Time 2h5m

Number Of Ingredients 28

For the Empanada Dough:
4 cups flour
1 1/2 teaspoons salt
3 tablespoons sugar
12 tablespoons lard (chilled, or vegetable shortening)
2 tablespoons butter (chilled)
2 egg yolks
1 cup water
For the Beef Filling:
2 tablespoons vegetable oil
2 tablespoons butter
3 large onions (finely chopped)
2 cloves garlic (minced)
1 pound ground beef
2 teaspoons cumin
1 teaspoon chili powder
1 tablespoon paprika
1 beef bouillon cube
1/4 cup water (hot)
Salt to taste
Freshly ground black pepper to taste
2 tablespoons flour
1/2 cup raisins
1/2 cup black olives, chopped
For Assembly:
2 hard-boiled eggs (sliced)
1 egg yolk
2 tablespoons milk

Steps:

  • Gather the dough ingredients.
  • Sift the flour into a bowl and then stir in 1 teaspoon of the salt and all of the sugar.
  • Mix the butter and shortening (or lard) into the flour mixture with a pastry cutter, or with two knives, until fairly well incorporated.
  • Whisk the egg yolks with 1 cup of water.
  • Stir in 1/2 cup of the water-egg mixture, a little bit at a time, until the dough starts to come together smoothly.
  • Keep kneading the dough, adding more of the water-egg mixture as needed. A few tablespoons of extra water may be needed. The dough will become smooth, although somewhat soggy until it has thoroughly chilled.
  • Cover the dough with plastic wrap and refrigerate for about 1 hour. The dough can also be kept in the fridge for up to two days. When ready to use, the dough should be soft and smooth, not elastic. When poking a hole in the dough with a finger, the indentation should remain. Reserve.
  • Gather the filling ingredients.
  • Heat the vegetable oil and butter in a skillet over medium-low heat.
  • Add the chopped onions and cook, stirring frequently, until the onions are softened and fragrant.
  • Add the garlic and cook for 1 minute more.
  • Add the ground beef, cumin, chili powder, paprika, beef bouillon (dissolved in the hot water), and salt and pepper to taste.
  • Cook the beef, stirring and crumbling the meat with a spatula, until well-browned.
  • Add the flour and continue to cook for 2 to 3 minutes.
  • Remove the skillet from the heat and stir the raisins and black olives into the beef mixture.
  • Let the filling cool completely. The filling will keep up for up to two days in the refrigerator.
  • Gather the ingredients.
  • Preheat the oven to 350 F and grab a baking sheet.
  • Separate the empanada dough into golf-ball-size pieces and roll into smooth balls.
  • Let the dough balls rest for 5 minutes.
  • Roll each ball of dough on a floured surface into a 6-inch circle of about 1/4-inch in thickness.
  • Add 1 tablespoon of the beef filling and one slice of hardboiled egg into the middle of the circle.
  • Brush the edges with water and fold the pastry in half over the filling to make a semi-circle. Seal the edges by pressing down with fingers.
  • Brush the sealed edge lightly with water, then turn the edge toward the middle and press with fingers to seal.
  • Mix the egg yolk with 2 tablespoons of milk and brush the empanadas with the mixture.
  • Bake for 25 to 30 minutes or until golden brown.

BAKED MEAT-FILLED EMPANADAS (EMPANADAS AL HORNO)

Baked Meat-Filled Empanadas (Empanadas al Horno) image

To Chileans, empanadas mostly mean empanadas al horno, which are frequently baked in a wood-burning oven. The classic versions are filled with seasoned minced (not ground) meat and onions and garnished with hard-cooked egg, olives and raisins. They can be made either in the half-moon shape that they usually take throughout Latin America and the Caribbean, or in a distinctively Chilean squared-off form made by folding all but the straight side of the semicircular turnover to make a package that is often four inches across. The dough is made with lard.

Provided by Florence Fabricant

Categories     side dish

Time 1h

Yield 8 to 10 large empanadas

Number Of Ingredients 13

1 1/2 tablespoons lard
1 cup fine-chopped onion
1/2 pound lean beef, minced
Salt
fresh black pepper
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
Tabasco or other hot sauce to taste
Empanada dough (see recipe)
2 hard-cooked eggs, sliced
12 pitted cured black olives, sliced
30 raisins
1 large egg, lightly beaten with 1 tablespoon water

Steps:

  • Melt lard in a 10- to 12-inch skillet. Add onion and sauté on medium until it barely starts to color. Add beef. Cook until ingredients are lightly browned. Add salt and pepper to taste, cumin, paprika and hot sauce. Set aside. Heat oven to 400 degrees.
  • Roll dough as thin as possible. Cut 6-inch circles. Scraps can be re-rolled one time. Place some meat mixture on one half of each circle, leaving a 1/2-inch border around filling. Top with a slice of egg, some olive pieces and a few raisins. Brush egg on empty side of circle, fold dough over to make a half-circle and crimp edges. Traditional squared empanadas can be made by folding an inch or so of each of the pointed ends of the half-circle over to make straight sides, then folding up the rounded bottom to square off the empanada.
  • Arrange empanadas on a baking sheet. Squared empanadas should be placed with folded side down. Bake 10 minutes. Turn empanadas over, bake 5 minutes longer, until lightly browned on both sides. Allow to cool briefly before serving.

CHILEAN EMPANADA

Chilean Empanada image

My mother is from Chile and these have been a staple of our household for years. I have searched and searched and never seem to find the right one, so here is our family favorite. My mom likes to sprinkle sugar on hers. I prefer a little mustard to dip it in. We all have our own cravings. This recipe makes about a dozen large empanadas, depending on the size.

GREEN CHILE CHICKEN AND QUESO EMPANADAS

Green Chile Chicken and Queso Empanadas image

Provided by Tyler Florence

Categories     main-dish

Time 3h10m

Yield 20 empanadas

Number Of Ingredients 17

8 medium tomatillos (about 1 1/2 pounds), husked and rinsed
1 to 2 jalapenos, stemmed
1 Spanish onion, quartered
3 garlic cloves
1 handful fresh cilantro leaves, coarsely chopped
1 lime, juiced
Salt
2 cups finely shredded, cooked chicken, preferably dark meat
1 cup crumbled queso fresco
1 recipe empanada dough, recipe follows
1 1/2 cups all-purpose flour
1 cup masa harina
1 teaspoon baking powder
1 teaspoon salt
1/2 cup (1 stick) unsalted butter, melted and cooled
1 large egg beaten with 1 tablespoon water, for egg wash
Butter, for greasing the pans

Steps:

  • Bring a pot of water to a boil; add the tomatillos, jalapeno, onion, and garlic. Simmer for 10 to 15 minutes until the tomatillos are soft. Drain and cool slightly. Combine the tomatillos, jalapeno, onion, garlic, cilantro, and lime juice in a blender. Add 1/4 cup of water and process to a coarse puree; season with a generous pinch of salt. You should have about 3 cups of this salsa verde.
  • Combine the shredded chicken and queso fresco in a large mixing bowl. Pour in 1 1/2cups of the salsa verde and fold the ingredients together to moisten. Use as a filling for empanadas. Serve the remaining salsa verde on the side.
  • In a large bowl, sift together the flour, masa harina, baking powder, and salt. Stir in the melted butter. Gradually add 1/2 cup to 3/4 cup of water, working it in with your hands to incorporate; the dough should be easy to handle and not sticky. Form the dough into a ball, wrap it in plastic, and chill for 30 minutes.
  • Lightly flour your rolling pin and counter. Divide the dough in 1/2 so it will be easier to work with and roll it out to 1/8-inch thickness. Using a 4-inch cookie or biscuit cutter, cut out 10 circles of dough; repeat with the other 1/2.
  • Spoon 2 generous tablespoons of filling into the center of each pastry circle, leaving a 1/2-inch border. Brush the edges with the egg wash and then fold the dough over in 1/2 to enclose the filling and form a semi-circle. Tightly seal the edges by crimping with the tines of a fork. Chill at least 30 minutes before baking.
  • Preheat the oven to 375 degrees F. Place the empanadas on a buttered baking sheet and brush the tops with additional egg wash. Using a fork, prick a few holes in the top of the empanadas for steam to escape. Bake for 30 minutes, until the pastry is golden brown.

EMPANADAS FRITAS DE QUESO

EMPANADAS CHILEAN

Empanadas Chilean image

In Chile, the most traditional empanada filling is called "pino". Pino is a seasoned mixture of ground beef, onions, raisins, black olives, and hard boiled eggs. The empananda dough is quick and easy to make, and can be made ahead and stored in the refrigerator. The pino tastes best if made the day before and allowed to rest overnight before filling the empanandas.
