- Rinse and dry brussels sprouts. Trim the stems and remove any yellow leaves, cut lengthwise into halves or quarters depending on the size.

- Wash the brussels sprouts and cut them in half.
- In a pan, add the bacon lardons and fry until brown.
- Remove from the pan and set aside.
- In the same pan, add the oil and brussels sprouts and leave to cook for 2-3 minutes, shaking the pan now and then.
- Add the garlic and half of the water, place a lid on and leave to cook on a medium heat until the water evaporates, that should take 1-2 minutes.
- If the brussels sprouts are not tender enough at this point, add the remaining water, and cook again with the lid on; once the vater evaporates, the sprouts are tender, and slightly caramelised on the edges.
- Add the cooked bacon, and parmesan, and remove from the heat.

- Preheat oven to 400°F (200°C)
- Cook bacon in a cast iron pan over medium heat. Once bacon fat coats the pan, add the Brussels sprouts, salt, pepper, apple cider vinegar, brown sugar, garlic. Stir until fully coated.
- Cook until the bottom of the Brussel sprouts begin to brown on the bottom.
- Transfer the cast iron pan to the oven and roast for 20 minutes, or until tender, flipping the brussel sprouts over every 5 minutes or so.

- In a large cast iron skillet, lay the bacon in rows. Turn heat to medium and cook the bacon, flipping halfway through, about 10 min. until crispy and brown. Remove the bacon from the pan onto paper towels, crumble and set aside. Drain most of the bacon drippings into a heat proof container leaving just a tad in the skillet to sauté the Brussels sprouts in.
- Place the skillet back on the stove at medium-high. Add butter. Once melted add minced onion and Brussels sprouts.
- Sauté, tossing occasionally until the sprouts are crisp, tender and golden brown. About 7-10 min. Add the crumbled bacon back to the pan and toss. Turn off heat.

- Pour over the top of the roasted Brussels. Serve or top with optional bread crumbs.

I never thought I liked brussel sprouts until I was given this very old recipe. It's delicious and may just change your mind about Brussel sprouts! *It's not a good idea to add salt to this recipe, as the bacon and parmesan cheese are already salty enough. I've substituted broccoli and/or cauliflower for the sprouts and they are also delicious prepared in this way. The only change I make is that I generally use a microwave steamer to cook the broccoli and cauliflower.

This is the first time I cooked brussel sprouts ... an easy to make dish. I forgot to time it so the times listed are estimates. I changed a few things but kept it pretty close to the recipe on the package. The Maui onion is a sweet onion similar to the Viladia onion. You may want to increase the seasonings to overcome the strong brussel sprout flavor...at least the one I ate was strong!

- Microwave steam brussel sprouts in 4-6 tablespoons water -- leaving small opening in plastic wrap cover to vent. Steam until tender.
- In separate pan, heat butter and olive oil over medium heat.

- Add brussel sprouts to pan and mix to coat, cooking for a minute or until done.
