1/3 cup chopped walnuts, toasted
1/3 cup dried cranberries
5 cups torn mixed salad greens

Steps:

  • In a large bowl, combine the first six ingredients. Stir in the turkey, apple, celery, walnuts and cranberries. Divide salad greens among five serving plates; top with turkey mixture.

1/4 cup reduced-fat mayonnaise
1 tablespoon honey
1 tablespoon spicy brown mustard
1/2 teaspoon dried marjoram
1/8 teaspoon ground ginger
3 cups cubed cooked turkey breast
1 large red apple, finely chopped
2 celery ribs, thinly sliced
1/2 cup dried cranberries
1/4 cup chopped walnuts, toasted

  • Mix first six ingredients. In a large bowl, combine remaining ingredients. Stir in yogurt mixture. Refrigerate, covered, until serving.

1 package (10 ounces) frozen green peas
3/4 cup mayonnaise or salad dressing
2 teaspoons curry powder
2 cups cut-up cooked turkey breast
1/2 cup shredded Cheddar cheese (2 ounces)
4 medium green onions, sliced (1/2 cup)
1 medium stalk celery, sliced (1/2 cup)
Lettuce leaves, if desired

Steps:

  • Cook and drain macaroni as directed on package. Rinse with cold water; drain. Rinse frozen peas with cold water to separate; drain.
  • Mix mayonnaise and curry powder in large bowl. Stir in macaroni, peas and remaining ingredients except lettuce. Cover and refrigerate 2 to 4 hours to blend flavors. Serve on lettuce.

2 romaine lettuce hearts, washed, dried, and cut into large chiffonade

Steps:

  • Mix the curry with the lemon juice, to dissolve. Mix in the mayonnaise. Fold in with the turkey, pears, and scallions. Season. Serve on a bed of romaine leaves.

1/2 cup maraschino cherries, drained
2/3 cup packed brown sugar
1/3 cup margarine or butter, melted
2 to 3 teaspoons curry powder

Steps:

  • Arrange pineapple, pears, peaches, apricots and cherries in 3 1/2- to 6-quart slow cooker. Mix remaining ingredients; spoon over fruit.
  • Cover and cook on low heat setting 3 to 4 hours to develop the flavors.
  • Serve warm or chilled. To chill, cool about 2 hours, then spoon fruit into container; cover and refrigerate until chilled.

My sister-in-law sprang this one on me without telling me what was in it. That is probably a good thing because I may not have tried it had I known what was in it. This uses a strange mix of ingredients that I wouldn't have thought would go well together but they do.

2 lbs boneless beef chuck roast
1/2 cup chopped onion
1 tablespoon vegetable oil or 1 tablespoon olive oil
1 (15 1/4 ounce) can pineapple chunks (in juice)
2/3 cup orange juice
2 tablespoons quick-cooking tapioca
1 tablespoon brown sugar
2 -3 teaspoons curry powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup dried fig, coarsely chopped
3 tablespoons currants
1 (16 ounce) can unpeeled apricot halves in light syrup, drained and halved
4 cups hot cooked couscous or 4 cups rice
chopped fresh cilantro

Steps:

  • Trim all the fat you can from the meat.
  • Cut roast into 3/4-inch cubes.
  • In a big skillet, heat oil; cook meat and onion until meat is browned, stirring frequently (may have to do this in two batches); drain off fat.
  • In a 4-quart slow cooker, add the undrained pineapple, orange juice, tapioca, brown sugar, curry powder, salt, and pepper; stir to mix it all up.
  • Add the meat and onion.
  • Cover and cook on low for 7-9 hours.
  • Add in the fruit; cover and cook on high for 30 minutes or until heated well.
  • Season more to taste if needed.
  • Serve over couscous.
  • Sprinkle cilantro over the top.

  • 1. In a large skillet bring chicken broth to a simmer over low heat. Add cutlets cover and cook 3 to 5 minutes or until cooked through.2. Remove cutlets set aside to cool. Reserve 3 tablespoons broth. When cutlets are cool enough to handle, dice.3. Place in large bowl with apples, celery, green pepper, and onions toss.4. 1/2 cup mayonnaise
1/3 cup plain yogurt
1/3 cup sour cream
1 tablespoon curry powder
Curly lettuce leaves
1 cup sliced almonds, toasted

Steps:

  • Combine turkey, grapes, cantaloupe, celery, green onions and raisins in large bowl. Whisk mayonnaise, yogurt, sour cream and curry powder together in small bowl. Pour mayonnaise mixture over salad and toss well. Season to taste with salt and pepper.
  • Line platter with lettuce leaves. Spoon salad atop lettuce. Sprinkle almonds over salad and serve.

1 (11 ounce) can pineapple tidbits and mandarin oranges, drained of juice (or just use 11 oz can mandarin oranges)
1/4 cup fat-free mayonnaise or 1/4 cup salad dressing
1/4 cup fat free sour cream
2 tablespoons frozen orange juice concentrate
3/4-1 teaspoon curry powder
4 -5 tablespoons nonfat milk
6 cups torn mixed salad greens
8 ounces cubed cooked turkey (or do it thinly sliced and rolled up) or 8 ounces cooked beef (or do it thinly sliced and rolled up)
toasted coconut, optional garnish

Steps:

  • In medium bowl toss together berries and drained canned fruit and set aside.
  • Fro dressing, stir together mayonnaise, sour cream, orange juice and curry powder.
  • Stir in enough milk to make a dressing of drizzling consistency.
