1 cup (250 ml) orange segments, chopped
2 tbsps (30 ml) finely chopped red bell pepper
1 tsp (5 ml) finely chopped red onion
1 tsp (5 ml) finely chopped cilantro
4 tsps (20 ml) La Grille® Brazilian Style BBQ Seasoning
1 tsp (5 ml) brown sugar
1 tsp (5 ml) orange zest
1 pound (500 g) skin-on salmon fillets, (about 4 ounces/115g each)

Steps:

  • For the salsa, mix orange, bell pepper, onion and cilantro in small bowl. Cover and refrigerate until ready to serve.
  • Mix Seasoning, brown sugar and zest in a small bowl. Rub evenly over salmon. Grill, starting with skin-side down, over medium heat 4 to 5 minutes per side or until cooked through and fish flakes easily with a fork. Serve with orange salsa.

1/4 cup extra-virgin olive oil
1/4 cup fresh lemon juice
1/2 cup chopped fresh flat-leaf parsley
2 scallions, finely sliced
3 tablespoons chopped fresh mint leaves
2 tablespoons capers, rinsed, drained and coarsely chopped
2 tablespoons orange zest
1 teaspoon lemon zest
1 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
Vegetable or canola oil, for oiling the grill
4 (4 to 5-ounce) center cut salmon fillets, skinned, each about 3-inches square
2 tablespoons amber agave nectar
Kosher salt and freshly ground black pepper

Steps:

  • For the salsa: Peel and trim the ends from each orange. Using a paring knife, cut along the membrane on both sides of each segment. Free the segments and add them to a medium bowl. Add the olive oil, lemon juice, parsley, scallions, mint, capers, orange zest, lemon zest, and red pepper flakes. Toss lightly and season with salt and pepper, to taste. Set aside.
  • For the salmon: Put a grill pan over medium-high heat or preheat a gas or charcoal grill. Brush the grilling rack with vegetable oil to keep the salmon from sticking. Brush the salmon on both sides with the agave nectar and season with salt and pepper, to taste. Grill until the fish flakes easily and is cooked through, about 3 to 4 minutes on each side. Transfer the salmon to a platter and allow to rest for 5 minutes.
  • Spoon the salsa verde on top of the salmon or serve on the side as an accompaniment.

4 salmon fillets
1/2 large lemon, juice of
1/2 large orange, juice of
salt and pepper
1 whole orange, zest of
2 tablespoons brown sugar
1 tablespoon chili powder
1 clove garlic, minced
2 tablespoons butter, melted

Steps:

  • In a shallow dish large enough to hold the salmon, combine the juices, salt and pepper.
  • Add the salmon, turning to coat with the marinade.
  • Let marinate at room temperature for 20 minutes, turning the fillets once.
  • Preheat the oven to 425F.
  • Line a shallow baking pan with aluminum foil and grease with a little of the melted butter.
  • In a small dish, combine the orange zest, brown sugar, chili powder and minced garlic.
  • Rub the marinated salmon with the brown sugar mixture.
  • Place in the pan and drizzle with the remaining melted butter.
  • Bake for 8 to 12 minutes.
  • The big challenge here is not overcooking the fillets- 8 minutes will do for thin fillets (less than 1 inch) and no more than 12 minutes for the thicker fillets.

3/4 cup canned tomatillo, diced

2 1/2 lbs fresh salmon fillets, skinless

Steps:

  • Roughly chop the orange and lemon segments, retaining all of the juice that accumulates while peeling and chopping.
  • Combine the citrus fruit and juice with remaining salsa ingredients and toss adjusting salt and pepper to taste; refrigerate until serving time.
  • For the salmon, combine the oil, lemon juice, salt and pepper in a large bowl.

1 cup finely diced fennel bulb (sometimes called anise) plus 1 tablespoon minced fennel leaves
1/2 cup finely diced orange sections
10 picholine olives (available at specialty foods shops) or other green olives, pitted and minced
2 tablespoons drained bottled small capers
1 tablespoon fresh orange juice
1 teaspoon fresh lemon juice, or to taste
1/4 cup olive oil
4 teaspoons fresh lemon juice
eight 1/4-pound pieces of skinned salmon fillet
32 radicchio leaves (about 3 or 4 heads)

Steps:

  • Make the salsa:
  • In a bowl stir together the fennel bulb and leaves, the diced orange, the olives, the capers, the juices, and salt and pepper to taste.
  • In a small bowl stir together the oil, the lemon juice, and salt and pepper to taste. Put the salmon on a large platter, pour the oil mixture over it, and let the salmon marinate, turning it once, for 10 minutes.
  • Grill the salmon, skinned sides down, on an oiled rack set 5 to 6 inches over glowing coals or in a hot well-seasoned ridged grill pan over moderately high heat for 5 minutes, turn it, and grill it for 3 minutes more, or until it is just cooked through. Arrange 4 of the radicchio leaves on each of 8 heated plates, put a piece of salmon in the center, and top it with some of the salsa.

Add the tilapia fillets, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Prepare the mango salsa by combining the mango, red bell pepper, red onion, cilantro, and jalapeno pepper in a bowl. Add the lime juice and 1 tablespoon of lemon juice, and toss well. Season to taste with salt and pepper, and refrigerate until ready to serve.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  • Remove the tilapia from the marinade, and shake off excess. Discard the remaining marinade. Grill the fillets until the fish is no longer translucent in the center, and flakes easily with a fork, 3 to 4 minutes per side, depending on the thickness of the fillets. Serve the tilapia topped with mango salsa.
