ANISE AND PEAR BUBBLY

2 cups pear nectar
1 cup pear liqueur (recommended: Poire William)
2 star anise
4 bottles Prosecco
16 cranberries

Steps:

  • In a small saucepan over moderate heat, add the nectar, pear liqueur and star anise. Bring up to a boil and turn heat off. Allow to steep for 5 minutes, then discard the star anise. Cool to room temperature and chill until ready to use.
  • To serve, drop 1 cranberry to the bottom of each champagne coupe or flute. Add 2 tablespoons of the spiced pear mixture for coupe glasses and 3 tablespoons for the flute glasses. Top with Prosecco and enjoy!

  • Peel, halve and core 2 pears. Put in a shallow dish with 1 cup water, 1/3 cup sugar, 1 cinnamon stick and 1 star anise pod. Cover with plastic wrap and microwave until the pears are soft, 8 minutes. Meanwhile, beat 1/2 cup heavy cream with 1 tablespoon sugar and 1/4 teaspoon ground cinnamon until soft peaks form. Serve the pears with the syrup and cinnamon cream.

Steps:

  • In a saucepan, combine water, sugar, lemon juice, and aniseed. Bring to a boil over medium heat, stirring occasionally. Add pears.
  • When water returns to a boil, reduce heat slightly, cover saucepan, and simmer until pears are just tender, about 6 to 10 minutes.
  • Cool slightly, then place in a shallow bowl and chill.

1/2 cup sugar
2 tablespoons plus 1 1/4 cups water
3 whole star anise
4 whole cloves
1 cinnamon stick
1/2 vanilla bean, cut crosswise in half
4 medium-size firm but ripe Anjou or Bosc pears (about 2 pounds), peeled, quartered, cored

Steps:

  • Combine sugar, 2 tablespoons water, star anise, cloves, cinnamon stick and vanilla bean in heavy large saucepan. Stir over low heat until sugar dissolves. Increase heat and boil without stirring until syrup turns deep amber, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 9 minutes. Remove from heat. Add 1 1/4 cups water (mixture will bubble vigorously). Bring to simmer, stirring until pieces of caramel dissolve. Add pears, cover and simmer until tender, turning pears once, about 5 minutes.
  • Using slotted spoon, transfer pears to bowl. Boil liquid in saucepan until thick and syrupy, about 5 minutes. Pour syrup over pears; toss gently to coat. Chill until cold, at least 3 hours or overnight. Divide pears and syrup among 4 shallow bowls and serve.

1 cup sugar
3 eggs
1/2 teaspoon vanilla extract
1 1/2-2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon anise oil, or
1 1/2 tablespoons crushed anise seeds

Steps:

  • Beat eggs until light.
  • Add sugar gradually, beating till creamy.
  • Add vanilla; add anise oil now if using it.
  • Sift flour with baking powder; add to mixture beating it well.
  • If you use anise seeds instead of anise oil, add it now.
  • Drop by teaspoons onto greased cookie sheets.
  • Allow them to dry 12 hours or overnight.
  • Bake for 12 minutes in 350 degree oven. Check to see if golden around edges. Do not allow them to get brown. Makes 50 1-1/2" cookies.
  • Note: I use cooking spray or silicone sheets on cookie sheets---nothing sticks and no clean up.
  • Cooking time included overnight drying time.

1 lemon, juiced
2 Asian pears
4 whole star anise pods
1/4 cup honey
1/4 cup dry vermouth, dry white wine, cider, or water

Steps:

  • Preheat oven to 350 degrees. Cut 4 pieces of parchment paper to measure 12 square inches each. Juice lemon into a small bowl. Halve each pear horizontally. Dip cut sides of pear in lemon juice (to prevent browning). Using a melon baller, remove core from each half.
  • Place 1 star anise in cored center of each pear. Drizzle 1 tablespoon honey over each star anise.
  • Place a pear half, cut side up, on each piece of paper. Working with one piece at a time, hold pear half in paper in the palm of your hand; gather edges of paper around fruit with your free hand. Transfer to a rimmed baking sheet.
  • Pour 1 tablespoon vermouth into pear half in parchment. Twist paper tightly around top of each fruit to seal. Bake 45 minutes; pears should be tender. Transfer packets to shallow bowls. Serve immediately, opening packets at the table.

3-4 pounds bottom-round beef roast or other lean meat
1 tablespoon corn or peanut oil
3 tablespoons reduced-sodium soy sauce
3 tablespoons plus 1 cup water
2 tablespoons dry sherry
2 star anise
1 teaspoon five-spice powder

Steps:

  • Trim as much fat as possible from the beef.
  • If using a nonstick pan, no oil is necessary. Otherwise, heat oil in skillet. Add beef to hot pan and brown on all sides.
  • Reduce heat to low and add soy sauce, 3 tablespoons water, sherry, star anise and five-spice powder. Cover and gently simmer meat until it is tender, about two hours, cooking for one hour on one side, and turning to cook after the first hour on the second side. Depending on the amount of fat, it will take 1 1/2 to 2 1/2 hours to cook.
  • When meat is tender, remove from pan and cool. Add the remaining 1 cup water to the pan, and heat the juices to serve over meat.
  • Serve meat at room temperature or chilled.
