Steps:
- In a medium bowl, stir together flour, baking soda, spices and salt, set aside.
- In a large bowl, beat shortening with an electric mixer on medium speed for 30 seconds. Add brown sugar and beat until mixture is combined, scraping sides of bowl occasionally.
- Beat in egg and molasses until combined. Add flour mixture 1/2 cup at a time till fully mixed. Cover and chill 1 to 2 hours or until dough is easy to handle.
- Place granulated sugar in a small bowl. Shape dough into 1-inch balls. Roll balls in sugar to coat.
- Place about 1 1/2 inches apart on lightly greased cookie sheets. Bake in 350* oven for 8-10 minutes or until bottoms are light brown and tops are puffed, do not overbake.
- Cool on cookie sheets for 2 minutes. Transfer to wire racks and let cool.
- Store cookies in an airtight container at room temperature for up to 3 days or freeze for up to 3 months.

BLUE RIBBON WINNER HOLIDAY CUTOUT COOKIES
Cut-out dough that is soft and easy to work with. Extremely light and thin with a unique almond flavor. Cream of tartar gives them a crispy snap like a European cookie. Frost and decorate for all the special occasions throughout the year. If desired, sprinkle with sugar decorations before baking. Minnesota State Fair Blue Ribbon Winner.

Steps:
- Cream shortening and butter with powdered sugar til light and fluffy.
- Add eggs one at a time til incorporated; mixing well; add extracts til blended.
- Sift flour, baking soda and cream of tartar in separate bowl. Stir with whip until well blended.
- Add dry mixture to batter; mixing just until incorporated and creamy. Do not overbeat.
- Chill in bowl for at least 4 hours or overnight.
- Roll out on lightly floured board or between Saran Wrap sheets.
- Cut out and transfer to lightly greased cookie sheets.
- Bake at 350° for 8-10 minutes. Do not overbrown. Edges should be very light brown.
- Leave on cookie sheet exactly one minute before transferring to cooling rack. The cookie should have a crisp melt in your mouth texture.

- Dishpan Cookies. I’m fully convinced that this recipe came about from someone just throwing things together. That being said, it turned out perfectly and is now being shared by Debbie Quimby over at Just a Pinch.
- Blue Ribbon Chocolate Chip Cookies. You know it’s great when you can take a traditional cookie that will leave the judges wondering what makes it so special until they taste it.
- Carrot Cake Cookies. Any time you make a cookie and add icing to it, you know it’s a winner. After all, we eat with our eyes first and many people have eyes that say, “Ooohhhh, icing, yum!”
- Cookies and Cream. Dare I say, a cookie within a cookie! This one has already won because it combines one thing we all love and does it two different ways.
- Strawberry Lilies. The cookies are soft, made with cream cheese and the strawberry jelly poking out of the top makes it that much more beautiful. If we make them next year, I am going to have my students fold the cookies to look like envelopes and call the cookies “Love notes”.
- Texas Sheet Cake Cookies. I chose this one because it did win at the Johnson County Fair this year. I can understand why because I love Texas sheet cake and it represents what we stand for to some extent.
- Monster Cookies. I think if we do this, one I might add a few more ingredients and call it trail mix cookies since it already has M&Ms and raisins in them.
- Turtle Thumbprint Cookies. I love traditional turtle recipes with the caramel, nuts, and chocolate. Turning them into a cookie is a great idea, similar to that of the Texas sheet cake.
- Mississippi Mud Cookies. So, we are stuck on the chocolate and nuts. But some homemade marshmallows (if you’re feeling extra adventurous) would make a delicious cookie for all to love.
- Blueberry Cheesecake Macarons. I am ninety-nine percent sure that someone will be making macarons next year. You know why? Because I have several classes that asks to make them on a regular basis.

- In a separate mixing bowl using a hand mixer, cream butter and sugars together until light and fluffy. Add eggs, one at a time, beating well after each addition. Add vanilla and mix until incorporated.
- Combine dry and wet ingredients. Don't over mix. Add chocolate chips. Cover with plastic wrap and allow to sit in the fridge overnight, or up to 3 days.
- When ready to bake, preheat oven to 350F*. To get the cookies just the right size, use a standard cookie scooper - then divide that amount in half. Place cookie dough balls evenly onto a baking sheet. Bake for 8 to 10 minutes, or until barely done. You want to under-baked these cookies slightly so they turn out soft and gooey.
