I created this recipe because I wanted an easy-to-make cookie that folks can't resist. These tempting treats have a hint of coffee flavor and aren't overly sweet.

1 cup sugar
3/4 cup vegetable oil
1/3 cup instant coffee granules
2 tablespoons hot water
2 eggs
2-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon salt
Additional sugar

Steps:

  • In a bowl, combine sugar and oil. Dissolve coffee in water; add to sugar mixture and mix well. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder and salt; gradually add to the sugar mixture., Roll into 3/4-in. balls, then roll in additional sugar. Place 2 in. apart on lightly greased baking sheets; flatten with a fork. Bake at 400° for 8-10 minutes or until edges are firm. Remove to wire racks to cool.

From the Fabulous Foods website. I can't wait to make these this holiday season. A change from the normal bourbon balls. These will become more flavorful after sitting for 2-3 days, so plan ahead or make sure you put some aside for yourself to enjoy later. Time is a guess because I have not made these yet.

3 1/2 cups vanilla wafer crumbs
1 cup pecans, finely chopped
1 1/2 cups confectioners' sugar, sifted and divided
3 tablespoons instant coffee granules
1/3 cup Irish whiskey
1/3 cup light corn syrup

Steps:

  • In a large bowl, combine the cookie crumbs, pecans and 1 cup of sugar.
  • Dissolve coffee granules in the Irish Whiskey in a small cup.
  • Add the coffee/whiskey mixture and the corn syrup to the dry ingredients, mixing until blended.
  • Shape mixture into 1-inch balls and roll in the remaining 1/2 cup of sugar.
  • Store in an air tight container.

  • Combine first 3 ingredients till light and fluffy. Then add next 4 ingredients. Shape into small balls and put on ungreased cookie sheet. Bake 352 for about 13 - 15 minutes. Let cool completely and roll in confectioners sugar.

Steps:

  • Add 1 tsp. coffee granules to water in medium bowl; stir until dissolved. Add cream cheese, cookie crumbs and 1-1/2 tsp. cinnamon; mix well. Shape into 48 (1-inch) balls.
  • Crush remaining coffee granules with back of spoon; stir into melted chocolate.
  • Dip cookie balls into melted chocolate mixture, turning to completely coat each ball; place in single layer in shallow waxed paper-lined pan. Sprinkle with remaining cinnamon.
  • Refrigerate 1 hour or until firm.

1/2 cup butter or margarine, softened
1 egg
1 1/2 cups Gold Medal™ all-purpose flour
1 tablespoon instant coffee granules or instant espresso coffee (dry)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup chopped pecans
1 bag (11.5 or 12 oz) semisweet chocolate chunks (2 cups)
1/2 teaspoon instant coffee granules or instant espresso coffee (dry)
1 tablespoon water
1/2 cup powdered sugar

Steps:

  • Heat oven to 350°F. In large bowl, beat granulated and brown sugars, butter and egg with electric mixer on medium speed, or mix with spoon, until creamy. Stir in flour, 1 tablespoon coffee granules, the baking soda and salt. Stir in pecans and chocolate chunks.
  • Drop dough by 1/4 cupfuls about 2 inches apart onto ungreased large cookie sheet.
  • Bake 12 to 15 minutes or until golden brown and edges are set. Cool 4 minutes; remove from cookie sheet to wire rack. Cool completely, about 30 minutes.
  • Meanwhile, in small bowl, dissolve 1/2 teaspoon coffee granules in water. Stir in powdered sugar until smooth and thin enough to drizzle. Drizzle cooled cookies with Coffee Drizzle.
