2 garlic cloves, crushed
2 tablespoons olive oil
1/2 yellow onion, peeled and chopped
1/2 lb broccoli, florets only
1/3 cup whipping cream
fresh ground pepper
salt
1/2 lb angel hair pasta
1/4 lb swiss cheese, grated
4 tablespoons romano cheese, grated
3 tablespoons mizithra cheese, grated
chopped parsley (to garnish) (optional)

Steps:

  • Saute the garlic in the oil until it just begins to brown. Add the yellow onion and the broccoli florets until the broccoli is barely tender.Add the cream and the pepper. You may add salt if you wish.
  • In the meantime, cook the angel hair pasta for just a few minutes in salted boiling water. Watch this carefully because the pasta cooks in very little time. Drain the pasta, and toss with the three cheeses. Add the cream and the vegetables, toss and serve.
  • You may wish to garnish this with more cheese on top. Some parsley might be nice as well.

10 ounces angel hair pasta
2 cups 1% low-fat milk
2 tablespoons all-purpose flour
1 pinch cayenne pepper
salt and ground black pepper to taste
½ cup crumbled Gorgonzola cheese
¼ cup finely chopped green onion tops

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook angel hair in the boiling water, stirring occasionally until cooked through but firm to the bite, 4 to 5 minutes. Drain, reserving 1/2 cup of the water. Return drained pasta to the pot.
  • Whisk milk and flour together in a large nonstick skillet; add cayenne pepper, salt, and black pepper. Heat milk mixture over medium heat while whisking continually until bubbling and thickened, about 5 minutes.
  • Sprinkle Gorgonzola cheese into the milk mixture, stirring continually to melt the cheese into a sauce. Stir green onions into the sauce. Pour reserved water into the sauce; stir.
  • Pour sauce over the cooked pasta and toss to coat.

This light chicken and vegetable dish is served over hot cooked angel hair pasta or linguine. Or serve it over spaghetti squash with Parmesan cheese.

Number Of Ingredients 13

1 tablespoon olive oil ( divided )
2 teaspoons butter (divided)
3 chicken breast halves (boneless, cut into 1-inch cubes)
1 carrot (sliced on the diagonal into rounds about 1/8 to 1/4-inch in thickness)
1 1/2 cups broccoli florets (thawed from frozen )
2 cloves garlic (minced)
12 ounces angel hair pasta (or linguini)
2/3 cup chicken broth
1 teaspoon basil (dried leaf)
salt to taste
black pepper to taste
Optional: sliced cherry tomatoes or grape tomatoes
3 to 4 tablespoons parmesan cheese (grated)

Steps:

  • Heat 2 teaspoons olive oil and 1 teaspoon butter in skillet over medium heat; add chicken. Cook chicken, stirring, until chicken is cooked through, about 5 to 7 minutes. Remove the chicken with slotted spoon to paper towels.
  • Add remaining 1 teaspoon oil and 1 teaspoon butter to skillet; add the thinly sliced carrot and cook, stirring, for 5 minutes. Add the broccoli and garlic to the skillet and cook, stirring for about 2 minutes longer.
  • Cook pasta in boiling salted water following package directions.
  • To the skillet add chicken broth, basil, sliced tomatoes, if using, and Parmesan cheese; stir to blend. Reduce heat and simmer for 3 to 4 minutes longer.
  • Drain pasta well; arrange in a serving dish and top with the chicken and vegetable mixture. 1/2 cup (1 stick) unsalted European-style butter, room temperature
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh Italian parsley
1 garlic clove, minced
2 teaspoons olive oil
8 ounces angel hair pasta
2 cups small broccoli florets
Grated Parmesan cheese (optional)

Steps:

  • Mix first 4 ingredients in small bowl.
  • Bring large pot of salted water to boil. Add 2 teaspoons olive oil. Add pasta and cook until almost tender, about 3 minutes. Add broccoli and boil until pasta is tender but still firm to bite and broccoli is crisp-tender, about 1 minute longer. Drain pasta and broccoli; transfer to large serving bowl. Add herb butter and toss well to coat. Season to taste with salt and pepper. Serve, passing Parmesan cheese separately if desired.

1 tablespoon extra-virgin olive oil
3 cups broccoli florets (3/4 pound)
Kosher salt and freshly ground black pepper
1 1/2 cups chicken stock
1 teaspoon fresh thyme leaves (or fresh basil) plus 4 to 6 sprigs, for garnish
4 tablespoons (1/2 stick) unsalted butter, cut into small pieces
4 ounces goat cheese, crumbled
12 ounces fresh or store-bought angel hair pasta
2 tablespoons toasted pine nuts*

Steps:

  • Bring a large stockpot of water to a boil.
  • In a large saute pan, heat the olive oil. Over medium-high heat, saute the broccoli florets, stirring as necessary, 2 to 3 minutes. Season lightly with salt and pepper. Transfer to a bowl and reserve until needed.
  • Deglaze the pan with the stock, and add the thyme leaves. Bring to a boil and reduce by half. Add the butter and the goat cheese and stir together until the cheese melts. Keep warm.
  • Meanwhile, add a little salt to the pot of boiling water and cook the pasta until it is al dente, about 1 minute for fresh pasta. (Cook packaged pasta according to the directions on the package). Drain the pasta well and add to the reserved broccoli in the saute pan. Cook until heated through, about 2 minutes. Season with salt and pepper, to taste.
  • To serve, divide the pasta among 4 heated plates. Sprinkle with toasted pine nuts and garnish with a sprig of thyme.

This is a fast, easy, and delicious dish that I created during a sudden craving. It's garlicky and a bit spicy- but can be easily altered to be more or less of either. To make into a vegan dish, simply omit the parmesan cheese.

1 bunch fresh broccoli, cut into florets
4 tablespoons extra virgin olive oil
4 -5 garlic cloves, minced
1 teaspoon crushed red pepper flakes
1/3 cup chicken broth or 1/3 cup vegetable broth
2 -3 cups prepared angel hair pasta
1/2 cup fresh grated parmesan cheese

Steps:

  • Heat 2 to 3 tablespoons of olive oil in a nonstick skillet. Saute garlic and red pepper for about 2 minutes.
  • Add broth and broccoli. Cover and let cook for 4-5 minutes.
  • Add 2 tablespoons olive oil to the prepared pasta.
  • Toss broccoli, pasta, and parmesan cheese. Serve immediately.
  • Optional: Sometimes I use a little olive oil and butter instead of just the olive oil -- it all depends on how many calories I feel like eating that night :).
