Here's what you need: sugar, water, blackberry, fresh thyme, blackberry thyme simple syrup, NOLET'S Gin, lemon juice, tonic water, blackberries, sparkling wine, fresh thyme

½ cup sugar
½ cup water
blackberry
9 sprigs fresh thyme
¼ oz blackberry thyme simple syrup
1 oz NOLET'S Gin
½ oz lemon juice, freshly squeezed
1 oz tonic water
3 blackberries, separated
½ oz sparkling wine
1 sprig fresh thyme, for garnish

Steps:

  • Thyme simple syrup: In a small pot, combine sugar, water, blackberries, and thyme sprigs. Whisk well and bring to a simmer. Let simmer for about 5 minutes and lightly crush the blackberries with a fork. Strain through a sieve and cool.
  • Cocktail: Fill a cocktail shaker with ice. Add prepared simple syrup, NOLET'S Gin, lemon juice, tonic water, and one blackberry. Shake vigorously for 30 seconds.
  • Strain into a coupe glass and top with sparkling wine.
  • Garnish with a thyme sprig and remaining two blackberries.
  • Enjoy!

Here's what you need: frozen blackberry, honey syrup, fresh thyme leaf, seltzer water

1 cup frozen blackberry, thawed
½ cup honey syrup, see recipe
1 teaspoon fresh thyme leaf
seltzer water, for serving

Steps:

  • Add the blackberries to food processor and purée into a smooth paste.
  • Add the blackberry purée to a small saucepan with the simple honey syrup and thyme. Simmer over medium heat for 5 minutes, until slightly reduced. Let cool completely, then strain into an airtight glass container and store in the refrigerator for up to 2 months.
  • To serve, mix 1-2 tablespoons of blackberry thyme syrup with 8 ounces of seltzer water in a glass over ice.

1 cup all-purpose flour
1 cup oats
⅓ cup butter, cut in small pieces
1 tablespoon sugar, or more to taste
½ cup half-and-half
2 eggs, beaten
1 cup fresh blackberries
1 teaspoon chopped fresh thyme

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Process flour, oats, butter, and sugar together in a food processor until mixture resembles a coarse meal.
  • Stir half-and-half and eggs together in a bowl, reserving 1 tablespoon. Add egg mixture to flour mixture in food processor and pulse until it forms a soft dough.
  • Turn out dough onto lightly floured work surface. Press dough into a circle about 1-inch thick. Gently press blackberries into top of dough; brush with reserved 1 tablespoon egg mixture and sprinkle with thyme. Cut into six wedges and transfer to a baking sheet.
  • Bake in preheated oven until scones turn golden brown, about 15 minutes.
