2 small zucchini
2 Tbsps Avocado oil
1 clove garlic cloves (minced)
0.5 lemon (juiced)
1 Tbsp Nutritional yeast (or powder)
small bunch of thyme
Saffron
salt
freshly ground peppers

Steps:

  • Cook the pasta in a large saucepan of salted, boiling water until 'al dente'; 8 - 10 minutes.
  • Meanwhile, prepare the courgette by peeling into thin strips using a vegetable peeler. Heat the oil in a large saute pan set over a medium heat until hot.
  • Add the garlic and fry for 30 seconds. Add the courgette and continue to fry for a further 3 - 4 minutes until softened.
  • Drain the pasta, reserving half a cup of the cooking liquid, and add to the courgette. Toss well, loosening with a little of the cooking liquid.
  • Season to taste with salt and pepper. Spoon the pasta into bowls and garnish with the yeast, thyme, and saffron threads on top.

3/4 pound whole-wheat fettuccini
2 medium green zucchini (about 1 pound)
2 medium yellow zucchini (about 1 pound)
3 tablespoons olive oil
4 cloves garlic, chopped
1 cup low-sodium chicken broth
1/4 cup grated (1-ounce) Parmesan (lightly packed), plus 2 tablespoons
1/3 cup finely minced parsley leaves, plus more for garnish
1 cup thinly sliced basil leaves, plus more for garnish
1/2 teaspoon red pepper flakes
1/2 teaspoon fresh ground black pepper

Steps:

  • In a large pasta pot, cook pasta "al dente", 1 or 2 minutes less than the package instructions call for. Drain.
  • Meanwhile, slice off ends of zucchini and discard. Cut zucchini in half lengthwise. Using a mandoline, or carefully with a sharp knife, slice zucchini into very thin (about 1/8-inch) slices, trying to keep some skin on each piece for color. Stack slices and cut in half lengthwise. Reserve zucchini ribbons in a large bowl.
  • In the pasta pot, heat the olive oil over low-medium heat. Add garlic and cook until soft and translucent but not browned, about 1 minute. Add zucchini ribbons and 1/4 cup chicken broth, raise heat to medium-high and cook until zucchini is still somewhat firm but just cooked, about 3 minutes. Return pasta to pot and add remaining chicken stock; cook for 2 to 3 minutes, until liquid has mostly absorbed into the pasta. Add 1/4 cup of the Parmesan, parsley, basil, red pepper flakes, black pepper and toss to combine. Season with salt, to taste. Serve garnished with additional parsley, basil and the remaining 2 tablespoons of cheese.

1 pound farfalle
1/4 cup extra-virgin olive oil

  • Cut zucchini crosswise into 1/8-inch-thick slices and in a colander toss with salt. Let zucchini stand to drain 45 minutes. Pat zucchini dry.
  • While zucchini is draining, cut basil into thin strips and bring a 6-quart pasta pot three fourths full with salted water to a boil for farfalle. Cook pasta in boiling water until al dente and ladle out and reserve 1 cup pasta cooking water. Drain pasta in colander.
  • While pasta is cooking, in a deep 12-inch heavy skillet heat oil over moderately high heat until hot but not smoking and sauté zucchini, stirring occasionally, until golden and tender, about 7 minutes. Reduce heat to low and stir in half of basil. Stir in pasta and butter and gently toss until butter is melted. Stir in 1/2 cup reserved pasta water and gently toss (adding more pasta water as needed if mixture becomes too dry). Stir in 1/2 cup Parmigiano-Reggiano, remaining basil, and salt and pepper to taste.
  • Serve pasta with additional cheese.

Steps:

  • In a large bowl gently stir together tomatoes, onion, garlic paste, vinegar, and 1/4 cup oil
  • Brush one side of zucchini slices lightly with additional oil and season with salt and pepper. Heat a well-seasoned ridged grill pan over moderate heat until hot and grill zucchini, oiled sides down, in batches, brushing tops with more oil before turning, 1 to 2 minutes on each side, or until just tender but not soft. I'm not a big fan of zucchini apart from zucchini bread, but it tastes really good in this recipe. From "River Cafe Cook Book Easy" by Rose Gray and Ruth Rogers. Please note: Standing times are included in the cooking time.

1 lb zucchini, cut into matchsticks
1 tablespoon kosher salt
3/4 lb tomatoes
3 tablespoons capers, rinsed
2 garlic cloves, minced
1 pinch dried red pepper flakes
2 teaspoons dried oregano
2 tablespoons white wine vinegar
5 tablespoons extra virgin olive oil
1/2 lb whole wheat spaghetti
ground black pepper

Steps:

  • In a large mesh colander, toss the zucchini with the salt.
  • Let sit 15 minutes.
  • Pick up handfuls and gently squeeze out the moisture.
  • Pat dry and return to the colander.
  • Cut the tomatoes in half at the equator.
  • Squeeze the seeds and juice into a medium sieve over a medium bowl.
  • Chop the tomatoes coarsely and add to the bowl with the juice.
  • Press the pulp in the sieve to extract the juice and discard the solids.
  • Add the capers, garlic, red pepper flakes and dried oregano to the bowl.
  • Stir in the vinegar, then 3 tablespoons of the oil.
  • Marinate 15 to 20 minutes.
  • Meanwhile, bring a large pot of water to a boil on high heat.
  • Cook the spaghetti until tender but firm, about 10 minutes.
  • Drain.
  • Meanwhile, heat the remaining 2 tablespoons of oil in a large skillet on medium-high.
  • Add the zucchini and cook, stirring frequently, until lightly browned, about 3 to 5 minutes.
  • Stir in the tomato mixture.
  • Scrape the bottom of the pan and remove from the heat.
  • When the spaghetti is cooked, add it to the skillet.
  • Sprinkle in the pepper.
  • Toss to coat with the zucchini mixture.
  • Adjust the salt and scatter oregano leaves over the top for a garnish.
  • Serve with parmesan cheese.

Steps:

  • Grate the onion and zucchini in a seperate bowl.
  • In large skillet warm the olive oil and add the grated onion to the skillet. Cook at medium heat until they become translucent then just barely golden.
  • Next add the zudchini and cook until barely golden also. For the first minute or two raise the heat a bit then turn it back to medium. Don't burn the zuchinni they may turn bitter. Cook for 8-12 minutes.
  • Salt and pepper to taste. If the sauce is a little too dry add a little more olive oil.
  • Add the finely chopped garlic in the center of the skillet give it a minute or so then add the fresh chopped rosemary herb and cook for a minute. Fold gently and turn off the heat.
  • Meanwhile you should have your pasta boiling and ready for the sauce. Add the cooked al dente pasta to the sauce and mix gently. Add just a little pasta water if needed. Plate each dish and drizzle a little olive oil, freshly grated romano, parmesan or even gorganzola cheese on top. Che buono!
