1 cup fresh cranberries
2 tablespoons balsamic vinegar
1/4 cup granulated sugar
1/4-1/2 tablespoon finely chopped fresh rosemary
1 tablespoon water
1 pinch salt
8 ounces brie round
8 ounces puff pastry
1 tablespoon chopped pecans
1 teaspoon orange zest
1 tablespoon melted unsalted butter

Steps:

  • Preheat the oven to 375 degrees F.
  • In a small saucepan, combine cranberries, balsamic, sugar, rosemary, water, and salt. Stir to combine. Bring to a simmer over medium heat. Cook for ten minutes until thick.
  • Add above ingredients to food processor and pulse until a compote consistency.
  • Cut the puff pastry into an 8x8-inch square.
  • Place the puff pastry on a greased baking sheet.
  • Place the brie in the center of the dough. Pinch the dough up along the edges of the brie. Do not totally cover the brie. Brush all edges of the dough with the melted butter.
  • Spoon the sauce on to the brie. Place the brie in the oven and bake for 12-15 minutes until the edges are lightly golden and crisp. Top with pecans and sprig of rosemary to garnish. Allow baked brie to cool for 5-10 minutes before serving and slicing.

1 tablespoon water
1/2 of a 17.3-ounce package Pepperidge Farm® Puff Pastry Sheets (1 sheet), thawed
1/2 cup apricot preserves
seedless raspberry jam
1/3 cup dried cranberry
1/4 cup toasted sliced almond
1 (13- to 16-ounce) Brie cheese round
1 package (13 ounces) Pepperidge Farm® Entertaining Quartet Distinctive Crackers

Steps:

  • Heat the oven to 400 degrees F. Beat the egg and water in a small bowl with a fork.
  • Unfold the pastry sheet on a lightly floured surface. Roll the pastry sheet into a 14-inch square. Spread the preserves on the pastry to within 2 inches of the edge. Sprinkle with the cranberries and almonds. Place the cheese in the center of the pastry. Fold the pastry up over the cheese to cover. Trim the excess pastry and press to seal. Brush the seam with the egg mixture. Place seam-side down onto a baking sheet. Decorate with the pastry scraps, if desired. Brush with the egg mixture.
  • Bake for 20 minutes or until the pastry is golden brown. Let stand for 45 minutes. Serve with the crackers.

  • Preheat oven to 200°C/390°F. Roughly chop dried cranberries and walnuts, finely chop rosemary, and transfer to a bowl. Add cranberry sauce, salt, and pepper and mix well.
  • Roll out puff pastry, add cranberry mixture to the center, and place Brie on top. Brush edges of the pastry with egg yolk. Moving clockwise, fold edges into center and pat down the seams. For decoration, cut two lengths of pastry and twist together. Place the twist in a ring around the top edge of the pastry. Make another twist and attach it beneath the first one. Then, roll small balls of pastry and place them on the edge of the twist, using the egg yolk as glue. Transfer Brie to a lined baking sheet and bake in preheated oven at 200°C/390°F for approx. 25 min.
  • In the meantime, to make the salad, add olive oil, mustard, pumpkin seed oil, balsamic vinegar, sugar, salt, and pepper to a large bowl and mix. Add lamb’s lettuce and toss well to coat with the dressing. Serve with the warm baked Brie and enjoy!
