This recipe is from an authentic civil war cookbook. Of course they had to adapt measurements etc. to be more understandable to us. I made this when I was trying to find a simple bread recipe, as I wasn't in the mood for kneading, rising etc. and had limited ingredients on hand. It was easy and turned out great. It is best warm with butter, be forewarned, it is a dense and sweet bread. The original recipe called for 1 C. molasses, which I thought was a bit much (and I love molasses), so I have put it here as 1/2 C. I have not made it that way yet, but you might want to try 1/2 C the first time, and then decide if you want to increase it thereafter. I hope you enjoy making this piece of history, and imagining what a treat this would have been for the exhausted soldiers.

  • Mix salt, soda, and 1 1/2 C of flour together.
  • Add remaining ingredients; beat 5 minutes.
  • Place batter in 2 greased and floured loaf pans.
  • Bake in low oven (300 deg) for about 1 1/2 hours, or until bread tests done.

1/2 cup packed old-fashioned oats
3/4 cup boiling water
1 cup warm water (105°F to 115°F)
1 envelope dry yeast
6 tablespoons lightly unsulfured molasses
2 tablespoons (1/4 stick) butter, room temperature
1 1/4 teaspoons salt
4 1/2 cups (about) unbleached all purpose flour
1 tablespoon melted butter mixed with 1 teaspoon light unsulfured molasses (glaze)
1 tablespoon old-fashioned oats

Steps:

  • Place 1/2 cup oats in large bowl of electric mixer fitted with dough hook; pour 3/4 cup boiling water over. Let stand 30 minutes (water will be absorbed and oatmeal will be very soft).
  • Pour 1 cup warm water into 2-cup glass measuring cup. Sprinkle yeast over; stir to blend. Let stand until yeast dissolves, about 10 minutes. Mix molasses, 2 tablespoons butter and salt into oat mixture in bowl. Mix in yeast mixture. Add enough flour, 1 cup at a time, to form medium-soft dough, mixing at medium speed until well blended, about 3 minutes. Turn out dough onto floured surface. Knead until smooth and elastic, adding more flour if dough is too sticky, about 5 minutes. Form dough into ball. Butter large bowl; add dough, turning to coat. Cover bowl with plastic wrap, then towel. Let dough rise in warm draft-free area until doubled in volume, about 1 hour.
  • Position rack in center of oven and preheat to 400°F. Butter 9x5-inch loaf pan. Punch down dough; turn out into floured surface and knead 3 minutes. Form into 8-inch-long loaf. Transfer to prepared pan. Cover with plastic, then towel; let rise in warm draft-free area until dough has risen about 1/2 inch above rim of pan, about 45 minutes.
  • Bake bread 10 minutes; reduce temperature to 350°F. Bake 25 minutes longer. Brush top of bread with glaze; sprinkle 1 tablespoon oats over. Bake until bread is golden and sounds hollow when tapped on bottom, about 10 minutes longer. Transfer to rack; cool in pan 10 minutes. Turn out brad onto rack; cool completely. (Can be made 2 weeks ahead. Wrap tightly in foil and freeze. If desired, reheat wrapped bread in 350°F oven about 15 minutes.

1 1/2 cups warm coffee (about 100 degrees F)
1 tablespoon brown sugar
2 1/4 teaspoons active dry yeast
2 1/4 cups bread flour
1 1/2 cups whole-wheat flour
1 tablespoon cocoa powder
1/3 cup honey
2 tablespoons salted butter, softened
2 tablespoons molasses
Olive oil, for greasing and drizzling

Steps:

  • Mix together the warm coffee and brown sugar in a small pitcher. Mix in the yeast and set aside for a couple minutes to bloom.
  • In the bowl of an electric mixer, mix together the bread flour, whole-wheat flour and cocoa powder. Add in the coffee/yeast mixture, as well as the honey, butter and molasses. With the dough attachment, mix on medium until a ball begins to form, about 2 minutes. Reduce the speed to low and knead for an additional 6 minutes.
  • Grease a large bowl with olive oil; put the dough in it and cover with plastic wrap. Place in a warm spot in the kitchen and let rise until doubled in size, about 2 hours.
  • Divide the dough in half, form into 2 tight balls and put on a baking sheet. Drizzle the tops with olive oil and cover very loosely with plastic wrap. Allow to rise again for 45 minutes to 1 hour.
  • Preheat the oven to 375 degrees F.
  • When the dough is ready, remove the plastic wrap. With a serrated knife, cut an X in the top of each round. Carefully transfer the dough to two 10-inch cast-iron skillets. Place both skillets on the center rack of the oven and bake until the crusts are browned and the centers are set, about 30 minutes. Transfer to a cooling rack and allow to cool for at least 15 minutes before slicing.

Cover and let rise until doubled, about 30 minutes., Meanwhile, preheat oven to 375°. Bake 35-40 minutes or until golden brown. Remove from pans to wire racks to cool.

1 cup water
1 tablespoon water
½ cup molasses
1 tablespoon vegetable oil
1 tablespoon white sugar
1 teaspoon salt
1 cup quick-cooking oats
3 cups bread flour
2 ¼ teaspoons bread machine yeast
1 tablespoon quick-cooking oats, or to taste

Steps:

  • Place 1 cup plus 1 tablespoon water, molasses, oil, sugar, salt, 1 cup oats, bread flour, and yeast in a bread machine in the order listed. Run "Dough" cycle.
  • Remove dough from the bread machine. Shape into a round loaf, tucking ends in underneath. Transfer to a baking sheet and cover loosely with lightly oiled plastic wrap. Let rise until puffy, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Uncover dough and sprinkle 1 tablespoon oats on top.
  • Bake in the preheated oven until golden brown, about 40 minutes.

My father in law used to make the best stuffing and unfortunately he died before I ever got to learn how to make it. I searched and searched and this recipe got me closer than any other. I found it on a website..but I am sorry to say I don't know which one. I never stuff the turkey, I always bake this on the side. I also tear up the bread and lay it on the counter on paper towels the night before I am going to make it. I did not include this time in prep time. I have added fresh mushrooms before and that is wonderful too!

1 lb ground pork sausage
1 1/2 tablespoons butter
8 stalks celery, chopped
3 onions, chopped
3 loaves day-old white bread, torn into small pieces
2 1/2 teaspoons poultry seasoning
salt and pepper
3 eggs
1 1/2 cups chicken broth

Steps:

  • Place sausage in a large skillet. Cook over medium high heat until browned. Drain on paper towels, set aside.
  • Wipe out pan with paper towels and return to burner. Put butter in the pan to melt. Place the celery and onions in the pan and cook until tender.
  • In a large bowl place the bread, sausage, celery, onions and seasonings.
  • Beat the eggs in a small bowl and then mix into sausage/bread mixture.
  • Pour broth over the mixture and mix. The mixture shoudl be moist and not mushy. Add more broth if needed.
  • Place in large baking dish and bake at 350 degrees for 45 minutes or until heated through and a nice crust has developed on top.
