add more milk until it doesn't stick.
  • 6. Put meat into greased 3 6-hole muffin tins (18 holes total). Brush the tops with the other half of th ketchup mixture. Bake for 30 minutes. Let cool for 10 minutes.

I got this from Ellie Krieger's cookbook The Food You Crave. I absolutely love this meatloaf, and so does my family. It may seem kind of mushy in the process of making, but after cooking it holds up well. The sauce is good too, and we never eat meatloaf with sauce. This meatloaf is nice, tender, and moist, and the family didn't miss the ground beef! I made this as "meatballs" or mini-meatloaves for a demonstration I gave to the elderly on heart healthy recipes, and they gobbled them up! Many asked for the recipe - I'm glad a printed out a few dozen copies! A great alternative to the regular ground beef variation.

3/4 cup quick-cooking oats
1/2 cup skim milk
1 medium onion, peeled
2 lbs ground turkey breast
1/2 cup red bell pepper, seeded and chopped
2 large eggs, beaten
2 teaspoons Worcestershire sauce
1/4 cup ketchup
1/2 teaspoon salt
fresh ground black pepper
1 (8 ounce) can no-salt-added tomato sauce

Steps:

  • Preheat oven to 350 degrees.
  • In a small bowl, stir together oats and milk and soak at least 3 minutes.
  • In the meantime, Thinly slice 1/4 of the onion into rings and set aside. Finely chop the rest of the onion.
  • In a large bowl, combine turkey, oatmeal mixture, chopped onion, bell pepper, eggs, Worcestershire, ketchup, salt, and a few grinds of pepper. Mix just until well combined.
  • Transfer to a 9x13 baking dish and shape into a loaf (about 5" wide and 2" high). Pour tomato sauce over the loaf and sprinkle with the sliced onions. Bake until 160 degrees, or one hour. (Estimate).
  • Remove from oven and let sit 10-15 minutes before serving.

1 medium onion, finely chopped
1 tablespoon canola oil
2 eggs
1/2 cup 2% low-fat milk
2 teaspoons lemon juice
1 teaspoon salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
2 cups whole wheat bread crumbs, soft
1 (10 ounce) package frozen spinach, thawed and squeezed dry
2 1/2 lbs lean ground turkey
1/2 cup salsa
1 tablespoon butter

Steps:

  • In a skillet, saute onion in oil until tender; set aside.
  • In a bowl, combine the egs, milk, lemon juice, salt, basil, oregano and pepper. Add the bread crumbs, spinach and reserved onion; stir to combine. Crumble turkey over mixture and mix until blended.
  • Shape mixture into a 12x5-inch loaf; place in a 13x9x2-inch baking dish coated with nonstick cooking spray.Spoon salsa over top.
  • Bake, uncovered at 350 degrees for 30 mintues. Drizzle with butter; bake 30-35 minutes longer or until a meat thermometer reads 165 degrees.
