4 (6-ounce) center-cut black cod fillets
Coarse salt and freshly ground pepper
2 tablespoons light-brown sugar
3 tablespoons freshly squeezed lime juice
2 tablespoons rice vinegar
1 tablespoon soy sauce
Thinly sliced mint leaves, for garnish
Thinly sliced scallions, for garnish

Steps:

  • Preheat oven to 425 degrees. Spray a baking dish with cooking spray. Season fish with salt and pepper and place in prepared dish.
  • Meanwhile, add brown sugar, lime juice, vinegar, soy sauce, and pinch of salt to a small saucepan and bring to a boil over medium heat. Simmer until thick and syrupy, 4 to 5 minutes. Spoon about 1 teaspoon of glaze evenly over each cod filet; reserve any remaining glaze.
  • Transfer baking dish to oven and bake until opaque and just cooked through, about 12 minutes. Garnished with mint and scallions; serve with reserved glaze.

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Spray the bottom of a Dutch oven or covered casserole dish with cooking spray.
  • Combine lime juice, brown sugar, vinegar, and soy sauce in a saucepan over medium heat; cook and stir until sauce is thickened, about 5 minutes.
  • Place cod in the prepared Dutch oven. Pour sauce over fish and arrange tomatoes around fish. Cover dish with an oven-safe lid.
  • Bake in the preheated oven until fish flakes easily with a fork, about 10 minutes.

1/2 cup chopped onion
1 garlic clove, minced
1 teaspoon grated orange zest
1/3 cup orange juice

1 tablespoon canola oil
4 (6 ounce) black cod fish fillets (or any mild white fish)
sea salt & freshly ground black pepper, to taste
2 garlic cloves, minced
1 inch ginger, grated
2 tablespoons sugar
1 lime, zest of
3 tablespoons lime juice
2 tablespoons rice vinegar
1 tablespoon soy sauce
thinly sliced mint leaf, for garnish
thinly sliced scallion, for garnish

Steps:

  • Salt and pepper fish fillets.
  • Heat grill, put a piece of aluminum foil on the grill, add oil.
  • Once grill is heated to 350-400 degree. Put fish on foil, and turn grill to medium to low to maintain 350-400 degree. Turn turn fillets over until cooked (fish turn opague and firm to touch).
  • Put all other ingredients except mint and scallions in small sauce pan. Bring to a simmer and reduce by 1/3 to 1/2.
  • Remove fillets to serving dish and pour sauce over fish. Top with scallions and mint. Serve immediately.

4 black cod fillets, each about 3 oz.
3 Tbs. soy sauce
2 Tbs. honey
1 Tbs. rice vinegar
1 Tbs. mirin
1 Tbs. sesame oil
Juice of 1 lime
1/2 oz. ginger, peeled and grated
2 garlic cloves, minced
1/4 tsp. red pepper flakes
4 green onions, white and light green portions, thinly sliced
12 oz. bok choy, quartered lengthwise
8 oz. shiitake mushrooms, stemmed and thinly sliced
2 Tbs. vegetable oil
3 cups cooked white rice

Steps:

  • Place the cod in a single layer in a baking dish. In a bowl, whisk together the soy sauce, honey, vinegar, mirin, sesame oil, lime juice, ginger, garlic, red pepper flakes and half of the green onions. Pour over the cod, ensuring that the fillets are evenly coated. Marinate at room temperature for at least 15 minutes or up to 30 minutes. Alternatively, refrigerate for up to 8 hours. Position a rack in the lower rung of a Cuisinart steam oven. Remove the cod from the marinade, reserving the marinade. Lay the fillets in the baking tray of the steam oven and nestle the bok choy in between. Pour the marinade over the top. In a bowl, stir together the mushrooms, vegetable oil and the remaining green onions. Sprinkle on top of the fish and bok choy. Transfer the tray to the oven. Turn the oven to the bake/steam setting at 450°F according to the manufacturer's instructions. Bake until the cod is opaque and cooked through, about 6 minutes. Using a spatula, transfer the cod to a warmed platter and cover with aluminum foil. Return the bok choy and mushrooms to the oven and turn the oven to the broil setting at 500°F. Broil until the bok choy is lightly browned on top and the mushrooms are crispy, 2 to 4 minutes. Transfer the bok choy and mushrooms to the platter with the cod. Serve immediately with rice. Shopping for fish can be intimidating. Maybe it's the fact that half of them are staring at you from behind the counter, as if to say, "Jeez, how did I end up here? " So, if you're going to do them-and yourself--justice, here's how to rustle up a fine, fresh fillet. You need to use your eyes and your nose. Look for a cut where the flesh is moist and glistening, with no flat, brown edges. If the fish looks dull, take a pass. Same goes for any fillet with a fishy or ammonia smell. Don't be shy about asking your fishmonger a few questions, like when the fish came in and from where. Most stores have regular shipments; knowing that schedule in advance can help you plan when to have fish. If black cod were in a band, it would be the bass player: steady, meaty, but not much of a soloist. It benefits from some jazzy front men and especially likes to swing with citrus high notes. You'll find plenty of those riffs in this dish.

1/2 cup freshly squeezed orange juice
2 tablespoons freshly squeezed lime juice
2 tablespoons freshly squeezed lemon juice
1 tablespoon extra-virgin olive oil
Zest of 1 orange
Zest of 1 lemon
1/2 teaspoon minced fresh ginger
Pinch of cayenne
4 3.5-ounce black cod fillets, pinbones removed
1/2 teaspoon sea salt
1 teaspoon Dijon mustard
1/4 cup coarsely chopped fresh flat-leaf parsley or mint

Steps:

  • In a small bowl or glass measuring cup, whisk together the orange juice, lime juice, lemon juice, olive oil, orange zest, lemon zest, ginger, and cayenne. Place the cod in a baking dish and season each piece with 1/8 teaspoon of the salt. Pour half of the orange juice mixture over the cod and turn to coat well. Cover and marinate in the refrigerator for 30 minutes.
  • Preheat the oven to 400°F.
  • Remove the cod from the refrigerator, uncover, and add 2 tablespoons of water to the bottom of the dish. Bake just until the fillets are tender and an instant-read thermometer inserted into the center of each fillet registers 137°F; it will take 10 to 15 minutes, depending on the thickness of the fillets.
  • Meanwhile, combine the remaining orange juice mixture and the mustard in a small saucepan over medium heat and simmer until the liquid is reduced by half. Pour the reduction over the fillets, sprinkle with the parsley, and serve immediately.
  • This versatile, delicious marinade is great with other fish, such as sea bass, salmon, and halibut. These flavors also pair nicely with Warm Napa Cabbage Slaw (page 92).
  • You can also cook the fish on a grill. Wipe the marinade off the fillets and rub them with 1 teaspoon of light sesame oil. Grill over low, even heat for about 4 minutes per side, until the flesh is opaque and flakes easily and the center of each fillet registers 137°F.

1 tablespoon fresh grapefruit juice
1 tablespoon fresh lime juice
2 tablespoons sake

1 tablespoon water
2 teaspoons sugar
2 teaspoons vegetable oil
Garnish: lime slices

Steps:

  • Place fish in a flat-bottomed glass or ceramic dish just large enough to hold fillets in 1 layer. Stir together juices in a small bowl, then combine 1 tablespoon mixed juices with sake in another small bowl and pour over fillets. Marinate fish, covered, at room temperature, 10 minutes. Stir together mirin and 2 tablespoons soy sauce, then pour over fillets and marinate, covered, at room temperature, 5 minutes more (or in refrigerator up to 1 hour). Remove fish from marinade and pat dry. Discard marinade.
  • Stir together water, sugar, and remaining tablespoon each mixed juices and soy sauce in a small bowl.
  • Heat oil in a 12-inch heavy nonstick skillet over moderately high heat until hot but not smoking, then sauté fillets, skin side down, until just crisp and golden brown, 1 to 2 minutes. Turn fillets over and sauté until browned, about 1 minute more. Add soy mixture to skillet and cook, swirling skillet occasionally, until sauce is reduced to a glaze and fillets are just cooked through, about 3 minutes. (If sauce reduces before fish is cooked through, swirl in 1 additional tablespoon water, repeating as necessary until fish is done.)
