Grilled Nectarines with Honey-Balsamic Glaze image

Number Of Ingredients 5

1/2 cup plus 2 tablespoons honey
1/4 cup balsamic vinegar
1/2 teaspoon vanilla extract
1 8-ounce container crème fraîche
6 firm but ripe nectarines, halved, pitted

Steps:

  • Whisk 1/2 cup honey, vinegar, and vanilla in small bowl. Whisk crème fraîche and remaining 2 tablespoons honey in medium bowl to blend. (Glaze and crème fraîche mixture can be made 1 day ahead. Cover separately. Refrigerate crème fraîche mixture. Rewhisk both before using.)
  • Prepare barbecue (medium-high heat). Brush nectarines generously with half of glaze. Grill until heated through, turning occasionally, about 4 minutes. Arrange 2 nectarine halves, cut side up, on each plate. Drizzle with remaining glaze. Spoon some crème fraîche mixture into center of each nectarine half and serve.

1 slice fresh ginger, peeled, about the size of a quarter
4 medium-size nectarines (about 1 1/4 pounds), peeled, quartered and pitted
6 tablespoons fresh lemon juice, approximately
6 tablespoons dark-brown sugar, approximately

Steps:

  • Put ginger in bowl of a food processor and chop as finely as possible.
  • Add nectarines and puree. Add lemon juice and sugar to taste (nectarines vary in sweetness and acidity).

⅓ cup balsamic vinegar
4 nectarines, halved and pitted
cracked black pepper to taste
¼ cup crumbled blue cheese, or to taste

Steps:

  • Simmer balsamic vinegar in a saucepan over low heat until reduced by half and thickened to a glaze, about 10 minutes. Let cool, about 5 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Arrange nectarine halves cut-side up on a baking sheet; season with black pepper.
  • Broil nectarines in the preheated oven until browned, 7 to 8 minutes. Add blue cheese; continue broiling until blue cheese starts to melt, 1 to 2 minutes more.
  • Drizzle balsamic glaze over nectarines.

4 boneless pork loin chops (6 ounces each)
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/4 teaspoon pepper
3 tablespoons all-purpose flour
1 tablespoon canola oil
1 small onion, finely chopped
1 garlic clove, minced
3 medium nectarines or peeled peaches, cut into 1/2-inch slices
1/2 cup reduced-sodium chicken broth
1 tablespoon honey, optional

Steps:

  • Sprinkle pork chops with seasonings. Dredge lightly with flour. In a large skillet, heat oil over medium heat; cook chops until a thermometer reads 145°, 4-5 minutes per side. Remove from pan; keep warm., Add onion to same pan; cook and stir over medium heat 2 minutes. Add garlic; cook and stir 1 minute. Add nectarines; cook until lightly browned on both sides. Stir in broth and, if desired, honey; bring to a boil. Reduce heat. Simmer, uncovered, until nectarines are softened and sauce is slightly thickened, about 5 minutes. Serve with chops.
