Blueberry Beet Smoothie. Sweet, creamy, and packed with fiber, protein, and antioxidants! This healthy breakfast smoothie is perfect for weightloss or for kids. Delicious, fruity, and the beets aren't too strong.

Steps:
- Place the almond milk, blueberries, beet, pineapple, and Greek yogurt in a high speed blender such as a Vitamix (if you do not have a high speed blender, I'd suggest microwaving, roasting, or lightly steaming the beets before using so that they are softer and puree more smoothly).
- Blend until smooth. Taste and if you desire a sweeter smoothie, add a little honey or date and blend again. Enjoy immediately or refrigerate for up to 1 day.

Steps:
- Add beet, strawberries, banana (optional for sweetness) and apple juice to a blender and blend on high until creamy and smooth, scraping down sides as needed.
- Taste and adjust flavor as needed, adding more banana for sweetness, apple juice to thin, or strawberries for a more intense fruit flavor.
- Divide between two serving glasses and enjoy. Optional: Garnish with banana slices, fresh mint, and/or shredded coconut. Best when fresh, though leftovers will keep covered in the refrigerator for up to 2 days. Freeze leftovers in ice cube trays or popsicle molds for an afternoon pick-me-up.

BEET, GRAPE, APPLE SMOOTHIE
This smoothie includes the earthy taste of roasted beets (so don't make it if you are a hater), but apples, grapes, and lemon juice sweeten the flavor just enough for a subtly sweet, surprisingly healthy snack that your kids might even appreciate. Beets are a great source of folate, copper, iron, magnesium, manganese, phosphorus and potassium, as well as the antioxidant betanin. The yogurt provides acidophilus cultures (beneficial gut bacteria) and calcium, and the spinach gives this an iron boost.

- Roast, peel and cool beets ahead of time. Chop spinach and remove stems. Add to blender along with all other ingredients. You can vary the amount of grape juice and milk slightly depending on how thick you prefer your smoothies to be. Blend well, first on low, then high for 1-2 minutes and enjoy.

This is one of my favorite smoothies: the earthy sweetness of the beets and the tang of the grapefruit really balance each other. This recipe was inspired by Angela's neon smoothie.

Steps:
- Slice the beet and apple and juice the grapefruit.
- Put fruit and veg in blender and pulse for a couple of seconds.
- Add ice cubes and as much OJ as you like (I use 1/4 cup) to make it smooth.
- Blend for half a minute.
- Pour. Enjoy!

Steps:
- Add the celery, apple, beets, and spinach to a blender, and blend until smooth.
- Using a mesh strainer, strain the juice over a large liquid measuring cup to remove the pulp. Use a spoon to help stir the pulp and press out the liquid. Reserve the pulp to make pulp muffins.
- Chill the juice for at least 30 minutes (and keep up to 3 days).
- Enjoy!
