OVEN ROASTED MAHI MAHI



Oven Roasted Mahi Mahi image

Oven Roasted Mahi-Mahi in olive oil and lemon juice, is delicious, flavorful and ready in just 30 minutes.

2 tablespoons Olive oil for brushing and oiling the pan
2 lb mahi mahi fillets (about 5 fillets 5-6 ounces each, fresh or thawed if frozen)
2 lemons
2 tablespoons grated lemon zest
8 garlic cloves (minced)
salt and pepper (to taste)
1 cup grape tomatoes
2 lb fresh thin asparagus
fresh thyme
crumbled feta (optional)

Steps:

  • Preheat an oven to 400°F.
  • Lay the bottom of a baking sheet pan with parchment paper and brush with olive oil, then add the fish filets to the pan.
  • Brush the fish fillets all over with olive oil, rub in the lemon zest and garlic, then squeeze the juice from 1 lemon over the fish.
  • Season with sea salt and fresh ground pepper. Toss the grape tomatoes in 1 teaspoon of olive oil, a pinch of salt and pepper and add to the pan.
  • Top fish fillets with fresh thyme and roast until the fish fillets are just opaque in the center, about 10-15 minutes, depends how thick are the fillets.
  • Snap off the woody ends of the asparagus and discard.
  • In another baking sheet pan, add the asparagus, drizzle with olive oil, juice of half lemon, sea salt and pepper. Toss the asparagus to evenly coat with oil.
  • Roast on the top rack of the oven for just 10-15 minutes for a mildly cooked asparagus.
  • Remove fish from oven, discard the thyme sprigs and top with fresh thyme sprigs for serving and juice from the remaining half lemon.
  • Serve immediately with the roasted tomatoes and asparagus topped with feta crumbles.
  • Enjoy!

1 medium onion, chopped
1 medium green pepper, chopped
4-1/2 teaspoons olive oil, divided
1 garlic clove, minced
3/4 cup salsa
1/2 cup white wine or chicken broth
1/4 cup halved Greek olives
1/2 teaspoon Greek seasoning
4 mahi mahi fillets (6 ounces each)
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup crumbled tomato and basil feta cheese

Steps:

  • In a large ovenproof skillet, saute onion and green pepper in 1-1/2 teaspoons oil until tender. Add garlic; saute 1 minute longer. , Stir in the salsa, wine, olives and Greek seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly thickened. Transfer to a bowl; set aside., Sprinkle mahi mahi with salt and pepper. In the same skillet, lightly brown fillets in remaining oil for 2 minutes on each side. Spoon salsa mixture over fillets. , Bake, uncovered, at 425° for 6 minutes. Sprinkle with cheese; bake 2-3 minutes longer or until fish just turns opaque.

1 medium red onion, cut lengthwise into 1/2-inch-thick wedges
3/4 pound cherry tomatoes
6 tablespoons olive oil, divided
4 (6-ounces) skinless mahimahi fillets (1 inch thick)
1 tablespoon red-wine vinegar
2 teaspoons black or green tapenade (olive paste)
Accompaniment: plain or parmesan couscous

Steps:

  • Preheat broiler and line a large shallow baking pan with foil.
  • Toss onion and tomatoes with 3 tablespoons oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in lined baking pan, then spread evenly in one half of pan.
  • Pat fish dry and sprinkle with 1/4 teaspoon each of salt and pepper, then arrange, skinned side down and spaced apart, next to vegetables in other half of pan. Drizzle fish with 1 tablespoon oil and broil 4 to 6 inches from heat until vegetables are charred and slightly wilted and fish is just cooked thourough, 12 to 15 minutes.
  • Meanwhile, whisk together vinegar, tapenade, 1/4 teaspoon pepper, and remaining 2 tablespoons oil.
  • Serve fish and vegetables over couscous. Stir pan juices into vinaigrette and drizzle on top.

4 1-inch-thick skinless mahi mahi fillets (about 6 oz. each)
1 small yellow onion, cut into small dice
1 medium clove garlic, minced
3/4 cup dry white wine
1 tsp. dried oregano
1 14.5-oz. can no-salt-added diced tomatoes
1/2 cup pitted green olives, rinsed, drained, and coarsely chopped
1 Tbs. capers, rinsed and drained
1/4 cup chopped fresh flat-leaf parsley

Steps:

  • Heat 1 Tbs. of the oil in a 12-inch nonstick skillet over medium-high heat. Season the fish on both sides with 1/2 tsp. salt and 1/4 tsp. pepper. Cook, turning once, until the fish is just opaque throughout, 3 to 5 minutes per side. Transfer to a plate and keep warm. Heat the remaining 1 Tbs. oil in the skillet over medium heat, add the onion and cook, stirring occasionally, until softened, about 3 minutes. Add the garlic and cook until fragrant, 30 seconds more. Stir in the wine and oregano. Bring to a boil, lower the heat to low, and simmer until the liquid is reduced by half, about 3 minutes. Stir in the tomatoes and their juice, the olives, and capers. Bring to a simmer and cook until the sauce has reduced slightly, about 5 minutes. Stir in the parsley. 2 tablespoons extra virgin olive oil
1 cup chopped onion
1 cup dry white wine
1 teaspoon anchovy paste
2 (14 1/2 ounce) cans diced tomatoes with garlic, basil, and oregano in juice
4 (6 ounce) mahi mahi fillets
1/2 cup large green olives, quartered, pitted
3 teaspoons chopped fresh oregano, divided
1 teaspoon packed finely grated orange peel

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add onion; sauté until translucent and beginning to brown, about 4 minutes. Add wine and anchovy paste. Boil until reduced to 3/4 cup, about 3 minutes. Add tomatoes with juice; bring to boil.
  • Sprinkle fish with salt and pepper. Add fish to skillet atop tomato mixture. Reduce heat to low, cover, and simmer until fish is cooked through, about 9 minutes. Using slotted metal spatula, transfer fish to plate and tent with foil to keep warm. Mix olives, 2 teaspoons oregano, and orange peel into sauce in skillet. Increase heat to high and boil until sauce is reduced and thickened, about 6 minutes. Season to taste with salt and pepper. Place 1 fish fillet on each of 4 plates. I have used this method for fresh albacore, yellowtail, and dorado (mahi mahi). I am sure it would work for any firm white fish. Don't fear the mayonnaise! I was inspired by other delicious fish dishes that contained mayonnaise to create this quick simple preparation of fresh fish. My 2-year-old and my 4-year-old both ask for more!

2 tablespoons soy sauce, or more to taste
1 large clove garlic, minced
6 (5 ounce) mahi mahi fillets
¼ cup crushed saltine crackers, or more as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stir mayonnaise, soy sauce, and garlic together in a bowl.
  • Place mahi mahi in a baking dish. Spoon mayonnaise mixture over the fish, then turn to coat. Sprinkle saltines over top.
