AIR FRYER CORN RIBS



Air Fryer Corn Ribs image

This is my fun take on air-fried elote ribs. Cutting the corn this way causes them to curl up in the shape of ribs once cooked. This also makes the corn a lot easier to handle and eat, not to mention a lot less messy.

2 ears fresh corn, husked
3 tablespoons olive oil
1 teaspoon chili powder
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
¼ cup mayonnaise
2 teaspoons lime juice
1 teaspoon Mexican-style hot sauce (such as Valentina®)
2 tablespoons crumbled cotija cheese
1 tablespoon chopped cilantro

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place an ear of corn on a cutting board and cut in half lengthwise. Cut each half in half lengthwise. Repeat with remaining ear of corn. You should have 8 "ribs" total.
  • Whisk olive oil, chili powder, garlic powder, and black pepper together in a bowl until smooth. Brush onto both sides of each rib and place in the air fryer basket.
  • Air fry for 12 minutes, flipping halfway through the cook time.
  • Meanwhile whisk mayonnaise, lime juice, and hot sauce together until thoroughly combined.
  • Transfer corn ribs to a serving plate. Drizzle sauce over the ribs and top with cotija cheese and cilantro.

2 ears corn on the cob, husks and silk removed
3 Tbsp. KRAFT Zesty Lime Vinaigrette Dressing
2 Tbsp. KRAFT Real Mayo
1 Tbsp. KRAFT Grated Parmesan Cheese
2 tsp. chopped fresh cilantro

Steps:

  • Wrap each ear of corn in damp paper towel. Microwave on HIGH 5 min. Remove corn from microwave. (Caution: Use oven mitts. Corn will be hot.) Remove and discard paper towels. Cool corn completely.
  • Heat air fryer to 375°F. Cut corn ears crosswise in half. Stand each piece of corn, cut end down, on cutting board, then cut lengthwise in half. Cut each piece crosswise in half again.
  • Place corn "riblets" in medium bowl. Add vinaigrette dressing; mix lightly. Spoon into even layer in air fryer basket sprayed with cooking spray. Cook 13 to 15 min. or until corn is tender.
  • Spoon corn onto platter; spread with mayo. Sprinkle with cheese and cilantro.

Easy Air Fried Corn Ribs image

These air fried corn ribs are reminiscent of Mexican street corn, but each ear is split into quarters and then air fried. I used frozen corn on the cob which I thawed.

4 ears ears corn on the cob
3 tablespoons "Everything but the Elote seasoning" (Trader Joe's®), divided
nonstick cooking spray
¼ cup grated cotija cheese
2 tablespoons Mexican crema, crema fresca
1 tablespoon minced fresh cilantro, or more to taste

Steps:

  • Preheat an air fryer to 400 degrees F (200 degrees C) for 7 minutes.
  • Meanwhile stand corn cobs on the end, and with a sharp knife (I used a wüsthof nakiri) cut each ear down the middle. Place corn cob halves flat on a cutting board and cut in half lengthwise (you will get a total of 4 'ribs' per ear of corn).
  • Spray each corn rib with non-stick spray. Sprinkle 2 tablespoons of seasoning over the 16 corn ribs.
  • Air fry corn ribs in batches for a total of 12 minutes. Remove from air fryer.
  • Drizzle crema con sal over corn 'ribs' and sprinkle with cotija cheese and remaining seasoning. Garnish with chopped cilantro.

  • Cut the corn to the size of your air fryer basket or rack (some might need to be cut in half). Coat the corn with melted butter and season with salt and pepper.
  • Air Fry at 370°F (190°C) for about 12-16 minutes, turning the corn half way through cooking. Cook until kernels are tender and lightly browned. (Cooking time will depend on size of corn, how full air fryer basket is, & different models/sizes of air fryers).
  • While the corn air frys, make the cheese mixture. In a bowl combine sour cream, mayonnaise, cheese, smoked paprika, chili powder, garlic powder, cilantro, salt and pepper in a large bowl. Mix until evenly combined.
  • After corn is cooked, spread the cheese mixture over the corn. Sprinkle with extra crumbled cheese, paprika or chili powder, green onions and/or chopped cilantro. Serve with lime wedges.
