1 tub (8 oz.) COOL WHIP Whipped Topping, partially thawed
24 blueberries
1-1/2 cups boiling water
2 pkg. (4-serving size) JELL-O Strawberry Flavor Gelatin, any red flavor
ice cubes
1 cup cold water

Steps:

  • Using a melon baller or small ice cream scoop, place 2 small scoops (about 2 Tbsp. each) of whipped topping into each of 12 dessert dishes for "eyeballs." Place a blueberry in each scoop for the "pupil." Freeze 30 minutes or until firm.
  • Meanwhile, stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Add enough ice to cold water to measure 2-1/2 cups. Add to gelatin, stirring until slightly thickened. Remove any remaining ice. Spoon gelatin into prepared dishes around each eyeball, leaving the top of the eyeballs exposed.
  • Refrigerate 1-1/2 hours or until firm.

One (18.25-ounce) box red velvet or yellow cake mix (plus required ingredients)
One (12-ounce) can frosting (any kind)
12 ounces white chocolate melting disks
Assorted gel icing, for decorating

Steps:

  • Prepare the cake mix according to the package directions for a 9-by-13-inch cake or two 9-inch cakes. Allow to cool slightly in the pan, then remove to a rack, cover with a dish towel and let cool completely.
  • Break off sections of the cake and crumble in a large bowl. When finished, you should have a bunch of very fine cake crumbs. Using a rubber spatula, work the frosting into the cake until it is no longer visible. (Even if you use white frosting with red velvet cake, the white will eventually blend in entirely.)
  • Next, roll the mixture into 1 1/2-inch balls (a small ice cream scoop helps with this) and set on a parchment-lined baking sheet. This is important: Pop 'em in the freezer, uncovered, for at least an hour. The cake balls need to be very firm before coating them.
  • When the cake balls are nice and firm, place the white chocolate in a heatproof bowl set over a pan of simmering water. (Don't let the bowl touch the water.) Stir occasionally until the chocolate is melted and smooth. Remove the bowl from the pan. Add the cake balls one at a time to the melted white chocolate and gently roll to coat. Using a fork, lift out the cake balls, then tap the fork against the side of the bowl to remove the excess chocolate. With a toothpick, push the ball off of the fork and back onto the parchment-lined baking sheet. Let set at room temperature, 10 to 15 minutes. Decorate with gel icing to look like eyeballs.

Water, vegetable oil and eggs called for on cake mix box
2 containers (12 oz each) Betty Crocker™ Whipped fluffy white frosting (3 cups)
Betty Crocker™ neon gel food colors (orange, purple and lime green)
1 package (0.88 oz) Betty Crocker™ Candy Shop candy eyeballs

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray bottoms and sides of three 8-inch round cake pans.
  • In large bowl, beat cake mix, water, oil and eggs with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour 1 1/3 cups batter in each pan.
  • Bake cakes 17 to 21 minutes, or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 30 minutes.
  • Divide frosting into 3 small bowls (1 cup each). Stir 1/2 teaspoon different color of food color into each bowl. Fit 3 separate decorating bags with 1/2-inch round piping tip; fill each with different color frosting. Place first cake layer on plate. Using green frosting, pipe around top edge of cake layer, forming a thick frosting border. Spread additional frosting over top of cake inside frosting border. Top with second cake layer; repeat border and filling with purple frosting. Place third cake layer on top; repeat with orange frosting. Pipe remaining frosting into mounds over top of cake, alternating colors and sizes of mounds.
  • Decorate as desired using candy eyeballs on frosting mounds and side of cake. Store cake covered at room temperature.

1 box (16.25 oz) white cake mix
Water, vegetable oil and egg whites called for on cake mix box
1 container fluffy white whipped ready-to-spread frosting
1 roll chewy fruit snack, any flavor (from 5-oz box)
1 tube (0.68 oz) black decorating gel
1 tube (0.68 oz) red decorating gel

Steps:

  • Heat oven to 350°F. Generously grease 2-quart round ovenproof bowl with shortening; lightly flour. Make cake mix as directed on box, using water, oil and egg whites. Pour batter into bowl.
  • Bake 1 hour 5 minutes to 1 hour 10 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Run knife around side of bowl to loosen cake; remove from bowl to cooling rack. Cool completely, about 1 hour. On serving plate, place cake rounded side up, trimming as needed.
  • Frost cake with frosting. With scissors, cut fruit snack into 3 1/2-inch circle. To decorate, place cutout on top center of cake. Pipe black gel in center of fruit snack for pupil. Use red gel for veins to look like bloodshot eye.

1 ½ cups creamy peanut butter
½ cup butter, softened
2 ½ cups confectioners' sugar, sifted
1 tablespoon vanilla extract
12 ounces white chocolate, chopped
2 tablespoons shortening
2 drops blue food coloring
½ cup miniature semisweet chocolate chips
2 drops red food coloring

Steps:

  • Beat the peanut butter and butter with an electric mixer in a large bowl until smooth. Beat in the sugar and vanilla. Cover and refrigerate for 30 minutes. Roll chilled dough into small, eyeball-sized balls and place on 2 baking sheets lined with wax paper. Refrigerate for another 30 minutes.
  • Melt the white chocolate and shortening in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes (depending on your microwave). Do not overheat or chocolate will scorch. Dip each eyeball into the white chocolate and transfer to the waxed paper until the chocolate has set. You can chill them in the refrigerator.
  • Stir a few drops of blue food coloring into the remaining melted white chocolate. Make a round "iris" on the top of the cooled eyeball and press a mini chocolate chip in the center for a "pupil." For an extra spooky bloodshot eyeballs take a toothpick dipped in red food coloring and make squiggly lines on the eye.
