STRAWBERRIES FILLED WITH "CLOTTED" CREAM

1 cup mascarpone cheese
1/2 cup heavy cream, very cold
3 tablespoons confectioners' sugar
1/4 teaspoon pure vanilla extract
1 vanilla bean, seeds scraped
16 large fresh strawberries

Steps:

  • Combine the mascarpone, heavy cream, sugar, vanilla extract and vanilla seeds in the bowl of a stand mixer and whip until soft peaks form. Using a rubber spatula, scrape the mixture into a pastry bag fitted with a star tip.
  • Stand the strawberries upright on a platter. If the bottoms are too wobbly to stand, slice off the green stems. With a small sharp knife, cut an "X" in each strawberry, cutting almost to the bottom. (The cut should be such that the strawberry will open up but not fall apart.) With your fingertips, gently spread each strawberry apart to make "petals."
  • With a spoon, carefully fill each strawberry with a dollop of cream. Serve immediately.

Berry sauce
1 cup strawberries
1/4 cup unfiltered, unsweetened apple juice
Ricotta cream
2 cups reduced-fat ricotta (1 gram fat per ounce)
2 teaspoons finely grated lemon zest
1/4 cup maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon
Topping
1 cup sliced fresh strawberries
4 small mint sprigs
4 edible flowers, such as pansies or nasturtiums (optional)

Steps:

  • Purée strawberries with apple juice in a blender until smooth. Spoon equal amounts of berry sauce into 4 cocktail or parfait glasses. Combine ricotta cream ingredients in a blender or food processor. Process until mixture is smooth, about 30 seconds. Spoon 1/4 of the ricotta cream into each glass and top with 1/4 cup strawberry slices. Refrigerate until ready to serve. Garnish each with a mint sprig and an edible flower, if desired, before serving.

Steps:

  • Place the raspberries, strawberries and blueberries in a large bowl. Add the icing sugar and leave to marinade for up to an hour until the fruits have softened and the juice has oozed out. Lightly mash the fruits with a fork.
  • Spoon all but 4 tbsp of the clotted cream in a large bowl and add the custard. Fold gently together.
  • Spoon some of the fruits in the bottom of 4 glasses top with some of the clotted cream custard, top with some more fruit and continue with another layer of clotted cream custard. Continue with the layers finishing with a layer of fruit. The layers will not be defined. Top with the reserved clotted cream.
  • Chill for 30 minutes and serve.

650g strawberry , hulled and halved if large
2 x 125g punnets raspberries
2 x 125g punnets blueberries
2heaped tbsp golden caster sugar
578ml carton single cream to serve

Steps:

  • Measure the cassis into the base of a large serving bowl and stir in the strawberries. Pile the raspberries and blueberries on top and scatter over the sugar, but don't mix yet.
  • Cover the bowl with cling film. Just before serving gently toss the berries and serve with a big jug of cream.

The long, slow cooking sort of toasts the cream, which imparts a sweet, nuttiness that I don't think I've tasted in any other preparation. This is just delicious spread on warm biscuits or scones and topped with homemade jam.

4 cups heavy cream (not ultra-pasteurized)

Steps:

  • Preheat oven to 175 to 180 degrees F (80 degrees C).
  • Pour cream into shallow glass or ceramic baking dish (an 8- or 9-inch square pan is ideal). Cream should be about 1 1/2 to 2 inches deep.
  • Place dish in preheated oven. Bake 12 hours. Do not stir. Carefully remove from oven and let cool to room temperature. Cover with plastic wrap and refrigerate overnight or until completely chilled.
  • Turn over a corner of the top layer of thickened cream; carefully pour liquid underneath into a container to use for baking.
  • Pack the thickened (clotted) cream into a ceramic crock or canning jar. Cover and refrigerate up to 5 days.
