Cold noodles tossed in a bright citrus and chile sauce are the ideal canvas for jammy roasted tomatoes in this light summer dish.

1 grapefruit, halved
1 lemon, halved
1 red chile (such as Fresno), seeds removed, finely chopped
1 (2") piece ginger, peeled, finely grated
1/3 cup unseasoned rice vinegar
3 Tbsp. soy sauce
1 tsp. sugar
2 pints cherry tomatoes
1 garlic clove, finely grated
1 Tbsp. extra-virgin olive oil
A pinch of kosher salt
18 oz. frozen udon noodles
2 medium Persian cucumbers, peeled, very thinly sliced on a diagonal
Cilantro sprigs, crumbled nori, and toasted sesame seeds (for serving)

Steps:

  • Heat broiler. Squeeze grapefruit and lemon halves into a fine-mesh sieve set over a large bowl; discard pulp (you should have a little more than 1/2 cup juice). Mix in chile, ginger, vinegar, soy sauce, and sugar. Cover ponzu and chill.
  • Toss tomatoes, garlic, oil, and salt on a rimmed baking sheet. Broil until tomatoes are soft and lightly charred, 10-12 minutes. Let cool.
  • Cook noodles according to package directions; drain and rinse under cold water to stop the cooking. Transfer noodles to bowl with ponzu and toss to coat. Divide noodles and ponzu among bowls and top with charred tomatoes, cucumbers, cilantro, nori, and sesame seeds.

4 (6 ounce) skinless salmon fillet
1 teaspoon fine sea salt
2 tablespoons vegetable oil
1 grapefruit
1 orange
1 lime
1/4 cup sugar
1/4 cup soy sauce
1/4 cup rice vinegar

Steps:

  • For the sauce:.
  • Use a zester to remove the colorful outer rind from the grapefruit, the orange and the lime; save the zest on the side.
  • If you don't have a zester, use a vegetable peeler to remove the rind, then cut it into julienne strips with a sharp knife.
  • Juice the fruits and combine the juices.
  • Put the sugar in a dry pan over medium-high heat and swirl the pan until the sugar has begun to dissolve; it will be caramel-colored.
  • Pour in the fruit juice and step back because the mixture will boil and steam rapidly before settling into a steady boil.
  • Boil for about 2 minutes, swirling the pan now and then to dissolve the caramelized sugar.
  • When the caramelized sugar has dissolved, add the soy sauce and vinegar.
  • Drop in half of the citrus zest that was set aside before the fruits were juiced and continue boiling the sauce for 2 or 3 minutes, or until it is slightly thickened.
  • The zest may be left in or strained out.
  • Serve the sauce warm or at room temperature.
  • For the Salmon: Rinse the salmon fillets, pat them dry and sprinkle with the sea salt.
  • Put a large, nonstick skillet over medium-high heat and allow the pan to preheat for 1 minute.
  • Put the oil in the pan; it should be almost smoking-hot.
  • Put the salmon skinned-side-up into the pan and allow the salmon to cook undisturbed for 4 to 5 minutes or until a crisp brown crust has formed on the underside of the fish.
  • Turn the fillets and cook 5 minutes longer or until fish is just cooked through.
  • Make a puddle of ponzu sauce in the center of four plates and plant the pan-seared fish fillets on top.
  • Garnish the fish with reserved zest from a grapefruit, an orange and a lime.

3/4 cup Sanuki Sea Stock
3 tablespoons soy sauce (see Tips, below)
1 tablespoon sugar
2, 3, or 5-gram packet bonito flakes (katsuobushi; see Tips, below)
2 tablespoons lemon and/or lime juice
1 recipe fresh udon noodles or 8 to 10 ounces dried or semidried udon noodles , cooked and chilled
2 tablespoons white sesame seeds, freshly toasted (see Tips, below)
8 to 10 fresh chives, snipped, or 2 to 3 scallions, trimmed and finely chopped

Steps:

  • Make the ponzu sauce:
  • Place the stock, soy sauce, and sugar in a small saucepan and heat slowly until small bubbles appear around the rim. Stir to dissolve the sugar. Remove the saucepan from the heat and add the bonito flakes. Wait 2 minutes, then add the lemon and/or lime juice. Strain the mixture through a fine-woven muslin cloth- or coffee filter-lined colander. Chill the sauce for at least 20 minutes, or refrigerate up to several days.
  • Assemble the salad:
  • If the cooked noodles seem sticky or pasty, quickly rinse in cold water and drain well. Divide them among 4 shallow serving bowls. Garnish the noodles with sesame seeds and chives or scallions. Serve the chilled ponzu sauce on the side to drizzle on and toss in just before eating.
