6 cups boysenberries
1 cup all-purpose flour
1 egg
1 teaspoon baking powder
¾ teaspoon salt
⅓ cup butter, melted
½ cup white sugar, or more to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread boysenberries in a 7x11-inch baking pan.
  • Mix flour, egg, baking powder, and salt together with a fork to make a crumble. Scatter over berries. Pour melted butter over crumble. Sprinkle sugar on top.
  • Bake crisp until top is browned, 40 to 50 minutes.

7 1/2 ounces water
6 1/2 ounces granulated sugar
1 dash salt
1 tablespoon corn syrup
1 teaspoon lemon juice
3 tablespoons cornstarch
2 ounces water
1 (16 ounce) bag frozen boysenberries, Do Not Thaw
2 crust pie shells

Steps:

  • In a saucepan, combine water, sugar, salt, corn syrup and lemon juice. Bring to a boil.
  • Combine cornstarch and water. Blend thoroughly.Add frozen boysenberries.
  • Pour both mixtures into unbaked 9 inch pie crust. Cover with second top crust and seal well around the edges. Make several slashes in the top to release steam.
  • Bake in a preheated 400 degree F oven for 40 minutes until top is golden brown. Cool on a rack.

  • Scrape seeds from vanilla bean into heavy medium saucepan. Add vanilla bean, berries, sugar and 1/3 cup water. Cook over medium-high heat until berries thaw, sugar dissolves and mixture boils, about 10 minutes. Purée berry mixture with vanilla bean in processor. Strain through sieve set over bowl, pressing on solids. Mix in orange juice and peel. Cover and refrigerate until cold. (Can be made 2 days ahead. Keep refrigerated.)

Steps:

  • Combine berries and sugar in heavy medium saucepan. Stir over medium heat until sugar dissolves and mixture is heated through. Transfer mixture to processor and blend using on/off turns to chunky puree. Cover and refrigerate until cold, about 2 hours. (Can be prepared 2 days ahead. Keep refrigerated.)
  • Spoon sorbet into bowls. Spoon sauce over. Garnish with mint and serve.

5 pints fresh boysenberries
7 ½ cups white sugar
½ teaspoon butter
2 (1.75 ounce) packages powdered fruit pectin

Steps:

  • Inspect four 32-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until jelly is ready. Wash new, unused lids and rings in warm soapy water.
  • Crush boysenberries in a large bowl with the back of a spoon or a potato masher. Add crushed fruit into a sieve or cheesecloth set over a bowl and let juices drip into the bowl until dripping stops. Press gently to get as much juice out of the berries as possible. Measure 4 cups of juice into a large pot. If necessary, add up to 1/2 cup of water to get the exact amount of juice.
  • Stir sugar into the juice and butter to reduce foaming.
  • Bring mixture to a full rolling boil over high heat, stirring constantly. Stir in pectin quickly. Return to a full boil and boil exactly 1 minute, stirring constantly. Remove from heat.
  • Skim off any foam with metal spoon. Ladle quickly into prepared jars, filling within 1/8 inch of tops.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars 2 inches apart into the boiling water using a holder. Pour in more boiling water to cover jars by at least 1 inch. Bring to a rolling boil, cover, and process for 5 minutes.
  • Remove jars from water and cool. Let stand at room temperature for 24 hours.
