1/2 cup crushed amaretti cookies, plus 2 whole cookies for garnish
2 scoops coffee ice cream
2 scoops vanilla bean ice cream

Steps:

  • Divide 1/3 of the crushed amaretti cookies in the bottom of two parfait glasses. Place a scoop of coffee ice cream in each glass. Sprinkle another 1/3 of crushed cookies into glasses. Top each glass with a scoop of vanilla ice cream and remaining 1/3 of crushed cookies, then garnish with a whole cookie.

1 ½ cups white sugar
3 egg whites
1 teaspoon almond extract

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Line baking sheets with parchment paper.
  • In a food processor, grind the almonds into a fine meal. Add the sugar and continue to process for another 15 seconds. Finally, add egg whites and almond extract, continue to process until a smooth dough forms around the blade.
  • Using a teaspoon, place well rounded spoonfuls of dough onto prepared baking sheets. Cookies should be at least 1 1/2 inches apart. Bake in preheated oven for 20 to 30 minutes. Cookies should be golden. Allow cookies to cool completely on the paper before removing. Store in a dry place.

2 large egg whites, room temperature
1/2 cup confectioners' sugar

Steps:

  • Crumble almond paste into a food processor; add sugar and pulse until evenly combined. Add egg whites and process until incorporated. Transfer mixture to a bowl. Sift together confectioners' sugar and cocoa; gradually add to almond mixture and mix well., Drop by tablespoonfuls 2 in. apart onto parchment-lined baking sheets. Bake at 350° until tops are cracked, 17-20 minutes. Cool for 1 minute before removing from pans to wire racks. Store in an airtight container.

1 tablespoon unsalted butter
Pinch of kosher salt
12 ounces good-quality bittersweet chocolate, coarsely chopped
1/4 cup almond butter
1/2 teaspoon almond extract
1/2 teaspoon pure vanilla extract
1 to 2 cups crushed amaretti cookies

Steps:

  • Put the cream, butter and salt in a small saucepan and bring to a simmer over medium heat. Put the chocolate in a large heatproof bowl, pour the hot cream mixture over the chocolate and let it sit until completely melted, about 10 minutes. Stir the chocolate-cream mixture with a whisk or rubber spatula until combined and smooth. Stir in the almond butter and almond and vanilla extracts, then whisk until the ganache is smooth and shiny. Transfer the ganache to a shallow container, cover and refrigerate until firm, at least 3 hours and up to overnight.
  • Line a baking sheet with parchment. Put the crushed amaretti in a shallow dish. Scoop tablespoons of the firm ganache, roll into balls and coat in the amaretti crumbs. Transfer the coated truffles to the prepared baking sheet, cover with plastic wrap and refrigerate until firm, at least 1 hour or up to overnight.

1 cup water
1/2 cup granulated sugar
1/4 teaspoon coarse salt
6 ounces cream cheese, softened
3/4 cup part-skim ricotta
1/2 teaspoon pure vanilla extract
1/4 cup confectioners' sugar
8 amaretti cookies, coarsely crumbled

Steps:

  • Combine cherries, water, granulated sugar, and 1/8 teaspoon salt in a small saucepan over medium heat. Bring to a simmer, and cook, stirring occasionally, for 20 minutes. Let cool.
  • Meanwhile, blend cream cheese, ricotta, vanilla, confectioners' sugar, and remaining 1/8 teaspoon salt in a food processor until smooth. Divide cherries among 4 glasses, then top each with ricotta mixture. Sprinkle tops with crumbled amaretti cookies, and serve immediately.

1 tablespoon cornstarch
1 teaspoon cinnamon
2/3 cup sugar
1 teaspoon finely grated lemon zest
1 cup ground almonds
2 large egg whites
1 teaspoon almond extract
1/4 cup icing sugar
1 cup mascarpone cheese
1/2 cup sour cream
1/3 cup light brown sugar, packed
1 teaspoon vanilla extract
1 teaspoon almond extract
2/3 cup whipping cream
1 1/2 cups pitted sweet cherries
1 tablespoon kirsch
2 tablespoons sugar
1/3 cup sliced almonds, lightly toasted

Steps:

  • For amaretti, preheat oven to 350°F and line a baking tray with parchment paper.
  • Sift flour, cornstarch, cinnamon and 1/3 cup of sugar and lemon zest over ground almonds and toss to blend.
  • In a separate bowl, whip egg whites until foamy, then gradually add remaining 1/3 cup sugar. Whip until whites hold a stiff peak.
  • Stir in almond mixture and add almond extract.
  • Shape teaspoonfuls of dough into balls, wetting your hands with cool water to prevent sticking. Sift icing sugar over cookies and bake for 15 to 18 minutes, until lightly browned.
  • Allow to cool, then store in an airtight container.
  • For almond cream, stir mascarpone, sour cream and brown sugar together to dissolve sugar.
  • Stir in extracts.

2 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped

Steps:

  • Using handheld electric mixer, beat sugar, egg yolks, corn syrup, and amaretto in large metal bowl to blend. Place bowl over saucepan of simmering water (do not allow bottom of bowl to touch water). Beat until candy thermometer registers 160°F and parfait base is thick and billowy, about 8 minutes. Remove bowl from over water. Continue to beat parfait base until cool, about 7 minutes. Fold in 1/2 cup almonds.
  • Beat cream and vanilla in another large bowl until soft peaks form. Fold cream into cool parfait base in 3 additions. Transfer parfait to 13x9x2-inch glass baking dish. 1 pint premium vanilla ice cream, slightly softened
8 to 12 amaretti cookies (Italian macaroons)*
2 thin orange slices, cut in half (optional)

Steps:

  • Brew espresso with 3 cups water in coffeemaker. Pour coffee into small metal pan. Add 1/2 cup sugar; stir to dissolve. Freeze 2 hours, stirring twice. Cover and freeze without stirring until solid, at least 6 hours or overnight. Using fork, scrape granita into icy crystals, then toss to mix. Cover; keep frozen. Mix orange juice, liqueur, orange peel, and 1 tablespoon sugar in medium bowl until sugar dissolves. Transfer 2 tablespoons mixture to small bowl to use as sauce; chill.
  • Mix ice cream into remaining orange mixture. Cover; freeze until firm, at least 6 hours.

150 g good dark chocolate (at least 55% cocoa solids, preferably 70%)
50 g amaretti (biscuits)
100 g sliced almonds
175 g caster sugar
1 orange, zest of, finely grated
100 g butter, cubed
4 eggs, beaten
cocoa powder or icing sugar, for dusting

Steps:

  • Preheat the oven to 180C/350F/Gas Mark 4.
  • Line the base of a 20cm-diameter springform tin with greaseproof paper and butter the sides.
  • Melt the chocolate in a bowl sitting over a saucepan of simmering water.
  • Place the amaretti biscuits, almonds, sugar and orange zest in a food processor, then whizz until the biscuits and almonds are almost finely ground .(not too fine).
  • Add the butter and eggs, whizz until blended, then add the melted chocolate and briefly whizz again until well combined.
  • Pour into the prepared tin and pop straight in the oven.
  • Cook for 35-45 minutes until the cake is puffed and slightly cracked around the edges.( test with a skewer after 35 minutes, it should come out clean)
  • Remove and leave to sit for 15 minutes before carefully transferring to a plate.
  • The top is quite crisp, and cracks easily, dust it with lots of icing sugar or cocoa powder before serving, to hide any imperfections.
