BEST-EVER FRUIT CRUMBLE

Best-ever fruit crumble image

As much as I love it with apples, a pear crumble with a bit of spicy ginger makes a lovely change

Provided by Jamie Oliver

Categories     Desserts     Fruit     Dinner Party     Easter treats     St. George's Day     Sunday lunch     British

Time 55m

Yield 6

Number Of Ingredients 12

For the crumble
225 g plain flour
90 g caster sugar
1 pinch salt
1 teaspoon powdered ginger
115 g unsalted butter
For the filling
100 g sugar
100 ml water
4 nice ripe pears, peeled, cored and cut into chunks
5 pieces stem ginger in syrup, finely chopped
1 lime, juice and zest of, plus extra for serving

Steps:

  • You can't go wrong with an old-fashioned crumble. Everyone loves it, and it's lovely and easy!
  • Preheat your oven to 200ºC/400ºF/gas 6.
  • Sift the flour into a bowl and add the sugar, salt and ginger.
  • Cut the cold butter into chunks and rub it into the flour mix with your hands until you get a mixture that looks a bit like fine breadcrumbs. This is the crumble topping.
  • To make the filling, boil the water and sugar together, then carefully drop in the pear chunks and simmer gently for a couple of minutes.
  • Add the chopped ginger and the lime zest and juice to the pan and stir. Spoon the mixture into one large ovenproof dish or four small ones.
  • Sprinkle the crumble topping over the top of the fruit, piling it high in the middle of the dish and leaving space at the edge for the caramel to bubble up.
  • Bake in the preheated oven for 25 to 30 minutes until the pears are cooked and bubbling and the crumble is golden on top. Serve with custard or a dollop of crème fraîche with lime zest grated over, if you like.
  • Tip: This crumble will work well with apples instead, if you prefer.

TRADITIONAL BRITISH APPLE CRUMBLE

Traditional British Apple Crumble image

There is no more quintessential British pudding than a traditional British apple crumble, it is easy to make simply delicious served with custard.

Provided by Elaine Lemm

Categories     Dessert     Pie

Time 40m

Yield 6

Number Of Ingredients 11

For the Filling
1 pound apples (Bramleys or other medium-to-soft apples)
Optional: pinch ground cinnamon
2 tablespoon golden caster sugar
For the Topping
6 ounces all-purpose flour (or plain flour)
4 ounces golden caster sugar
4 ounces butter (cold)
For Serving:
1 cup custard (to taste)
Optional: 1 pint vanilla ice cream

Steps:

  • Gather the ingredients.
  • Peel, core, and chop apples into chunky pieces. Don't cut apples too small because when cooked they could disintegrate, and you want the cooked fruit to have some texture.
  • Place apples in a mixing bowl and sprinkle with sugar and cinnamon, if using.
  • Arrange apples into a shallow baking dish, approximately 9 x 7 inches. Reserve.
  • Gather the ingredients.
  • In a large baking bowl, place flour and sugar. Cut butter into small pieces and add to bowl.
  • Using your hands, rub butter into flour and sugar until you have a very coarse mixture. It doesn't have to feel or look even, as this is quite a rustic dish and works well with an irregular texture.
  • Alternatively, make crumble mixture in a food processor by placing all topping ingredients into processor and pulsing until you get a coarse mixture. Do not overmix.
  • Evenly sprinkle topping over apples, but be sure there aren't parts of topping that are too thick as it will not crisp up, nor allow apples to cook nicely.
  • Place dish into preheated oven and bake until golden, about 30 minutes. The apples will appear bubbling through from underneath.
  • Remove from oven and let dish rest for 5 minutes before serving.
  • Serve with custard or vanilla ice cream.

APPLE CRUMBLE

Apple Crumble image

This is a genuine English recipe, and my personal favorite! The crumble is crumbly as opposed to crispy. Serve hot or cold with custard or light cream (either one having a thin, pouring consistency). You can also make this with peaches, blackberries, rhubarb, etc. (I've tried making it with strawberries and rhubarb, and it turned out wonderfully!)

ANY SEASON FRUIT CRUMBLE

Any Season Fruit Crumble image

Provided by Elinor Klivans

Categories     Fruit     Dessert     Bake     Apple

Yield Makes 6 servings

Number Of Ingredients 10

Fruit filling
6 cups peeled and cored apples chopped into 1/2-to 3/4-inch pieces (about 6 large apples)
2 tablespoons sugar
1/2 teaspoon ground cinnamon
2 teaspoons fresh lemon juice
Crumble topping (Makes about 3 cups crumbs)
3/4 cup unbleached all-purpose flour
1/2 cup sugar
1/2 teaspoon salt
1/4 pound (1 stick) cold unsalted butter, cut into 3/4-inch pieces

Steps:

  • Prepare the Filling
  • Position a rack in the middle of the oven. Preheat the oven to 350°F. Put the apples in a glass or ceramic baking container with a 2 1/2-quart capacity. Either an 8- or 9-inch square baking dish or a 9 1/2- to 10-inch diameter round pie dish, both with 1 3/4- to 2-inch high sides, works well. Mix the sugar and cinnamon together in a small bowl. Sprinkle the sugar mixture and lemon juice over the apples. Stir the mixture to combine the ingredients, spreading them in an even layer in the baking dish. Set aside.
  • Mix the Topping
  • Put the flour, sugar, and salt in a large bowl and use a large spoon to stir them together. Add the butter pieces, stirring to coat them with the flour. Rub the butter pieces and flour between your thumb and fingertips or cut them together with a pastry blender until coarse crumbs form that are about 1/2 to 3/4 inch in size, there is no loose flour, and the mixture looks pale yellow rather than white. Spread the crumbs evenly over the apple mixture.
  • Bake and Serve the Crumble
  • Bake about 40 minutes until the crumb topping is golden but with a few spots of light brown, and the apples are tender when tested with a toothpick. Let the crumble cool about 15 minutes before serving. Spoon the warm crumble onto individual plates and serve with a scoop of vanilla ice cream, if desired. The crumble can be baked a day ahead, cooled, covered, and stored at room temperature. Warm it, uncovered, in a preheated 250°F oven for 15 minutes.
