Crisp Snow Pea Salad image

A simple Japanese dressing turns crunchy snow peas into a refreshing salad. Great with grilled salmon or chicken. Created by Heather Trim for Food and Drink.

1 lb snow peas
1/4 cup very thinly sliced carrot (Matchstick size)
2 tablespoons soy sauce
2 tablespoons lemon juice
1 tablespoon dark sesame oil
2 1/2 teaspoons granulated sugar
1/2 teaspoon wasabi powder
salt
2 teaspoons sesame seeds, preferably toasted

Steps:

  • Snip ends and remove string from snow peas. Fill a large bowl full of ice water.
  • Bring a large saucepan of salted water to a boil, and add snow peas and carrots.
  • Cook just until snow peas turn bright green, about 15 seconds, drain and plunge into cold water. Drain well and pat dry.
  • Cut snow peas diagonally into ½-inch (1-cm) wide pieces. Place in a bowl along with carrots.
  • To prepare dressing, whisk soy with lemon juice, sesame oil, sugar and wasabi powder, making sure sugar and wasabi powder are dissolved.
  • Stir with snow peas and carrots. Taste and add salt if needed. Sprinkle with sesame seeds.

1/4 cup sour cream
1 tablespoon white wine vinegar
Coarse salt and freshly ground pepper
1 pound frozen peas (do not thaw)
1/2 small red onion, halved lengthwise and thinly sliced (1/2 cup)
1/4 cup packed fresh flat-leaf parsley leaves
4 ounces bacon (about 4 slices), chopped
2 ounces aged white cheddar, shaved or coarsely grated

Steps:

  • Whisk together mayonnaise, sour cream, and vinegar in a large bowl; season generously with salt and pepper. Fold in peas, onion, and parsley. Refrigerate at least 4 hours.
  • Meanwhile, cook bacon in a large skillet over medium heat until browned and fat is rendered, 8 to 10 minutes. Transfer to paper towels to drain and crisp.
  • Let salad stand at room temperature for 10 minutes. Gently fold in cheddar and bacon just before serving.

1 beef flank steak (1 pound)
1/4 cup ketchup
2 tablespoons canola oil
2 tablespoons lemon juice
1 tablespoon brown sugar
1/4 teaspoon each garlic powder, garlic salt, ground ginger and pepper
1/2 pound fresh mushrooms, sliced
1 can (8 ounces) sliced water chestnuts, drained
1 medium onion, sliced and separated into rings
1 cup fresh or frozen snow peas, thawed
12 lettuce leaves
2 medium tomatoes, cut into wedges

Steps:

  • Broil steak 4-6 in. from the heat for 8-10 minutes on each side or until a thermometer reads 170°. Cool completely. Thinly slice meat across the grain; place in a large resealable plastic bag. In a jar with tight-fitting lid, combine the ketchup, oil, lemon juice, brown sugar and seasonings; shake well. Pour over meat; seal bag and turn to coat., Add the mushrooms, water chestnuts and onion. Refrigerate for 8 hours or overnight, turning occasionally. Just before serving, add snow peas. 1 tablespoon water
1 tablespoon plus 1 teaspoon white-wine vinegar
1 teaspoon soy sauce
1/2 teaspoon Oriental sesame oil
a pinch of sugar
12 medium shrimp (about 1/2 pound), shelled
1 garlic clove, minced and mashed to a paste with 1/2 teaspoon salt
2 tablespoons olive oil
3 tablespoons coarsely chopped walnuts
1/4 pound snow peas, trimmed
1 large Belgian endive
3 cups watercress sprigs, coarse stems discarded

Steps:

  • In a small bowl stir together the water, 1 tablespoon of the vinegar, the soy sauce, the sesame oil, the sugar, and a pinch of salt. In a bowl toss the shrimp with the garlic paste and 1 teaspoon of the olive oil and let the shrimp marinate for 10 minutes. In a non-stick skillet heat 2 teaspoons of the remaining olive oil over moderately high heat until it is hot but not smoking and in it sauté the walnuts, stirring, for 30 seconds. Add the snow peas, sauté the mixture, stirring, for 45 seconds, or until the snow peas are crisp-tender, and transfer it to a bowl. In the skillet sauté the shrimp for 1 minute on each side, add the soy sauce mixture, and simmer the shrimp, covered, for 1 minute, or until they are cooked through. Add the shrimp mixture to the snow pea mixture. In a large bowl toss the endive, sliced thin crosswise, and the watercress with the remaining 1 tablespoon olive oil, the remaining 1 teaspoon vinegar, and salt and pepper to taste, divide the greens between 2 dinner plates, and top them with the shrimp mixture.
