1 cup honey
1 tablespoon pure vanilla extract
1 stick unsalted butter, cut into 1/2-inch pieces, at room temperature
1 large egg, at room temperature
3 cups crispy brown rice cereal, such as Nature's Path Crispy Rice
1 cup sweetened dried cranberries, coarsely chopped
1/2 cup slivered almonds, toasted, coarsely chopped
One 4-ounce chocolate bar, finely grated

Steps:

  • Line a baking sheet with wax paper. Set aside.
  • Whisk the honey, vanilla, butter and egg together in a 5-quart saucepan. Bring to a boil over medium heat. Reduce the heat and simmer for 15 minutes. Stir in the rice cereal, cranberries and almonds until combined. Let the mixture cool for 45 minutes.
  • Place the grated chocolate in a small bowl.
  • Firmly press the rice mixture together into 36 balls, each about 1-inch in diameter, using slightly damp hands. Roll the cookies in the chocolate until coated and place on the prepared baking sheet. Refrigerate for 1 hour until firm.

Steps:

  • Blend the ground almonds and dried cherries together in a small blender until they form a ball.
  • Stop blending the moment the blender begins to stress.
  • A 600w bullet type blender is enough to make this cranberry chocolate candy recipe.
  • Melt the chocolate using a bain marine, melt 3/4 bring off the heat then stir in the remaining 1/4 for easy chocolate tempering.
  • Roll the cranberry almond dough into about 12 bite sized balls.
  • Dip the cranberry balls in the chocolate, spooning over to coat in a thick layer of dark chocolate.
  • Place the chocolate cranberry candy down on a flat surface to set and enjoy within a couple of days.
  • The chocolate cranberry candies will last for several weeks in an airtight container.

1/2 cup sugar
1 (6 ounce) package semi-sweet chocolate chips
1 (6 ounce) can evaporated milk (2/3 cup)
1/2 teaspoon vanilla
4 cups graham cracker crumbs
2 cups miniature marshmallows
1/2 cup pecans, chopped

Steps:

  • In saucepan, combine cranberries, sugar, and 1/2 cup water. Bring to boil; simmer for 3 minutes, or until cranberries are tender but hold their shape.
  • Drain, reserving 2 tbsp. syrup.
  • Melt chocolate with milk; stir till smooth. Add vanilla.
  • Stir in remaining ingredients, cranberries, and reserved syrup.
  • Pat in well-greased 9x9x2-inch baking dish. Chill till firm. Cut in squares.

2 (3 ounce) packages orange Jell-O or 2 (3 ounce) packages red Jell-O
2/3 cup coarsely chopped nuts

Steps:

  • Beat sugar and cranberry sauce together in sauce pan.
  • Melt and bring to a boil over moderate heat and add jello.
  • Stir until dissolved.
  • Add nuts.
  • Pour into lightly oiled 9x5x3 pan.

  • Cut into small 1 to 1 1/2 pieces and roll in granulated sugar.
  • Let stand at room temperature to dry.

2 tablespoons water
1/2 cup cranberries

Steps:

  • Cook 1/2 cup sugar and 2 tablespoons water in heavy small saucepan over low heat, stirring until sugar dissolves. Transfer to top of double boiler. Add cranberries. Cover berry mixture and place over simmering water. Cook 45 minutes, stirring occasionally. Remove from over water. Let cranberry mixture stand at room temperature overnight.
  • Place remaining 1/2 cup sugar on plate. Drain cranberries well. Add to sugar and turn to coat. Let dry at least 30 minutes. (Can be prepared 3 days ahead. Cover and refrigerate.)

For truffle mixture
9 ounces fine-quality milk chocolate* such as Valrhona "40% cacao"
1/2 cup heavy cream
1/2 stick (1/4 cup) unsalted butter
1/8 teaspoon salt
1 1/2 cups (8 ounces) unsweetened dried cranberries
For coating and decorating truffles
parchment paper
9 ounces fine-quality milk chocolate* such as Valrhona "40% cacao"
1/2 cup unsweetened dried cranberries(about 2 1/2 ounces)
*available at some specialty foods shops

Steps:

  • Make truffle mixture:
  • Chop chocolate. In a small saucepan bring cream, butter and salt just to a boil and stir in cranberries. Remove pan from heat and let mixture stand 10 minutes. In a food processor pulse together chocolate and cranberry mixture until smooth and transfer to a small bowl. Chill truffle mixture, covered, until very firm, at least 12 hours, and up to 3 days.
  • Line a tray with wax paper.
  • With a 1-inch melon-ball cutter scoop out truffle mixture and between palms of your hands roll into smooth balls, transferring truffles to tray. Chill truffles until firm, about 3 hours. Bring truffles to room temperature, about 20 minutes, before proceeding.
  • Coat and decorate truffles:
  • Oil a baking sheet and line with parchment paper.
  • Temper chocolate . (Alternatively, chop chocolate and in a double boiler or a small metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth.)
  • Balance 1 truffle on a fork (do not spear) and hold fork over chocolate. Spoon chocolate over ball, letting excess drip off. Return truffle to tray and top with a small piece of dried cranberry. Coat and decorate remaining truffles in same manner. Chill truffles, uncovered, until set, about 3 hours. Truffles keep, layered between sheets of wax paper in an airtight container and chilled, 2 weeks. Bring truffles to room temperature before serving.
