Meringue Boxes with Sorbet image

These boxes are easier to make than they look -- and fun, too. Almost any piping style will work.

Swiss Meringue
2 pints sorbet, any flavor

Steps:

  • Heat oven to 200 degrees. Use a pencil to trace six 3-inch squares and twelve 2-inch-by-3-inch rectangles on a piece of parchment paper, and place, pencil side down, on baking sheet.
  • Reserve 1 1/2 cups of the meringue for later use. Fill a piping bag fitted with a coupler, with a tip of your choice, and pipe out the meringue in desired patterns. The piped lines or designs should connect, but you want to leave plenty of open spaces in between the piping. Cover the remaining meringue with plastic, and set aside.
  • Bake piped meringue 15 minutes. Reduce the heat to 175 degrees, and bake an additional 35 minutes or longer, until the meringue is dried but still white.
  • Return the remaining meringue to electric mixer, and rewhip until light, fluffy, and glossy. Fill a pastry bag with the meringue and a plain tip. On a parchment-lined baking sheet, assemble the boxes by piping the meringue along edges of bottom square and piping meringue between side rectangles. Change the tips, and pipe out a decorative pattern on the outside joints to hide your work. Do not attach the top of box.
  • Return the baking sheet to the oven, and bake until the second piping of meringue is hard and dry, about 45 minutes. Remove from oven, and let cool completely.
  • Scoop the sorbet into each box, and serve with top to the side or placed over sorbet.

2 egg whites
1/4 teaspoon cream of tartar
Dash salt
1/2 cup sugar
1 cup heavy whipping cream
6 tablespoons confectioners' sugar
1 pint fresh strawberries, sliced

Steps:

  • Place egg white in a bowl; let stand at room temperature for 30 minutes. Add cream of tartar and salt; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form and sugar is dissolved., Drop into four mounds on a parchment-lined baking sheet. Shape into 4-in. cups with the back of a spoon. Bake at 225° for 1-1/2 hours or until set and dry. Turn oven off; leave meringues in oven for 1-1/2 hours. Store in an airtight container., In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until stiff peaks form. Just before serving, spoon into meringue shells. Top with strawberries and garnish with mint if desired.

1/4 teaspoon cream of tartar
1 cup sugar
1/4 teaspoon cinnamon
3 cups fresh mixed berries
2 tablespoons sugar
1 tablespoon cider vinegar
1 (8 ounce) container whipping cream
1/2 cup powdered sugar
1 tablespoon vanilla

Steps:

  • Preheat the oven to 250 degrees.
  • Line a baking sheet with parchment paper.
  • In a large bowl, beat the egg whites with the cream of tarter until they are foamy.
  • Begin to add the granulated sugar, a spoonful at a time.
  • Add the cinnamon.
  • Continue to beat until the meringue is very glossy and forms stiff peaks.
  • Make individual meringue, spread about 1/2-cup of the meringue into a 3-inch circle on the parchment paper.
  • Adding a little more of the egg white mixture, shape a rim around the edges.
  • Continue to make more of the meringue shells, spacing evenly across the baking sheet.
  • Bake for about 1-1/2 hours or until firm to the touch.
  • Turn off the oven, but leave the meringue shells in the warm oven for another hour.
  • Cool completely.
  • Berries: Mix the berries with vinegar/ sugar and let sit for at least 2 hours.
  • Prepare the cream by whipping with the sugar until firm peaks form.
  • Fold in pure vanilla, and refrigerate.
  • To assemble, place an individual meringue on each plate, top with some of the berry mixture, and add a dollop of whipped cream.
  • Sprinkle w/ cinnamon.

Believe it or not, these elegant meringues are made in a microwave. Top them with your favorite macerated fruit and sorbet flavor for an easy dessert that's crunchy, juicy and refreshing all at the same time.

4 cups strawberries, tops trimmed, berries sliced
2 cups blueberries, blackberries or raspberries
2 tablespoons sugar
Juice of 1 lemon
1/8 teaspoon plus pinch fine sea salt
1 large egg white, at room temperature
1/4 teaspoon pure vanilla extract
1 lemon, zested
2 1/2 cups confectioners' sugar
1 to 2 drops red gel food coloring
1 pint lemon sorbet

Steps:

  • Stir together the strawberries, blackberries, sugar, lemon juice and a pinch of salt in a medium bowl. Set aside to macerate, stirring occasionally, while you make the meringue cups.
  • Whisk together the egg white, vanilla, remaining 1/8 teaspoon salt and lemon zest in another medium bowl. Add the confectioners' sugar and stir with a rubber spatula until mostly combined, and then mix with your hands until a thick, firm dough forms.
  • Remove about 1/8 of the dough and place in another bowl. Add the red gel food coloring. Wearing gloves, knead the dough to swirl in the color until no streaks remain. Return the red dough to the bowl with the other dough and mix together until swirled throughout.
  • Transfer the dough to a cutting board and pat into a disk. Cut into 8 equal pieces (about 2 tablespoons each), and then roll each into a ball. Use a finger to poke a hole, about 1/2 inch across and 1/2 inch deep, into the center of each ball. If the ball starts to crack when poked, use your fingers to press it back together. Cover with a slightly damp kitchen towel so they don't dry out.
  • Line a microwave-safe round dinner plate with a paper towel. Place 1 ball in the center of the plate and microwave on the highest setting until the dough puffs into a crispy meringue about 5 inches across-it should be hollow when tapped, about 1 minute 30 seconds. Use an oven mitt or kitchen towel to remove the very hot plate from the microwave and transfer the paper towel with the meringue to a wire rack.
  • Line a second large microwave-safe round dinner plate with a new paper towel and repeat this process with the remaining pieces of dough, alternating between the two plates so that they have a little time to cool down after microwaving each meringue cup.
  • Let the meringues cool completely, then carefully peel away the paper towels.
  • Place each meringue cup on a serving plate and top each with about 1/2 cup of the macerated berries and a scoop of lemon sorbet. Drizzle with some of the juices from the fruit and serve immediately.

2 10-ounce packages frozen raspberries, in syrup, thawed
3/4 cup seedless blackberry preserves
For meringues
6 10-inch squares of foil
1 1/3 cups sugar
2 tablespoons cornstarch
1 cup egg whites (about 8 large)
1/4 teaspoon cream of tartar
6 tablespoons English toffee bits (such as Skor)
6 tablespoons chopped toasted walnuts
1 1/2 pints vanilla ice cream, slightly softened
Fresh berries

Steps:

  • Make sauce:
  • Puree berries with their juices and preserves in processor until well blended. Press through sieve to remove seeds. Refrigerate sauce. (Can be prepared 4 days ahead. Cover and keep refrigerated.)
  • Make meringues:
  • Position 1 rack in bottom third and 1 rack in center of oven and preheat to 225°F. Using bottom of 2/3-cup soufflé dish (measuring about 3 1/2 inches in diameter with 1 3/4-inch-high sides) as template, trace 3 circles on each of 2 large sheets of parchment paper, spacing 5 to 6 inches apart. Place parchment, marked side down, on baking sheets (circles will show through).
  • Turn 1 souffleé dish upside down on work surface. Center 1 foil square on dish; press foil to cover outside of dish completely. Cut overhang to 3/4-inch width so that foil resemble to hat with brim. Repeat with 5 more foil squares and sides, making 6 foil hats total.
  • Whisk sugar and cornstarch in small bowl to blend. Using electric mixer, beat whites and cream of tartar in large bowl until soft peaks form. Gradually beat in sugar mixture. Beat until meringue is very thick and glossy, at least 5 minutes. Spoon meringue into pastry bag fitted with medium star tip (no.4). Pipe dot of meringue near corners of baking sheet; press corners of parchment to anchor.
  • Staring in center of 1 marked circle on parchment, pipe meringue in concentric circles to fill marked circle completely. Repeat with remaining 5 marked circles, forming 6 meringue rounds total.
  • Starting at base of foil hat, pipe meringue in columns up sides but not onto top of foil hat, each column touching the previous one so that sides are covered completely. Repeat with remaining meringue and foil hat. Slide spatula under each meringue cylinder with soufflé dish still inside; place on sheets between meringue rounds (there will be 3 meringue round and 3 meringue cylinders on each sheet).
  • Bake meringues until firm and dry, about 2 hours. Turn off oven; let meringues stand in closed oven 1 hour. Transfer baking sheets to racks and cool meringues completely.
  • Lift meringue rounds off parchment; place on work surface. Lift foil with meringue cylinders to detach foil. Place 1 cylinder over each meringue round, forming cup. Mix toffee bits and nuts in small bowl. Spoon 1/4 cup ice cream into each meringue cup. Sprinkle with 1 tablespoon nut mixture. Top with 1/4 cup ice cream and 1 tablespoon nut mixture. Wrap filled meringues in plastic and freeze until firm, at least 4 hours. (Can be made 2 days ahead.)
  • Spoon sauce onto plates. Unwrap meringues; place on plates. Serve with berries.

VACHERINS WITH RASPBERRY SORBET AND MIXED BERRY-CARDAMOM SAUCE



Vacherins with Raspberry Sorbet and Mixed Berry-Cardamom Sauce image

Begin at least a day before you plan to serve the vacherins. (Don't make them on a humid day; moisture prevents meringues from drying properly and staying crisp.) Use a 3 1/2-inch round cookie cutter or a 3 1/2-inch round can to trace the bases.

2 tablespoons cornstarch
6 large egg whites, room temperature
1/4 teaspoon cream of tartar
3/4 cup seedless raspberry jam
1/2 cup sugar
1/3 cup water
1 16-ounce package frozen unsweetened mixed berries (do not thaw)
1 teaspoon ground cardamom
3 pints raspberry sorbet
Fresh raspberries
Fresh mint sprigs

Steps:

  • Position 1 rack in bottom third and 1 rack in top third of oven; preheat to 200°F. Line 2 large baking sheets with parchment paper. Using 3 1/4- to 3 1/2-inch-diameter cookie cutter as template, heavily trace 4 circles on each parchment sheet. Turn parchment over so that marked side faces down (circles will show through).
  • Whisk sugar and cornstarch in medium bowl to blend. Using heavy-duty or handheld electric mixer on medium-high speed, beat whites in large bowl until foamy, about 1 minute. Add cream of tartar; beat until soft peaks form, about 1 minute. Add sugar mixture, 1 tablespoon at a time, beating until whites are very stiff and glossy, at least 4 minutes with heavy-duty mixer and 6 to 8 minutes with handheld. Scoop enough meringue into pastry bag fitted with medium star tip to fill 1/3 full. Pipe small dot of meringue under parchment in each corner of baking sheets. Press parchment onto dots.
  • Starting in center of 1 marked circle, pipe meringue in continuous spiral to fill circle completely. Pipe 1 meringue circle atop edge of base circle, forming standing rim. Repeat, piping 2 more circles atop first, forming meringue cup. Pipe 3 more cups on sheet, filling bag with meringue as needed. Pipe 4 cups on second sheet.
  • Bake meringues 3 hours without opening oven door (sides of meringues may settle slightly). Turn off oven; let meringues stand in closed oven over-night to dry completely. (Can be made 1 week ahead. Store airtight in single layer.)
  • Whisk jam, sugar and 1/3 cup water in heavy medium saucepan over medium-high heat until sugar dissolves and jam melts. Boil until sauce thickens and is reduced to generous 3/4 cup, whisking often, about 7 minutes. Add berries and cardamom; stir gently. Remove from heat; let stand 1 hour to thaw fruit. Cover; chill at least 2 hours and up to 1 day.
  • Scoop sorbet into vacherins. (Can be made 2 days ahead. Wrap tightly; freeze. If you freeze the vacherins, the meringues will be tender and chewy rather than crisp.) Spoon sauce over. Garnish with berries and mint. Serve with remaining sauce.

Steps:

  • Preheat oven to 200 degrees. In the bowl of an electric mixer fitted with the whisk attachment, combine whites, lemon juice, and vanilla. Beat on low speed, gradually increasing to high, until soft peaks form, about 1 1/2 minutes.
  • Sprinkle sugar over the egg white mixture; beat on high speed until glossy peaks form, about 3 minutes. Sift cornstarch over mixture, and fold to combine.
  • Using two soup spoons, drop balls of meringue onto a parchment-lined baking sheet. Press down on center of each ball with one spoon to form a small cup.
  • Bake 1 hour. Reduce oven temperature to 175 degrees; continue baking until outside is dry and crisp and inside is chewy, about 1 hour more. Remove from oven; let cool completely.
