Mushrooms with Garlic and Sherry image

This is Rach's mom's favorite tapas dish.

Provided by Rachael Ray

Number Of Ingredients 13

2 tablespoons EVOO - Extra Virgin Olive Oil
2 tablespoons butter
1 pound cremini or white mushrooms
stemmed and wiped clean
6 cloves garlic
finely chopped or minced
Salt and pepper
2 tablespoons thyme leaves
finely chopped
1 cup Spanish sherry
1/2 cup parsley
finely chopped
Juice of 1/2 lemon

Steps:

  • Heat a skillet over medium-high heat with EVOO, 2 turns of the pan
  • Melt butter into oil, add mushrooms and toss and turn 12 minutes or until well-browned and fragrant
  • Add garlic, salt, pepper and thyme to the pan, toss 1-2 minutes, then add sherry and toss a minute more
  • Turn off heat, stir in parsley and lemon juice, and transfer to a warm serving dish

Garlic-Sherry Mushrooms

2 tablespoons EVOO Extra Virgin Olive Oil
1 1/2 pounds cremini mushrooms
halved or thickly sliced
4 to 5 cloves garlic
finely chopped or grated
1/2 cup dry sherry
2 tablespoons butter
1/4 cup chopped flat-leaf parsley
Salt and ground black pepper

Steps:

  • Place a large skillet over medium-high heat with 2 turns of the pan of EVOO, about 2 tablespoons
  • Add the mushrooms and garlic to the pan, and cook, stirring occasionally, until deep golden brown, 6-8 minutes
  • Add the sherry to the pan and cook until reduced, about 1 minute
  • Add the butter, parsley, some salt and pepper to the pan, and stir to melt the butter and combine
  • Serve warm alongside Crispy Potato and Ham-Wrapped Cod

1 lb fresh button mushroom, same-size, divided
2 tablespoons extra virgin olive oil
1 teaspoon fresh thyme, minced, divided
kosher salt
3 garlic cloves, minced
1/4 cup medium- dry sherry
1 tablespoon fresh flat leaf parsley, minced
1 tablespoon butter

Steps:

  • If mushrooms are greater than one inch in diameter, cut into quarters.
  • Heat 12 inch skillet over medium heat.
  • Add 1 T olive oil. When the oil is hot enough to sizzle a piece of mushroom, add half the mushrooms and half the thyme. Raise the heat to medium-high and saute, stirring only occasionally, until the mushrooms are golden brown. If you stir them too often or crowd them in the pan, you'll prevent the mushrooms from carmelizing.
  • Season with salt and pepper.
  • Transfer the mushrooms to a bowl, and repeat with the remaining mushrooms. Add the garlic, and saute 1 minute, stirring. Return the reserved mushroom, with any accumulated juices, to the pan.
  • Add the sherry and parsley, and boil until the liquid is reduced to a glaze, another minute or so.
  • Add the butter, and gently swirl the pan as the butter melts and emulsifies with the sauce. Taste and adjust the seasonings with salt and pepper.

4 skin-on, boneless chicken breastsSalt and pepper3 tbsp. olive oil¾ lb. Spanish chorizo, casings removed and meat sliced on an angle (I like Gaspar's)1 large Spanish onion, halved and thinly sliced1 scant cup good-quality pitted olives, green and black combined6 to 7 piquillo peppers in water, drained and thinly sliced (about 1/2 cup)4 cloves garlic, thinly sliced or chopped1 bay leaf2 tsp. orange zest and 1 half of an orange, juiced (about 1/4 cup)1 tsp. (about 1/3 palmful) fennel seeds1 tsp. (about 1/3 palmful) paprika½ tsp. hot paprika or crushed red pepper½ cup chicken stock or white Rioja (Spanish white wine)

Steps:

  • Step 1Heat a large cast-iron skillet over medium-high.Step 2Cut each chicken breast into 3 pieces, either 3 triangle-shaped pieces or 3 large slices cut on an angle. Season the chicken on both sides with salt and pepper. Add the olive oil to the skillet, about three turns of the pan. Add the chicken, skin-side down, and cook until browned on the bottom, 3 to 4 minutes. Turn the chicken over and cook until browned and cooked through, 2 to 3 minutes more. Transfer to a platter.Step 3Add the chorizo to the skillet and cook, stirring occasionally, until the fat begins to render, 1 to 2 minutes. Using a slotted spoon, transfer the chorizo to the platter with the chicken. Add the onion, olives, piquillo peppers, garlic, bay leaf, orange zest, fennel seeds, paprika, and hot paprika. Cook, tossing often, until the onion softens, 7 to 8 minutes. Add the orange juice and stock. Cook, stirring occasionally to deglaze the pan. 1/2 cup parsley leaves, a couple of handfuls
8 cloves garlic, cracked away from skins
1 pound chorizo sausage, casings removed
1/4 cup extra-virgin olive oil
1 1/2 pounds tenderloin or sirloin of beef, well trimmed, cut into bite sized pieces
Coarse salt and pepper
24 medium to large mushroom caps
1 cup dry sherry

Steps:

  • Preheat a grill pan over medium high heat.
  • Place parsley and garlic in food processor and chop.
  • Heat a large, heavy skillet over high heat.
  • Cut chorizo on an angle in 1/2-inch slices. Grill 2 minutes on each side. Transfer to a serving dish.
  • To the hot skillet, add about 2 tablespoons extra-virgin olive oil, 2 turns of the pan. Add meat and sear the pieces on all sides to caramelize it evenly. Add half of the garlic and parsley mixture to the pan. Turn to coat the meat. Season meat with salt and pepper. Add 1/2 cup sherry and turn the meat in the wine as it deglazes the pan. Transfer to a serving dish and cover with loose foil to keep warm. Return pan to heat.
  • Repeat the same process with the mushrooms: add extra-virgin olive oil to the pan, 2 tablespoons or 2 turns of the pan. Add mushrooms, cook 3 or 4 minutes to char edges and soften, add parsley and garlic, then salt and pepper, then sherry. Reduce sherry while scraping up pan drippings and remove to serving dish.

3-4 Tbsp. extra-virgin olive oil
1 lb. small mushrooms, whole
kosher salt and pepper to taste
3-4 large cloves garlic, minced
1/4 cup sherry wine
Pinch red pepper flakes
Juice and zest of 1/2 lemon
2 Tbsp. chopped Italian parsley

Steps:

  • Heat the oil in a large skillet over medium-high heat. Be sure the mushrooms are completely dry. Add the mushrooms and saute undisturbed (do not stir) until the liquid released by the mushrooms evaporates and they turn golden brown, about 5- 8 minutes. Stir and continue to saute until most sides are browned, about 4-5 more minutes.
  • Reduce the heat to medium and add the minced garlic to the pan. Cook about 30-45 seconds.
  • Add the sherry, stir and saute about a minute.
  • Add the lemon zest and juice, red pepper flakes, salt, pepper and stir about 30-45 seconds. Remove the pan from the heat and top with fresh parsley. Taste and season if needed. Serve warm.

This recipe is from Spain. Sherry or lemon juice is not always used, but either one adds a nice contrast to the richness of the oil and garlic. You can easily substitute squid or scallops for the shrimp.

1 (8 ounce) package of prewashed sliced mushrooms
1/3 cup medium-dry sherry
1/2-1 tablespoon butter
salt
pepper
1/4 teaspoon marjoram or 1/4 teaspoon your favorite herbs, crushed (optional)

Steps:

  • Over medium heat, melt the butter in an iron skillet.
  • Add mushrooms and stir so they are coated with the melted butter.
  • Sprinkle on the salt and pepper to taste.
  • When the mushrooms look only slightly soft, add the sherry and optional marjoram or other herb.
  • Stir occasionally until the sherry and liquid given off from the mushrooms has mostly evaporated.

1 cup polenta
1 cup milk, of your choice
½ cup grated parmesan cheese
1 tablespoon unsalted butter
pepper, to taste

2 medium shallots, finely chopped

4 sprigs fresh thyme
1 lb mixed mushroom, such as shiitake and cremini, steams trimmed, sliced
½ cup dry sherry
¼ cup vegetable stock
pepper, to taste

1 bunch fresh parsley, chopped
2 lemons lemon zest
kosher salt, to taste

Steps:

  • Make the polenta: Bring salted water to boil in a medium pot over medium-high heat. Pour in the polenta and stir for 2 minutes. Reduce the heat to low, cover, and simmer for 30 minutes, stirring every 10 minutes to make sure the polenta isn't sticking or burning.
  • Right before serving, stir the milk, Parmesan, and butter into the polenta. Season with salt and pepper to taste.
  • Meanwhile, make the mushrooms: Heat a drizzle of olive oil in a large skillet over medium heat. Add the shallots and sweat until softened and slightly translucent, about 2 minutes.
  • Season with salt, then add the thyme leaves and mushrooms. Cook until the mushrooms are caramelized and softened, about 5 minutes.
  • Pour in the sherry to deglaze the pan and stir to loosen any browned bits from the bottom. Cook off the alcohol, about 1 minute. Add the vegetable stock and season with salt and pepper. Bring to a boil, then let the liquid reduce for about 10 minutes. Remove from the heat.

Steps:

  • Pour the oil into a flat, shallow frying pan and place over a gentle heat. Finely slice the garlic and shallots and add to the pan. Fry gently for a few minutes, stirring occasionally and ensuring the garlic and shallots do not start to brown or burn.
  • Prepare your mushrooms by gently wiping any dirt from their surfaces with a piece of kitchen towel - never wash mushrooms as they will absorb the water and become slimy. Slice the mushrooms into chunky pieces and add to the pan, stirring so that they become coated with the oil.
  • Once the mushrooms have all started to colour, pour the glass of wine into the pan and turn the heat up so that the alcohol burns off and the liquid starts to reduce.
  • After a few minutes, the mushrooms should be cooked, so turn the heat back down quite low and add the cream to the pan along with black pepper according to taste. Stir everything around and heat gently for a couple of minutes.
  • Preheat the grill to high.
  • Transfer the mushrooms and cream mixture to two shallow, heat-proof dishes. Spinkle the grated cheese over the top of each and place the dishes under the grill. Keep an eye on these so that they don't start to burn - it should only take a couple of minutes for the cheese to be browned and bubbling.
  • Stand each dish on a large plate (don't forget to warn guests how hot the dishes will be!) and serve with granary toast for mopping up the sauce.
  • Variations:
  • Reduced fat cream such as Elmlea works perfectly in this dish if you are counting calories. You could also omit the cheese and skip instruction point 6.
  • For a slightly sharper taste, try using creme fraiche in place of the cream.
  • To make the dish more substantial, try using finely sliced baby leeks in place of the shallots.
  • If you are fond of blue cheese, you could grate a strong cheese such as stilton over the mushrooms before grilling - this produces a much richer dish.
