AUNT EVELYN'S BAKED POTATO AND CHEESE CASSEROLE



Aunt Evelyn's Baked Potato and Cheese Casserole image

Many years ago, someone in the family collected recipes from descendants of my great grandparents, William M. and Florence E. (Snodgrass) Whaley and had them compiled into a cookbook. I am posting those recipes here so that they will not be lost. This recipe was submitted by my Aunt Evelyn.

Number Of Ingredients 6

potatoes
butter
salt
pepper
1 medium onion, chopped
velveeta mexican cheese (mild)

Steps:

  • 1. Peel and slice the number of potatoes needed to fill your chosen baking dish. Mix the potatoes and onions together in the baking dish. Salt and pepper the sliced potatoes.
  • 2. Dot the top of the potatoes with butter.
  • 3. Cover dish and cook for 1 hour at 350°F. Take out of the oven, cover potatoes with shredded cheese. Put dish bake in oven, uncovered, until cheese melts.

  • Place potatoes in a large pot and cover with cold water. Bring to a boil and cook potatoes until fork-tender (about 10-15 minutes).
  • Drain the potatoes and allow them to cool. When cool enough to handle, peel the potatoes and coarsely shred on the large holes of a grater.
  • Place grated potatoes in a large bowl. Stir in 2 ½ cups of the cheese and all of the sour cream. Add salt and pepper to taste.
