MAICENA (CORN PUDDING)
Awesome breakfast pudding. Started with my great grandmother, my mother, then me. Our kids love it! You may add banana slices and mint leaves for touch, taste, and luxury purposes.

Steps:
- Heat cornstarch in a pot over medium heat. Stir in milk slowly. Add sugar and salt. Cook and stir until slightly thickened, about 15 minutes.
- Whip egg yolks in a bowl. Stir in 1/4 of the cornstarch mixture. Transfer the egg-cornstarch mixture to the pot. Cook and stir until combined, about 1 minute. Add the lemon rind; cook and stir until thickened, 7 to 10 minutes. Remove from heat; add vanilla extract and mix well.

KATHY'S SOUTHERN CORN PUDDING
This is a wonderful side dish that goes great with ham or pork. It's wonderful for that big crowd at Thanksgiving and Christmas, and very quick and easy to make.

Steps:
- Preheat an oven to 350 degrees F (175 degrees C). Grease a 9x13 baking dish; set aside.
- Beat eggs until fluffy in a large bowl. Stirring constantly, pour in melted margarine. Stir in sugar, whole kernel corn, and cream-style corn until well combined. Dissolve the cornstarch in the milk; combine with the corn mixture. Stir in vanilla. Pour the mixture into the prepared baking dish.
- Bake in the preheated oven until the pudding is puffed and golden, and a knife inserted into the center comes out clean; about 1 1/2 hours.

GOOD OLD AMERICAN CORN PUDDING

Steps:
- Melt the butter in a large saucepan over low heat and cook the onions and garlic for 3 minutes. Add the corn kernels and cook 1 minute. Season with salt and pepper. Add stock and cream and bring to a boil. Slowly whisk in cornmeal and cook for 3 minutes. Add chives, stir, and serve.
- Place all ingredients in a large pot and cover with cold water. Simmer for 40 minutes and strain.
ARGENTINE CORN PUDDING
Steps:
- Preheat oven to 350 butter 11x7 inch glass baking dish. Melt 2 Tbls of butter in a large skillet over medium high heat. Add corn, sauté for 5 minutes and add milk. Reduce to medium, cover and simmer until corn is tender about 5 minutes. Transfer to a blender and blend to a course puree. Melt 2 Tbls of butter in the same skillet over medium high heat, add onions and chilies. Saute until onions are tender, about 4 minutes. Remove from heat, stir in corn puree and cool for 15 minutes. Beat eggs flour salt and pepper in a bowl and mix in 1 cup of cheese. Stir egg mixture into corn mixture. Transfer to dish and sprinkle with remaining ½ cup of cheese. Bake until golden. About 40 minutes.
AMISH CORN PUDDING

Steps:
- Preheat oven to 350.
- Butter a 1 1/2 quart souffle or round baking dish and place in the oven (If doubling the recipe, use a 2 1/2 quart dish).
- Meanwhile, in a large bowl, with an electric mixer on high, beat the eggs, flour, sugar, and pepper until smooth.
- Stir in the milk, creamed corn, and corn kernels and pour into the hot dish.
- Dot with the butter and sprinkle with the paprika.
- Bake, uncovered, for 40 minutes or until set.
- Let stand for 10 minutes, then sprinkle with the chopped parsley.

ARGENTINE CORN PIE
My dad's wife taught me how to make this recipe and it's always a big success! People just love the soft white sauce. It's specially good to use that frozen corn in the back of the freezer!

Steps:
- Preheat an oven to 375 degrees F (190 degrees C).
- Place 1 egg into a saucepan cover with water by 1 inch. Cover the saucepan and bring the water to a boil. Once the water is boiling, immediately remove from the heat and let the egg stand in the hot water for 15 minutes. Pour out the hot water and cool the egg under cold running water in the sink; peel and chop the egg. Meanwhile, bring a saucepan of water to a boil. Stir in the corn and return to a boil. Cook for 2 minutes; strain and set aside to cool.
- Heat the vegetable oil in a saucepan over medium heat. Stir in the onion, and cook until the onion has softened and turned translucent, about 5 minutes. Pour the milk into the saucepan and whisk in the cornstarch. Add the butter, nutmeg, salt, and pepper. Bring to a simmer whisking constantly, then cook for 2 minutes until the butter has melted and the sauce has thickened. Stir in the hard boiled egg and corn; pour into the pie crust. Brush the crust with the beaten egg.
- Bake in the preheated oven until the crust and the pie are golden brown, about 25 minutes.
